Some of my safe foods/meals just for myself to keep track of!
Popcorn! Air popped without any butter or salt is around 30 cals per cup! unseasoned popcorn just tastes better than popcorn with butter imo <3
Sugar free gum bc duh! I really like the watermelon flavored gums cuz they taste soso good and they fill my sweet tooth!
These low cal cookies! 50 cals each, love baking these and pairing them with black coffee <3
Cauliflower rice! 27 cals per cup, and super filling! I dont usually eat it by itself, I like to mix it with some protein or veggies!
Rice cakes bc you know the drill, 35 cals each yum yum, I usually pair plain rice cakes with greek yogurt and a few of these stevia-sweetened dark chocolate chips!
Diet Arizona Green Tea! Tbh just any diet drinks, but this ones a personal fan fav! 0 cals, as all drinks should be <3
Shirataki noodles! Tons of fiber, only 5 cals, and filling! Make sure to look up a good way to prep them! I usually boil and stir fry them before eating them!
Boiled eggs! 78 cals each, but still super good for you <3
Teas, teas, and more teas! Theres a tea for everything from metabolism speeding to sleep aid, drink some tea!
Greek Yogurt! This isn't a revelation I've figured out by myself ofc but still! 100 cals per cup, and super healthy! Plus its a great substitute in a lot of cooking!!!!
Canaloupe! 19 calories for a WHOLE wedge! A whole medium sized canaloupe is 180 cals!
Pickles! 7 cals each and suuuuper yummy imo <3 cucumbers are also a major safe food of mine I have them almost every day for a snack!
Soup!!!!! Tomato soup has around 80-100 cals for a whole bowl and its so yummy imo!!!!
Casabella peppers! (yall know those little peppers at in-n-out?) 10 cals each, literally any peppers are my favs, but my friends love to go to in-n-out together with me and I always love getting a diet coke and some casabellas to munch on <3
Chicken! Just in general! 120 for a whole chicken breast is the best thing ever <3
Almond milk! I've always been lactose sensitive so I've never genuinely had regular milk, plus almond milk is 30 cals per cup and full of calcium which is super important for hair and nails!
Miso Soup! My dad's made this stuff for me since I was a wee little kid, its just one of my favorite foods, period! When i found out it was only 50 cals per cup I was absolutely THRILLED
Healthy Choice power bowl microwaved meals. Oh my goodness absolute godsend! 170 for a whole DINNER!!!! Super filling, high protein, literally just put it in the microwave and bam omgggg its so nice to have these when I need them <3
Strawberries, Watermelon, blueberries! Oh my! <3
Low cal versions of my favorite meals! I've been experimenting with a bunch of low calorie recipes of different stuff and they've all been great! If you like cooking, it can be a great way to keep busy and keep with your goals! My favs so far are low cal pancakes, low cal tortilla wraps, low cal margarita pizza, etc!

My emotional support kitten.
I love meal prepping! To be honest I don’t do it often, I’m more of a “let’s just cook a quick meal” so I end up having like 3 quesadillas a week sometimes but that’s okay. My mom cooks but she doesn’t like to and doesn’t often have time. She’ll do hamburgers on the grill though and she cooks herself chicken every week and she makes homemade yogurt in her instant pot. Since my grandparents are here we’ve made a lot of food. Tonight was leftover night 😂 so I had a slice of pizza, homemade mashed potatoes, homemade pasta and homemade sauce, and homemade soup. My grandma is fully Italian so she makes a lot of homemade Italian meals. We hand rolled little pasta shapes and cooked them while my mom made sauce.

So, I have historically used a meal service, because for much of the last five years I've been working 50-60 hours a week for a tech startup in addition to running a household with five varyingly disabled people and... yeah. Saving brain energy for meal planning and shopping hasn't been a huge priority. This isn't a plug for meal services, just an explanation for why my go-to simple recipes these days are all from Hello Fresh. All these recipes come built for 2 or 4 people (just use the slider on top), but are easy to double if you're cooking for a whole group.
"Mexican" (not really) chicken rice bowl — the "southwest" spice blend is two parts garlic powder, one part chile powder, one part cumin. I usually replace the long green pepper with 3X serrano peppers (they're little) because I'm a spicy bitch and also my grocery store doesn't carry whatever pepper HF usually sends. You can also sub 2X jalapeños if you're a bit less enamored of spice than me, or an equal amount of anaheim or bell pepper if you want it super mild. I also sub out chicken thighs for breasts and usually double the turmeric. When I make this for my whole household plus, I split the chicken and peppers into two pans so I can make one hotter than the other.
