I would really like to see a blind study of reactions to bread from US and European wheat varieties, and grown under different systems. I'm not saying there isn't a difference, but someone on TikTok saying they feel better when they eat bread in a foreign country doesn't really have enough rigor for me.

I know they're closely related. It doesn't change the fact#That the gluten in spelt is easier to digest)
