A delicious vegan twist on the classic bread pudding, made with almond milk and sweetened with maple syrup. Perfect for a comforting dessert!
Ingredients: 6 cups stale bread cubes. 2 cups unsweetened almond milk. 1/2 cup maple syrup. 1/4 cup melted coconut oil. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. 1/4 teaspoon salt. 1/2 cup raisins or chopped nuts optional.
Instructions: Preheat oven to 350F 175C and grease a baking dish. In a large bowl, combine almond milk, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and salt. Add bread cubes and raisins or nuts if using to the bowl, and stir until well combined. Pour mixture into the prepared baking dish, spreading it out evenly. Bake for 45-50 minutes, or until the top is golden brown and the pudding is set. Remove from oven and let cool slightly before serving. Serve warm, optionally with vegan whipped cream or ice cream.
Prep Time: 15 minutes
Cook Time: 50 minutes