Teriyaki pork rice bowl — This one is SO easy and yummy, I've successfully made it at midnight while drunk off my ass and got lots of compliments and requests for the recipe (look, I was hosting a game night and we ran out of pizza). Again, I usually sub out a spicier pepper and like. Quadruple the garlic? I also don't add the extra sugar. I do usually just keep a bottle of premade teriyaki sauce on hand but if you don't just use some ginger paste (I keep a tube of it on hand), soy sauce, mirin if you have it (also really good to have on hand), even more garlic, some kind of sweetener (honey's great) and cornstarch or flour to thicken.
Pork taquitos — So, HF doesn't share their tex-mex paste recipe and the copycat recipes involve like, two hours of prep, it's ridiculous. So instead of doing that I just get chorizo from the grocery store instead of ground pork and add some tomato paste concentrate. These are also totally yummy plain, without the guac and tomato/onion mixture on top, or you can serve with whatever your favorite texmexy dip is. I also usually turn halfway through baking to make sure they get evenly crispy.
Do any of u have decent recipes that are like 5 ingredients (not including spices) and take 45 mins or less to prepare i gotta stop eating sandwiches for dinner

Some pro-tips from someone in northeastern usa with food sensory issues AND cooks for both a small army of picky eaters & folks with different health risks:
Frozen onions are pre-diced and very, very easy to add into things. Unless someone has an allergy, I toss a handful of frozen onions (and garlic) into most of the dishes I cook. In thicker sauces & soups especially, they're very easy to sneak in.
Most squashes can be pureed and mixed into sauce! I like to use butternut squash especially (very popular donation to the food pantry so we always end up with a bunch) to mix into my stovetop mac'n'cheese sauce! Also another dish that you can freeze, though I will say that cubed squash (pumpkin especially~) is also really, really good when roasted with bacon, or when mixed into seasonal risotto.
Cauliflower! Cauliflower is a miracle veggie to me! You can dice it, rice it, mash it, use it as an alternative to pizza dough, and from personal experience it is absolutely delicious when breaded and deep fried.
Cucumbers! They go great with mint, watermelon, and are easy to sneak into sandwiches!
Kale & spinach are some greens that always are fairly popular with the crowd. For kale I like to either fry it up with some bacon, chicken, and pecans or dice it really fine to mix into soups. Spinach is very similar to that, but both are also good for salads. Kale has kind of a bitter- very mild!- taste to it and a bit more crunch; spinach is a little more bland & a bit softer (slightly longer to chew). Kale is also a good base for pesto. (I had so much kale from my garden last year; I had to get creative.)
Tomatoes are a hit-and-miss for me, so I've been getting more creative with them. I usually take canned tomatoes (homemade or store bought are both really good) and mix them into Hamburger Helpers (I'm poor and they're yummy), puree them for my own quick pasta sauce or salsa. I also love the smell of stewed tomatoes with mac'n'cheese but hated the texture; I found a recipe online that incorporates bell pepper slices and a slow simmer. I make them every time together.
Corn is very versatile. I personally love to make homemade cornbread (no idea how old our family recipe is), grill it, boil it, broil it, mix it into soups... I know there are more ideas out there, but I haven't tried them all yet.
Celery is one of those veggies I still can't quite get into, but it's always been good for soup: chunks into chicken pot pie, beef vegetable, pureed into a chilled celery soup on hot summer days, or even as a key ingredient in a veggie stock for meals later on.
Frozen berries! I know this thread is about veggies, but fruits & veggies kind of go hand-in-hand with this for me. Frozen berries can easily be added to ice cream, smoothies, cookies, or made into sauces & dressings for your rice, salads, & roasted meats. A few weeks back I used one bag of frozen blueberries to make a sauce that I put on chicken thighs, rice, and the rest went into a salad dressing. Plus they can be added to muffins, cereals, oatmeal, grits if you're willing to give it a go (maple syrup adds a little something-something too~)
Apples! I love apples; I can never stop thinking about how good apples are. They are very crunchy as they are and are very yummy raw, or drizzled with caramel, honey, baked into pies, grilled with brown sugar & cinnamon... Some of my personal favorites though are recipes where I slice them thin and incorporate them into my salads & sandwiches. Apple slices with cheddar cheese, apple butter, and cucumber slices on a cracker is divine for a midday snack, or apple slices with turkey, brie, and a little bit of honey toasted together (good place for some romaine lettuce too). My younger brother loves to grill up some slices of sausage with kale, apple, chive & onion cream cheese on toasted pieces of baguette.
