RECIPE: Grilled Pork Tenderloin with Chimichurri (from Meal Prep Magic by Catherine McCord)
It was in Argentina where I began my love affair with chimichurri; a pot of it accompanied whatever meat we were eating. Just the thought of pairing it with pork tenderloin makes me giddy.
PREP TIME: 15 minutes, plus 1 to 2 hours for marinating COOK TIME: 15 minutes SERVES: 4 to 6
¼ cup (60 ml) Dijon mustard
½ cup (120 ml) apple cider vinegar
3 tablespoons light or dark brown sugar
8 cloves garlic, minced
⅓ cup (75 ml) plus 2 tablespoons olive oil
1½ teaspoons kosher salt
2 to 2½ pounds (910 g to 1.2 kg) pork tenderloin, fat and silver skin removed
½ cup (15 g) packed fresh cilantro
½ cup (15 g) packed flat- or curly-leaf parsley
1 small shallot, peeled
2 tablespoons red or white wine vinegar
2 tablespoons fresh lime juice
Pinch crushed red pepper
Freshly ground black pepper
Place the Dijon mustard, apple cider vinegar, brown sugar, half of the garlic, 2 tablespoons of the olive oil, and 1 teaspoon salt in a large zip-top bag. Squish the bag to mix the marinade. Add the pork tenderloin and use your hand on the outside of the bag to move the marinade around the pork. Marinate for 1 to hours at room temperature or overnight in the refrigerator.
To make the chimichurri, in a food processor, place the cilantro, parsley, remaining garlic, shallot, the remaining ⅓ cup (75 ml) olive oil, the red or white wine vinegar, lime juice, crushed red pepper, remaining ½ teaspoon salt, and black pepper and pulse until finely chopped.
Heat a grill to medium heat. Grill the marinated pork on several sides for a total of 14 to 15 minutes, or until the internal temperature is 135 to 140°F (55 to 60°C) when checked with an instant-read thermometer inserted in the thickest part of the meat. (Alternatively, you can use a cast-iron skillet to roast the pork. Heat over medium-high heat and add 1 tablespoon of olive oil. Sear the pork all over for a total of 6 minutes. Transfer the pan to a 400°F (205°C) oven and roast for 15 to 20 minutes.)
Allow the pork to rest for at least 10 minutes to allow the juices to settle before slicing. Use a sharp knife to cut pork on a bias into ½-inch (12 mm) slices and top with the chimichurri sauce.
Make sure not to overcook the pork. Pork should never be cooked to more than 135 to 140°F (55 to 60°C). You want the internal color to be light pink.
Make double the amount of chimichurri sauce to serve with fish, shrimp, chicken, or steak later that week.
TO ENJOY LATER The cooked pork can be cooled and refrigerated in an airtight container for up to 3 days. Enjoy at room temperature or warm for 30 seconds in the microwave. Store the chimichurri in an airtight container in the fridge for up to 5 days, or freeze in ice cube trays then transfer to labeled zip-top bags for up to 4 months.
PREP IN ADVANCE Place the zip-top bag of the pork in its marinade in the freezer for up to 3 months. When ready to cook, place the pork chops in the zip-top bag in the refrigerator to thaw overnight; cook as directed.

• Baby proofs that whole house. Always looking up at nutritious recipes for pregnant ladies on internet.
• Buys everything that he finds adorable and spending unnecessarily very high that you have to sit him down and explain the budget but still doesn't listen.
• Wants Baby to look like you because you are the most beautiful person in this world for him.
• Attends every doctor's appointment with you like a ritual and bores doctor to death with his constant questions about your pregnancy. Don't be surprised if you find him talking to doctor and asking a question at two in night.
• Talks and kisses to your baby bump everyday and mostly talk about you to baby telling how much lucky he is to have you and how much he loves you both.
• Has multiple panick attacks through out your pregnancy just thinking about you and baby's safety.
• When your water broke and the contraction begins he is just a centimetre away from having a heart attack.
• When you are under going labour threatens doctor that if anything happens to you or the baby the doctor will become a dead body.

