Shawarma eggplant is a satisfying plant-based dish that has all the spices and flavors of your favorite grilled meat. This vegetarian main is versatile and customizable, and can be prepared in advance, making it ideal for hosting. A slather of Michael Solomonv’s herbaceous, spicy Yemenite zhug on top adds necessary zing and heat. For a little extra protein, drizzle the roasted eggplant with tahini, serve it on a swirl of labneh or add roasted chickpeas on top. 
Olive oil is eggplant’s best friend, making it satisfyingly rich. First you’ll brush oil onto the eggplant before it’s roasted, then drizzle it mid-bake, and again when it comes out of the oven. Crusted with spices, the eggplant emerges from the oven browned and fork-tender. You can swap the homemade shawarma spice blend with your favorite store-bought mix; and if you’re not an eggplant fan, you can swap it for thick-cut cauliflower steaks or large zucchini and summer squash.
Note: Eggplant can be made in advance, stored in the refrigerator and reheated in a covered baking dish until warm.

u are going to regret asking me this ro because not ONLY do i love to cook and i make 95% of my meals from scratch at home but ALSO soup is my favorite thing to make ((i love it so much that the only things i asked for for christmas this year were one (1) dutch oven for my soups and one (1) immersion blender for my soups))
OKAY so i experiment a lot with soups and i make a bunch of different ones based off of recipes i like but my top three are as follows:
1 - chili. u can’t go wrong with chili. it’s better in the crock pot & i just let that sucker stew on low for like nine hours and then it’s chili o’clock for a week straight. i do like four different kinds of beans: pinto, black, kidney, and chili. sometimes garbanzo or great northern or even some lentils if i’m feeling it. i do ground turkey sometimes but tbh it’s just as good vegetarian. lots of diced tomatoes lots of spices. cayenne and chili powder and cumin and garlic (fresh and powder) and onion (fresh and powder) and fresh japalenos, sharp cheddar, cilantro, and green onions to top
2 - i’m an absolute WHORE for zucchini and i’ve made my own version of this zucchini & tomato soup that’s so insane i make it like once every six weeks. it’s diced zucchini and onions and diced fresh romas, super soupy so lots of veggie broth, throw in some ground spicy italian sausage and top it with fresh grated parm, parsley, and chili flakes. INSANE. crusty bread on the side if you’re feeling fancy bc it’s not the most filling on its own
3 - guess what, MORE ZUCCHINI. every late summer when corn is in season i go to the farmer’s market and get me like ten ears of fresh corn. i shuck those bitches and cut all the corn off and make this creamy zucchini and corn chowder. lots of broth lots of onions and fresh veggies and top that shit with some smoked paprika, ground cayenne and parsley. it makes like twelve servings so i freeze half of it and get back into it a few weeks later it’s SO GOOD but i takes like three hours to make so i only do it once a year fjffhfnfh

3 healthy vegetarian pasta recipes:
Roasted Veggie Pasta Ingredients: 1 zucchini, sliced 1 yellow squash, sliced 1 red bell pepper, chopped 1 small red onion, chopped 4 garlic cloves, minced 2 tablespoons olive oil 1 teaspoon dried thyme Salt and pepper to taste 8 ounces whole wheat pasta Parmesan cheese (optional)
Instructions:
Preheat oven to 400°F (200°C).
In a large bowl, toss the zucchini, yellow squash, red bell pepper, red onion, garlic, olive oil, thyme, salt, and pepper together.
Spread the vegetables evenly on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.
Cook the pasta according to the package directions.
Drain the pasta and toss with the roasted vegetables.
Serve hot, topped with Parmesan cheese if desired.
Creamy Avocado Pasta Ingredients:
8 ounces whole wheat pasta 2 ripe avocados, peeled and pitted 1/4 cup fresh basil leaves 2 garlic cloves, minced 2 tablespoons lemon juice 2 tablespoons olive oil Salt and pepper to taste
Instructions:
Cook the pasta according to the package directions.
While the pasta is cooking, prepare the avocado sauce. In a food processor or blender, puree the avocados, basil, garlic, lemon juice, olive oil, salt, and pepper until smooth and creamy.
Drain the pasta and toss with the avocado sauce.
Serve hot.
Spicy Roasted Red Pepper Pasta Ingredients:
8 ounces whole wheat pasta 2 red bell peppers, roasted and peeled 1/4 cup chopped fresh parsley 2 garlic cloves, minced 1/4 teaspoon red pepper flakes 1/4 cup grated Parmesan cheese 1/4 cup olive oil Salt and pepper to taste
Instructions:
Cook the pasta according to the package directions.
While the pasta is cooking, prepare the roasted red pepper sauce.