Canned pears, peaches, and pineapple are always another option you can fall back on. I'm sure it's nowhere as good as the original, but I like to make sticky rice with pears as a dessert sometimes, and I've found the full sized canned pears are also good for making into a compote. Pineapple slices always add a little bit to a roast ham, and I love to heat up my peach slices in the microwave with a little cinnamon. They make easy snacks, too.
If you're like me and you have a phobia of produce going bad before you can finish it, I'd do a little digging into what you know you like to see if you could preserve it in some way.
Canned foods are usually fairly cheap (rinse several times before cooking to remove excess sodium!) and will stay good for several years.
Frozen fruits and veggies are often cut up in advance, which I can say from experience can save a LOT of time, and you don't need to use an entire bag in one go. I usually just do a handful or so at a time. Many also come with seasoning and can be cooked in the microwave!
If you, like me, rely on a food pantry, or even if you have to shop bulk, and tend to end up with a lot of fresh produce you don't think you can eat, it's worth the effort to set a day aside (if you can!) to figure out ways you can preserve it. I often spend my Saturday afternoons canning, dehydrating, and/or freezing what I know we can't use in the next week. I usually don't have a lot of spoons when I get home from work during the week, so any time I can save for myself cooking later is much better. (You can also freeze fresh herbs, cheeses, and meat!)
Getting into the habit of eating healthier can be a challenge, but it's worth trying to experiment and finding what sticks. In my case, it was eating mac'n'cheese baked inside a pumpkin & having my entire world view shift on me. Maybe it'll be something as simple as eating an apple slice drizzled with honey, or trying a different cheese on some leafy greens. You just have to find what works for you, and be patient with it.
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.

To add onto these ingredients — You can do literally SO much with eggs fr. Eggs, canned beans, canned tomatoes and rice. Here’s a bunch of ideas under the cut (simplify/adapt/omit ingredients in the provided recipes as needed):
- If you get bullion cubes/broth/stock of some kind and a lemon/bottled lemon juice, you can make avgolemono with egg, rice and the rotisserie chicken (or without the chicken if you’re vegetarian or just prefer it without). So yummy and cozy and FILLING.
- With the canned tomatoes, eggs and rice you can make a simple Chinese tomato egg stir fry.
- Add the beans, sautéed onions and (optionally) a tortilla wrap to that and you can make it into a breakfast burrito/burrito bowl! Plus you can put the sour cream on it too
- Potato frittata with the onions and potatoes. Yum. (You could add some of the shredded cheese too if you like. Dried oregano is great if you have it.)
- Canned tomatoes+canned chickpeas (or other white beans like great northern or navy beans)+onions is one of my favorite filling pasta sauces — Chop the onions however you want and sauté until translucent, then add the tomatoes. Add a tablespoon of butter/butter spread, if you have it. Let simmer until saucy, then add the chickpeas. (I like to smash ‘em slightly with a fork once they’re in the sauce, helps thicken it.) Salt and pepper to taste. let simmer for a little longer, then put on your pasta.
- …Oh also. Canned. Tuna. You can make many pasta sauces (<- you could swap sour cream for the cream cheese in that last one), chickpea or white bean tuna salad, tuna chowder; if you’ve got mayo you can do tuna salad (for sandwiches of crackers), tuna melts, tuna and rice, and so much more
- With the frozen broccoli, eggs, rice and onions, you could make fried rice. If you happen to have soy sauce and/or hot sauce, put that in the rice before you fry it and it’ll be even better.
- Speaking of sauce — Save your extra sauce packets from fast food places!! You can keep them in a jar in the fridge. Y’know how Taco Bell always gives you like a million salsa packets? USE THEM. That’s free ketchup/mustard/salsa/mayo baby! You can put that shit on eggs, baked potatoes, sandwiches, veggies, chips, etc. (Same with salt/pepper packets, red pepper flake or cheese packets from pizza places, etc.)
