I think the reason garlic lovers (me included) are always like, "that isn't enough garlic, double it" is because we're cooking all the damn flavor out!! Like, yeah, sometimes you need more. But listen. Listen. If you want that mega sharp flavor? Ultra garlicky goodness?
Don't saute your onions and garlic together and then throw your other veggies or whatever in the pan. Don't do it! Garlic's flavor becomes super mellow as it cooks, which is why you can't taste its telltale sharpness in the end. If you saute it for 10 minutes, that flavor will basically be gone, and you'll need two or three times as much to replace it when you want that zing of garlicky goodness!!
Mince up those measly two cloves and throw them in for only the last minute of cooking. You'll get that tasty garlic aroma and flavor without using a whole head.

This turned out super tasty! You have to add way more salt than you think. I ended up serving this over instant mashed potatoes because knedlíky would've been too time-consuming and can confirm it slaps.

hey does anyone have any soup recommendations for beginners. like. theoretically if I had never tried any soup other than tomato before. and also every other soup seems kind of gross to me and I am scared of most vegetables. and also “chunks in liquid” sounds kind of gross….. but like I really enjoy soup as a concept???? and wish I could enjoy it more for real. but ohhgghhhh ohh it’s so scary.
basically does anyone have any suggestions for super simple, tasty soup to try that might be suitable for someone with a lot of sensory issues??? no chunks or minimal is a bonus but I understand it’s not always common. I just want to be part of your world… (soup world)

I love my garlic press and maintain that garlic is often better for cooking when it's been squished and extruded through little holes, but there is a problem with the garlic press: I am always having to wash it.

Greek-Style Baked Cod with Lemon and Garlic
Ingredients:
• 4 cod fillets (about 6 ounces each) • 4 cloves garlic, minced • 1/4 cup fresh lemon juice • 1/4 cup extra virgin olive oil • 1 tsp dried oregano • 1 tsp dried thyme • 1/2 tsp dried rosemary • Salt and pepper, to taste • Lemon slices, for garnish • Fresh parsley, chopped, for garnish
Instructions:
1. Preheat your oven to 400°F (200°C). Lightly oil a baking dish large enough to hold the cod fillets in a single layer.
2. Pat the cod fillets dry with paper towels and season both sides with salt and pepper. Place them in the prepared baking dish.
3. In a small bowl, whisk together the minced garlic, lemon juice, olive oil, dried oregano, dried thyme, and dried rosemary.
4. Pour the lemon and garlic mixture over the cod fillets, making sure they are evenly coated.
5. Arrange lemon slices on top of the cod fillets for additional flavor.
6. Bake the cod in the preheated oven for about 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
7. Once the cod is cooked through, remove it from the oven and garnish with chopped fresh parsley.
8. Serve the Greek-Style Baked Cod hot, with your favorite side dishes such as roasted vegetables, rice, or crusty bread.