Okay first random thing I would recommend is decide what d!3t soda you're going to like, or if you don't like a d!3t soda at all and you actually want to be more like a flavored water girl. Trust me this will just make things easier down the line. I remember at the beginning I was so confused on what to drink so this is so random but I just wanted to put that there so that way you don't end up drinking all your daily c@ls like I did 😭😭
Make sure that if you're trying to make friends here do not try to get a stupid coach. There is no point because these are all just crusty old men you do not need that---there's so many people on this side of Tumblr that are actually nice and we'll talk to you and give advice I promise a old man yelling at you for b!nging isnt gonna fix anything.
Then go on any of the websites online and find your daily c@l intake. If you new to r3$triction I would maybeee do 800-900 a day and work your way down. DW about everyone else f@$ting for weeks just start at like 800-900 a day
For the amount of c@ls your eating, try to make it healthy. Trust me there's a whole bunch of sweet treats that you can get for lower c@|ories then normal ones. And also you need PROTEIN. not SUGAR. (I'm kinda yelling at myself lmao I'm a sweet tooth ignore that pls)
SMOOTHIES. they are so good and you can find hundreds of recipes on the internet!!
READ THE CH|C D|3T. THIS HAS BASICALLY ALMOST EVERYTHING YOU ARE EVER GOING TO NEED. If you do not have a copy to this because basically every single physical copy ever has already been sold because the book is now banned try to find a pdf online for free there is a whole bunch of them if you look enough, but if you're being lazy you can just DM me and I will send you a copy of the Google doc. This has uhh EVERYTHING. But if you're too lazy to read the whole entire thing 100% read the one about "bars" so that way you know which protein bars to get
Speaking of protein bars make sure to always have like one or two in your bag. Just in case you end up feeling really dizzy and you're worried you're going to pass out or something I would have one in your bags that way you can urgently eat it at all times.
F@$t|ng can be good. If you can't get a all to it just used to stop watch on your phone and know that it takes 19 hours for ketosis to start AKA your body starts burning your dumbass f@t. Maybe do more research on this because I'm not 100% an expert on here so feel free to correct me people. I would start with maybe a 12 hour one and work your way up. Don't go past 72 unless ur 100% sure you'll be ok. We don't wanna pass out here that's not good for anyone.
Having a #1 th!NSP0 board or person is something that helped me- idk about you I would just go on Pinterest and look up "Wl motivation" so it doesn't flag you and find something.
MAKE MOOTS. TRUST ME #1 ADVICE HERE.
TAKE YOUR DAMN VITAMINS. No I'm not 100% on what vitamins to take here because I myself literally do not take them because I don't have access to them right now. But I know that there's a whole bunch of people who have actually good information about what kind of vitamins to take so--follow their advice not mine because I don't want to accidentally give you crappy advice
This is like really random but like don't stress if your food isn't like organic or aesthetic looking. Trust me 95% of the time fruit is fruit so if it's not some non-GMO organic fruit I promise you'll probably get almost the same health benefits or whatever from fruit (sorry people who are bitches about only eating organic don't yell at me I know it's a difference)
PVRG!NG DOES NOTHING. DO NOT START IT TRUST ME THERE IS NO BENEFITS TO IT (I'm not judging people who are struggling with it right now don't worry ik where your at I'm trying to stop pvrging rn actually I'm not shaming the m!@ people<3) Ik none of this in general is that good but trust me just thr after effects of pvrging is not worth thr half a pound and 1/6 of the ca!s you got rid of

