The Powerhouse Salad is tasty and good for you because it has superfoods like quinoa, kale, and chickpeas in it. It is a great choice for a meal that is both healthy and filling.
Ingredients: 2 cups baby spinach leaves. 1 cup kale leaves, chopped. 1/2 cup quinoa, cooked and cooled. 1/2 cup chickpeas, canned and rinsed. 1/4 cup walnuts, chopped. 1/4 cup dried cranberries. 1/4 cup feta cheese, crumbled. 1/4 cup cherry tomatoes, halved. 1/4 cup cucumber, diced. 1/4 cup red onion, thinly sliced.
Instructions: Put chopped kale and baby spinach in a large salad bowl. The cooked quinoa, chickpeas, walnuts, dried cranberries, and feta cheese should all be put in the bowl. To make sure the salad ingredients are evenly mixed, gently toss them. Add cucumber dices, cherry tomatoes, and red onion slices that are very thin on top of the salad. Any vinaigrette will do, or you can make a simple one with olive oil and balsamic vinegar. Just before you serve the salad, drizzle it with the dressing. Pour the dressing over the salad one more time and toss it to mix everything together. Serve right away and enjoy!