How to stay fuller for longer with less calories
I was supposed to start the desire’s diet today but my dad brought us an entire big ass box of roasted pork + more food from our province so I ate my weight loss plans off 🥲 While contemplating on my binge eating, I researched some ways to stay fuller for longer with less calories because I’m used to eating so much in a day.
for the food examples, I only mentioned the ones I like to eat, are easily accessible to me, and of course, I can afford lmao (oh and I’m vegetarian so I didn’t mention meats)
1. Eat foods with high water content
- veggies: salad greens, carrots, tomatoes, zucchini
- fruits: grapes, apples, berries, watermelons, melons, oranges
2. Eat foods with high fiber and protein content
3. Eat whole grains
- oatmeal, brown rice, whole wheat bread
4. Eat breakfast! Go for slow-release energy, protein-rich food and complex carbohydrates.
- oats, brown rice, whole wheat bread, soy milk, corn, carrots, tomatoes, apples
5. No white carbs. No white rice, pasta, and white bread to avoid energy spikes and dips
6. Cinnamon! Helps you feel fuller for longer + slows down the emptying of your stomach + lowers blood sugar levels
7. Don’t eat in front of the tv/phone. Focus on your food and eat slowly… it’ll psychologically help keep you fuller.
8. Spicy foods can work as appetite suppressants.

Little Meals on the Aerie, Week of 11/6
I love meal prepping, so I'm going to share what's on our table this week! I pack breakfast and lunch for us to take to work. For dinner, I make ahead nearly all of this to reheat the day of. I don't often get home until 6pm, so I want dinner on the table in fifteen minutes flat!

Spicy Walnut and Rice Patties: walnuts, brown rice, eggs, wholemeal flour, turmeric, garam masala, cumin seeds, carrot, onion, tasty cheddar cheese, salt and pepper, ginger. 
Cheeky Plum Sauce: - 
Kumara (or Potato) Salad: potato, apple, celery, onion, spring onion, parsley, cottage cheese, sour cream, garlic, lemon juice, vinaigrette dressing, salt and pepper. 
Crunchy Coleslaw: cabbage, carrot, celery, zucchini, garlic vinaigrette dressing. 
This week, tainted by menstruation, all traces of hope were gone like August. Every week is a promise but when the month changes it never feels that way. Distance across space can stretch and contract but distance in time only grows. I read a piece by Mark Fisher early this week, about how people talk about hope when they don’t have anything else, that to be hopeful you are passive. After taking that in I wondered what it was I had a flourishing hope for after completing menu one. I’m very impressionable. I meant for each menu to stand alone, to not think about the previous week after it was done, but when there are dots I will connect them.

The journey toward menu two began on the Monday, the fourth day of September. I was excited by the Cheeky Plum Sauce, the way I am excited by all things cheeky. They’re mischievous, they’re riveting, they’re crazy, they’re confusing and they’re illusive. But most of all, they are always unattainable. I realised that after visiting seven different supermarkets in two days looking for the 850 gram tin of Black Doris Plums in Juice. Driven crazy, I was prepared to spend $22.99 on a 580 gram jar of Black Doris in Pinot Noir Syrup. I walked to the organic grocery store close to my house in high wind, crouching in front of the baking essentials shelf, I remembered all my past mistakes and realised I had to stop. The next day, a salesman came to my work to ask why we had stopped using him as a supplier. I thought about how we were similar in the sense that we both had issues giving up.

I spent Tuesday assembling salads. Around 10PM my flatmate and usual dinner guest came through to the kitchen and remarked man, this is a full time job. The comment stirred inner thoughts and questions regarding the fact that I already have a full time job. I became stressed and tired. The headlining dish of menu two was the Spicy Walnut and Rice Patties. But because of what happened, and I think I intuited this, this week became about something so much bigger than cooking the menu itself. The rice patties fell apart, no longer patties, they were served as fried rice. The dinner party was a success, two salads, fried rice, and a store bought plum sauce were taken to the table. Everyone cleared their plates, seconds were dished up. But I felt so empty. There were three quarters too much onion in potato salad, Bishop and Carruthers had clearly stated one quarter of an onion, and I accidentally threw in the whole thing.I had always intended to do half, but never whole. This menu became a symbol of reinvention. The rice patties were reinvented as fried rice and on Thursday, I got a haircut hoping that it would change everything about myself.
