Vegan Newbie
I’m a recently converted vegan, about 4 months in now, so as you can imagine I still have lots to learn during this journey. I did not go cold turkey like some other people who have converted; instead I did it gradually.
I started as a Pescatarian because at the time I had some cravings for fish (I am a born and raised island girl from Hawaii and well poke is almost a major essential as spam or rice is to us) but at the same time it was very rare and I had to be in the mood to eat it. If not, I hated the smell and taste of it. Weird, I know! This lasted maybe a solid month. Not very long because I realized that even though I had a rare craving for fish, about 99% of the time I didn’t even like it.
Then one day, I was on Facebook (go figure right?) and seen an ad about this thing called vegan. I honestly, of all my years, never heard of a vegan. It’s possible, I knew people who were but never heard them talk about it but I honestly, did not know what it was. So with inquiring minds, I went to the page to read what it was. After reading it, it dawned on me that I should be vegan; it just made sense. Why? 1. I hated eating meat but not for many reasons that other vegans stop eating. Mine is more of a choice because I have an unaligned jaw and it was sore after eating meat with all the chewing. It just helped when I didn’t eat it. So... sort of, kind of, medical related. Yeah, I’ll go with that. 2. I always hated eggs. I’m 90% Filipino and my papa used to eat balut which is an egg but with the baby chick still in side. Totally gross and changed my whole feel on eggs in general. 3. I’m allergic to milk.
So, it totally made sense to me that maybe I was meant to be vegan. I did as much research on veganism as I could and started the process from there. I did lack a lot of vitamins in the beginning because it was obvious that I did not do enough research on how to convert until afterwards. But once my body was done detoxing and I got all my adequate vitamins in me, my body has never felt better! This has been the best decision that I have ever made, other than marrying my husband and having 2 handsome boys. Just had to throw that in there in case he reads this. Love you honey!
I still have a long journey to go and about a million more explaining on where I get my protein from all the people who find out I’m vegan. Yay me!

#BuddhaBowls are basically my favorite thing ever - especially when they come with delicious #Seitan. A great way to get the savory #umami flavor people miss from traditional nonvegan foods is to use a 🌱soy sauce to impart great umami flavors sans cruelty. That combined with the meaty texture of Seitan is a pretty popular way to get people to eat vegan foods without missing the flesh of #animals. Just beware it's basically #gluten so people with intolerances or allergies should try other options (like ground mushrooms and soaked walnuts or tofu).
