After too much shrimp, chicken, and beef in the past few days, I've made a vegetarian stir-fry udon with vegetables and mushrooms.
I also incorporate some miso to add a twist of Japanese flavor. The combination of vegetables and mushrooms pairs perfectly with the chewy texture of the udon noodles.

ok not to add my voice to the vegan vs meat eating debate or whatever..... but when the fuck will vegans stop acting like they’re the highest and most intellectual and morally correct beings on the planet????? and stop guilting people who don’t want to be/can’t be vegan??? like i’m so sick and fucking tired of it.
and also why can’t they (vegans/vegetarians) admit that they’ve watched a fuck load of propaganda films from vegan activists instead of being like “i’m the best bc i don’t follow the mainstream media narrative that tells everyone to eat meat!!! y’all are fucking sheep and need to wake up to this!!! STOP BELIEVING MEAT EATING PROPAGANDA AND OPEN YOUR GODDAMN EYES!!!!” like im pretty sure that line is taken from some of the propaganda films that they keep recommending to people to watch, whenever they comment on posts about non-veganism or veganism criticism posts.
bc im pretty sure all of the above behaviours are exactly why people can’t fucking stand vegans/vegetarians. like if a good load of y’all weren’t such a bunch of fucking overly pretentious and self-righteous assholes.... maybe people would actually bloody listen to your message and consider it. and that might just be what would turn more people vegan/vegetarian.... instead of trying to guilt trip & harass people to forcefully follow your desired moral code of living.

Creamy Vegan Potato Soup with Corn and Kale
This soup recipe is an adaptation of a recipe that appears in the recently published cookbook Meatless Monday by Jenn Sebestyen (highly recommend). The changes that I made were minor and based on what I had in my pantry. It is low in calories, making it a great choice for soup and sandwich combo.
Prep time 15 minutes Cook time: 30 minutes Servings: 6 Equipment needed:
Large soup pot/dutch oven
Food processor/blender or Immersion blender
Time Saving Tip
If you have a food processor, you can place the onion, garlic, and carrots in the processor and chop all at the same time.
Ingredients
1 Tbsp olive oil
1/2 medium-sized onion diced
7 medium size russet potatoes, peeled and diced
2 carrots, peeled and diced
3 garlic cloves, minced
4 cups low sodium broth
1 cup water
1 teaspoon celery seed
1 teaspoon dried dill
1 cup chopped kale, washed and woody stems removed
1 cup frozen (or fresh) corn kernels
1 14oz can coconut milk (or lite coconut milk)
Hot pepper sauce (such as chipotle Tobasco sauce), optional
Salt and pepper to taste (I recommend starting with 1/2 tsp salt and 1/2 tsp of pepper; you can always add more if needed)
Directions
Heat the olive oil in your soup pot over medium heat.
Sauté the onion, garlic and carrots for 3 to 4 minutes or until they begin to soften.
Add the salt, pepper, and celery seed and sauté for one more minute
Add the vegetable broth, water, potatoes and dill
Increase the heat to bring to boil; reduce the heat to low and simmer for 15 minutes or until the potatoes are tender.
If you have an immersion blender puree about 1/4 to 1/3 cup of the soup to create a thick creamy base. Alternatively, if like me you don’t have an immersion blender, take about 2 cups of the soup (let cool) and place in your food processor/blender with some of the coconut milk and puree. Return to soup pot.
Add the remainder of the coconut milk to the soup pot.
Add corn and chopped kale and simmer for 5 more minutes.
Serve with a few dash of hot sauce, if desired.