- Potato steak fries, if you want some variation from the baked potatoes
- You can smash up beans (pretty much any kind) with some salt, pepper and spices and make bean dip/spread, or make refried beans (you can also just buy canned refried beans too if you prefer idk they’re usually not horribly expensive)
- If you’ve got broth of some kind and pasta (small pasta like macaroni is best but honestly any kind works) you can simplify this recipe to make pasta e fagioli/pasta fazool, or bean and pasta soup. (The basic ingredients are just beans+broth+onion+canned tomato+pasta, the carrots/celery/garlic/spices listed in the recipe are great but you don’t really *need* them in a pinch) You could shred some of the rotisserie chicken and add it if you want, or the diced ham!
- Add broccoli to your instant ramen and top it with a fried egg to make it a little healthier, more filling, and more interesting!
- If you have access to a blender or food processor, this broccoli and potato soup is v simple, quick and easy
- Obviously, omelette or scrambled eggs with a mix of almost any of these things. Chopped broccoli+shredded cheese+diced ham+diced potatoes sounds very yummy to me
If you have bread…
- Grilled cheese w/ the shredded cheese from the first post
- French toast is a great way to use up old bread, it’s just eggs, milk, bread, butter and sugar. Great topped with lemon and sugar if you don’t have maple syrup (or you could even make your own simple syrup)
- Fried egg on toast/egg-in-the-hole is a classic easy breakfast
- If you’ve got mayo (or butter!) — egg salad! Great as a sandwich filling or on its own.
And finally…
- Rice pudding for dessert:)
- Or easy egg custard😌
- (Canned peaches/pears or other fruit make nice toppings for either of these things or are a fine dessert on their own!)
- Meringue cookies if you have lemon! (the ones in this recipe use lemon juice instead of cream of tartar, which I figured would be better since cream of tartar is not really a necessity for many things and is typically a bit more expensive)
…So for the other ingredients I mentioned here:
- Rice — You can get like 5 lbs. for $3 depending on the store/brand (5 lbs should last you a LONG time)
- Canned beans — Varies, but usually less than a dollar a can
- Canned tomatoes — 14.5 oz. can of diced tomatoes typically $1-$1.50
- Broth/stock/bullion (A box of broth is typically about $2-3; an 8-pack of bullion cubes can be anywhere from $1-$5)
- Pasta — Again, varies, but typically about $2/lb., so if you’re living on your own that’s anywhere from 2-5 meals depending on how much you eat/what you’re using it for
- Milk — Probably the expensive thing on here if you account for its short shelf-life. On average about $3/gallon
- Sugar - 4 lbs. is typically $2-3. (Should last you a whileeee)
- Bread - Varies wildly depending on the type of bread, store and brand but you can get 20 oz. for $1.10 (that’s 22 slices, so 5¢ a slice)
- Canned fruit — Typically $1-$3 for a 15 oz. can depending on the fruit/store/brand
- Canned tuna — A 5 oz. can go for as little as like 80¢ depending on brand/store and rarely more than $2.
- Mayo — Slightly more expensive but will last a while and great for egg salad, tuna salad, pasta salad, sandwiches, sauces and more. Typically between $4-6 for 30 oz.
- If you don’t like broccoli you could probably substitute (or supplement) most of the things broccoli is mentioned for here with frozen peas, frozen green beans, frozen carrots or frozen spinach (frozen spinach is a teeny bit more expensive, usually about a dollar more but still usually less than $2 a bag)
- Also here’s Great Depression Cooking. If you don’t already know about it, it’s a delightful YouTube channel absolutely chock full of great cheap recipes by a woman who lived through the Great Depression. Highly recommend. Happy cooking<3

10lb bag of potatoes (like 10-15 full meals) - $3, $0.20 to $0.30 per potato depending on size Butter spread - $2 for the whole bag of potatoes, about $0.13 per potato Shredded cheese - $1.50 tops about 10 potatoes (more if you don’t like a lot of cheese) $0.15 a potato Sour cream - less than $1 for about 15 potatoes ($0.13 a potato) For protein, a rotisserie chicken is usually $4 and it tops 10 potatoes, and diced ham is $2 a pack and tops at least 5 potatoes
tl;dr a fully decked baked potato costs less than one dollar and will fill you the fuck up, you might get tired of them after a few days but they’re so much better than ramen noodles and way better for you in terms of sodium and nutritional value
