My first proper meal back in Japan this week! Still trying to satisfy that tantanmen craving. My companion got spice level 2/3 and I got a 1/3 to compare. His was a MUCH prettier color, and in addition to being spicier, it also had more umami. That made it more satisfying, but the heat kind of masked the sweetness of the sesame.
Both were actually pretty spicy by Japanese standards, I think a 1.5 spicy would be about ideal. And both were nice, but at the end of the day, I think I honestly might prefer this storebought broth, because it has the exact balance of spicy, umami, and sweet that I'm envisioning when I'm craving tantanmen. I guess I'm lucky if I prefer the cheaper version!

幸楽苑の担々麺。ごま味噌が効いてておいしいけど、搾菜と山椒が入ってないので正統ではない。というか、落ち着かないので、店内BGMを以前のようにジャズに戻してほしい。あと、現行の醤油ラーメンは甘すぎなので、値上げでいいからクラシックを通常メニューに戻してほしい。

Spicy Tan Tan Soup Tantanmen or Dan Dan Noodles Dan dan noodles, also known as tan tan soup, is a traditional Chinese soup made with pork, chile peppers, and plenty of flavor. 2 tablespoons tahini, 2 teaspoons rice vinegar, 1/4 cup soy sauce, 3 green onions thinly sliced, 1 tablespoon sake, 1 clove garlic pressed, 1 teaspoon rayu, 1/2 cup fresh spinach or to taste, 1 tablespoon minced shallots, 2 teaspoons doubanjiang, 1.5 teaspoons grated fresh ginger, 2 cups ramen noodles or to taste, 1 red Thai chile pepper sliced, 4 cups chicken stock, 1 teaspoon sesame oil, 1 teaspoon tianmianjiang, 6 ounces ground pork, 1 tablespoon miso paste

I had this awful craving for tantanmen around the end of the year (hazards of translating about them) and ended up buying a two-pack to make at home: Nissin's Queue-Worthy Restaurant-Style Tantanmen. I didn't want to get my hopes too high, but this was wonderful! Not just better than that sad restaurant but legitimately very good in its own right! I thought at first it was a matter of low expectations, but if anything, the second pack was even tastier.
The first photo is a standard tantanmen with ground meat and leafy greens, and the second is a meat-less (slash forgot-to-shop) version substituting crumbly scrambled eggs and shredded cabbage (plus some leftover menma). But that actually worked fine! If you have the choice, the creamy and spicy broth does go better with meat (or soy) than with egg, but it's nice to have options.
Anyway, definitely buying this again! I'd rate it higher than Soup No Tatsujin's tantanmen soup, but then again, that's maybe 1/3 the price, even without considering that it doesn't include noodles. In an ideal world, Nissin would start selling the soup alone so I could mix and match with cheap store brand noodles........
