Tried the Veggie Kitchen 'meatballs' from Farmfoods in a herby tomato sauce with the following veggies: garlic, red and white onion, bell pepper, mushrooms and 2 cans of chopped tomatoes with basil, oregano and Italian herbs. Today was for having homemade pizzas day with my dad as he's so great at making pizza dough and sauce. We started with this cheesy garlic bread, with @violife_foods grated cheese and some free from red pesto blobs. Brown rice mushroom and spinach risotto with homemade garlic bread 🙏🙏 I think I've posted this recipe before but this time I used short grain brown rice as a replacement for the original aborio. This is the recipe: on a medium-low heat, fry 1 chopped onion with 3 minced garlic cloves until soft • add around 2-3 cups sliced mushrooms for about a minute • stir in 1 cup short grain brown rice and 1litre vegan vegetable stock and an optional tbsp wine vinegar • bring to a boil then let simmer for literally 1 hour and about 20 minuets - that's how long mine took to become soft, sticky and I added a bit more hot water but if using the original aborio rice (why didn't I?!?) it should only be about 30 minutes • add 2 handfuls of spinach and an optional 2tbsp nutritional yeast and stir in • check seasoning with more salt and pepper as you wish and serve!
