Kangkong (Water Spinach) with Bacon
I was thrilled to see this at the Asian grocery and promptly grabbed it because I was craving a healthy supper choice. This green veggie was a staple of my childhood. In our backyard, my father planted this particular veggie. Cooking oil, garlic, onions, vinegar, and soy sauce are used to sauté it. This is a fantastic main course or side dish. It's a terrific vegetarian recipe even without the bacon, but I decided to add some. A tasty, fresh dish that fulfilled my need.

This box of takeaway Economy Rice (菜饭) comes with savoury sweet and crispy ikan bilis (dried anchovies) & peanuts fried with curry leaves. In the centre, curry chicken & potato with gravy on the white rice. The vegetable dish is stir-fried kang kong (空心菜/蕹菜) or water spinach with shredded carrots.

Stir-fried water spinach (prose, cooking)
water spinach
This vegetable has many other names. It is also called wèng cài, Water Morning Glory, and kōng xīn cài, kang kong. It is a vegetable of the Convolvulaceae family and is similar to sweet potatoes. It is native to Southeast Asia. It can be eaten as a salad or boiled, but it tastes best stir-fried. However, when fried, it turns black and does not look very appetizing. So I thought I would add a solution of vitamin C to prevent the leaves from oxidizing. I seasoned it with olive oil, ground garlic, salt, and pepper. I added a little vitamin C during the frying process and at the end. It seems to have an effect of preventing discoloration.

別名の多い野菜である。エンサイ、アサガオ菜、空心菜など。ヒルガオ科の野菜であり、サツマイモと同類。東南アジア原産。サラダにしたり、茹でたりしても食べられるが、炒め物が最も美味しい。ただ炒めると色が黒くなり、美味しそうに見えない。そこでビタミンCの溶液を加えて、葉��酸化を防ごうと考えた。味付けはオリーブオイル、摺りニンニク、塩、胡椒。炒める途中と仕上げに少々ビタミンCを加えた。変色防止効果はあるようだ。

Went across the street to the 24hrs coffee shop to order Singapore Fried Noodles (星洲米粉) and Hor Fun (河粉) from the tze char (煮炒) stall. The first is fried bee hoon or rice vermicelli while the latter is broad flat rice noodle.
I took the easy way to dinner and opted for Economy Rice (菜饭) with this big piece of savoury pork chop, crispy ikan bilis & crunchy peanuts and kang kong (water spinach) stir-fry over steamed rice.

Ensai is a vegetable of the Convolvulaceae family and is closely related to sweet potato. Potatoes can't grow, so they eat stems and leaves. Product of South China. There are many other names, and it is also called Entsuai, Yotsuai, Morning Glory Vegetable, Water Spinach, etc. It is delicious to heat and eat, especially stir-fried, but the drawback is that it quickly turns black after heating. It must be delicious.
