Adobong Pusit Recipe (Squid Adobo)
A food that is tasty, traditional, and yet so simple to prepare is known as adobo. This dish has its roots in Spanish cuisine but evolved in the Philippines. Adobo is one of the most popular dishes in the Philippines, and practically every single Filipino enjoys eating it. Although there are a wide variety of foods that may be prepared with the “Adobo” way of cooking, the components that are…

Running out of options in town for finding duck breast 😭 the looks I get when I ask “do you have duck breast” are soooo confused. I tried at a shop listed as a local supply for a duck farm and still nothing 😭
maybe one of the local asian markets can help because I am about to scrap it as part of the meal if I can’t find any 🫡

I wasn't looking forward to this one, and that feeling proved correct.
When I bought the halibut for two weeks ago, I also bought the octopus and squid for this one. Those three things cost me ninety seven fucking dollars.
Tumblr media
Appetizing!
The recipe called for TEN octopus tentacles, but these two cost me enough that I made an executive decision.
First step...
Tumblr media
I double checked, and the octopus stock recipe from the back of the book is the exact same method and ingredient list from the beginning of the Portuguese soup recipe, so this counts as two in one.
I suggest sharpening your knives before this one. Cutting up octopus is a trick.
"Searing" the squid and octopus was kind of gross. I didn't know that when you heat up octopus, it produces a red foamy liquid that gets all stuck to the pan.
Tony suggests eating the octopus pieces from the stock, which I did. They were surprisingly meaty, if a little flavourless.
Tumblr media
On to the soup. Oh yeah, I also had to reduce an entire bottle of wine down to one cup, which took over half an hour. This was boring to cook, and boring to eat.
Tumblr media
This looks like some kind of alien stew. The wine made everything a really unappealing purpley brown, and all the veg being large dice is an ugly choice as well. If this had ten whole tentacles in it, that would just be insane.
Just realized I didn't even take a picture of the plating. It was just a bowl, so you're not missing anything.
| Portuguese Squid and Octopus Soup |
Taste is a 1 out of 5. Maybe even less.
Difficulty is a 2 out of 5. Soup is usually pretty easy.
Time was about 3 hours. Most of it simmering time.
Surprisingly, the octopus and squid itself were tender and pretty nice to eat, but it was just so overwhelmingly tomato based.
I enjoyed the store bought bread that I served on the side more than I liked the soup...so...yeah. Next.

Risotto al Salmone e Calamari
Tumblr media
I often think Sunday nights call for an easy meal, something simple and comforting. This Risotto al Salmone e Calamari, while it may sound fancy, is just that, a plate-ful of creamy comfort, livened up with fragrant herbs freshly picked in the garden. Have a good one!
Ingredients (serves 4 to 6):
2  tablespoons unsalted butter
1 tablespoon olive oil
1 onion
a small bunch Garden Chives
a small bunch Garden Chervil
2 fluffy sprigs Garden Parsley
1 heaped tablespoon tinned calamari (kept in olive oil)
1 garlic clove, minced
2 cups arbororio rice
1/2 cup dry white wine, such as Pinot Grigio or Chardonnay
the (hard) end of a Parmesan cheese
4 cups Fish Fumet, warmed
315 grams/11.10 ounces fresh salmon fillets
1 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
Parmesan
1/4 cup double cream
In a large pot or saucepan over a medium-high flame, melt butter with olive oil.
Peel and finely chop onion. Add chopped onion to the pot when the butter is foaming. Cook, a couple of minutes.
Finely chop half of the Chives, Chervil and Parsley, and stir chopped herbs into the pot. Cook, 1 minute.
Add tinned calamari, and cook, another couple of minutes, until just browned. Stir in minced garlic, and cook, 1 minute more. Then, stir in arborio rice and coat well in fat, calamari, and herbs until translucent. Deglaze with Pinot Grigio. Reduce heat to medium and add the end of the Parmesan cheese to the pot.
Cook, stirring often, and gradually adding warmed Fish Fumet, until rice is cooked and most of the liquid is absorbed, about 25 minutes.
Remove the skins from the salmon fillets, and cut into chunks. Add salmon chunks with the last of the Fish Fumet. Season with coarse sea salt and black pepper. Cook, stirring often, about 5 minutes more, until salmon is cooked.
Finally, grate in about 1/4 cup Parmesan, add double cream, and give a good stir.
Finely chop remaining Chives, Chervil and Parsley.
Serve Risotto al Salmone e Calamari hot, sprinkled with chopped Chives, Chervil and Parsley, with a glass of chilled Pinot Grigio.

Must-Eat while touring Algarve, Portugal
I’ve never devoted a blog about food at any of my destinations traveled before, but was so impressed with the Algarve food that couldn’t skip this one. You will regret it if you don’t pay special attention to the Algarve must-eat meals. I even overcame my prejudices and allergy threats by dipping into South Portuguese cuisine with exotic sauces, gourmet bites, traditional culinary, and…