YOUR RE-SET
So your life isn’t looking and feeling how you envisioned. You see the TikTok and IG girlies living that life. You dream about luxury travel, pilates on a Saturday morning, drinking overpriced green smoothies, driving a sexy car, and living your fullest most authentic life…But in comparison, you’ve grown to mostly hate spending time with your friends, you’ve out grown them and notice how much they complain about life and generally are low vibes, you’ve spent all of this months wages already, and still have 2 weeks left until payday so your bank balance is no way supporting the life you dream of, to add, your dating life is a mess not consisting of your dream guy that provides for you. No, instead it seems too much effort for him to message back, let alone take you to that sexy spa you’re dying to visit. So in short your life is a far cry from what you want. The life you’ve created right now is absolutely not what you would want for yourself for the next year, or even five years. So in order to completely shift from where you are to where you want to be. You need a fucking RE-SET. 
The re-set is basically your metamorphosis. Think of being the caterpillar, heavy, slow sluggish (currently you right now). In order to become a beautiful butterfly you need to completely transform, undo, take time to reorganise so you can re-emerge as nature intended. 
The Re-set might look slightly different for everyone so take what you need from this: 
2-3 months stepping back from the people around you. 
THE CORE ESSENTIALS FOR YOUR RESET - A DAILY PRACTISE  
Meditating daily to clear you mind so you can hear yourself, your own voice and drown out any external noise. (I recommend insight timer app, or mind app both for meditations)
A journal, to document your feelings and emotions, empty your thoughts, and a space where you can become your own best friend and create a connection with yourself. 
Movement. - you need to move your body this is KEY, you might pick up running, stretching at home, pilates, yoga, HIT, whatever it is just fucking do it. Your body needs the movement to replenish its energy and move you out of stagnation. 
Healthy diet. Less alcohol more greens. If it’s processed, if its fizzy, if its sugar, if its cake, if its chocolate, if its ice cream (you get the picture), cut that shit OUT. You need food that supports you, cleanses you, energises you in order to thrive and clear your energy. 
FAITH in something bigger than yourself. If you’re religious, great lean into your faith with prayer, scripture, faith music. If you’re not religious maybe you believe in the universe, the love all around you, faith in something unknown, something guiding you, protecting you, even if you believe this is part of your own psyche - lean into this. Your faith is your support system. Your faith is the unseen that will guide and protect you on this journey. 
The above might seem overwhelming, and it will be if you don’t already incorporate those things into your day already. The worst thing you want to do is try and do everything at once and feel disappointed when you don’t succeed. So start with one thing if that’s all you can manage and focus on doing that one thing consistently and then add from that. 
The purpose of the first 2-3 months is the cleansing. You want to start slowly removing what doesn’t serve you, and start creating space for yourself, your thoughts and visions so you have space to start planting new seeds of the life you want to live. 
What your first steps in your journey might look like: 
Saying no to going out for drinks with friends, instead you go for a long walks in nature listening to an empowering podcast, go home journal and meditate. 
Weekends might look like not seeing friends, maybe even family. Doing exercise, making healthy food, researching recipes, creating a vision board on Pinterest and doing a guiding meditation, affirmations and mirror work. 
Having a prayer practise, reading books/ passages that support you in your journey 
Deleting your social medias or even doing a detox day / weekend so you have a break

How would Vivien react to a darling. Who's terrified of them. ( I mean he kipnapped them what else would he do to them ? ) Darling would refuse to eat. ( what if they put something in the food ? ) They would have actual mental breakdown crying their eye out if he is to close of them or in the same room for to long.

Vivien's gonna have to calm down and be soft this time.
He really, really doesn't want you to feel scared or hurt around him, and the best way for him to make sure of that is for him to talk to you. He'll sit on the floor across from you, criss-cross-applesauce, with his hands in full view on his knees. He'll speak to you about how he saw you when you came into his shop one day, how he fell in love at first sight, and how he can't live without you. He's really sorry for kidnapping you, but he heard you were leaving town and he couldn't take that chance. He will never force himself on you, not as long as he lives, but he hopes you will stay with him.
First, he'll start with assuaging your fears, really putting some action to his words. He's perceptive, he knows you're afraid of him, and he can tell if you're afraid of anything he gives you. So, when he brings you dinner, he'll let you choose whichever plate you want and he'll eat the other one. He'll bring you snacks and water and juice in unopened bottles and packages so you're not worried he'll poison you. When he brings you fresh fruit, he'll eat from the bowl too. If you really want, he'll let you prepare dinner if you'll allow him to help. You really don't have to worry about him poisoning you; he'll taste-test anything you want.
Next, he'll start with treats. Anytime he comes home from work, he'll bring you something. Maybe a nice mango smoothie, maybe a cookie from the new place that opened up near his work, maybe a new book from the bookshop. Every couple of days, he'll bring you a new bouquet with a note explaining every flower in his scraggly handwriting. One by one, day by day, he'll win your affections.
Even if you start out being terrified of him, you'll slowly realize that he's really not that bad. If it makes you cry to be near him, he'll get up and leave the room whenever you come in. He'll do anything to make you feel better. Maybe one day you catch him singing to his plants one day before work, maybe you catch him talking through a drink recipe or bath bomb mixture. He'll always ask you if he wants your opinion on something, and usually, you have the final say on decisions. He'll always ask before holding your hand or touching you (excluding emergencies). You learn that he's soft and gentle and kind, and slowly your hate will turn to tolerance which will turn to affection.
One night, you'll be watching a movie on opposite ends of the couch, him being careful not to touch you and overstep any boundaries. He made some of his special drinks for you two, something with peach and rosemary, and it's good. He smiled like the sun when you said you liked it, and he offered to make it for you another hundred times, or even teach you how to make it yourself. Hesitantly, he said there was a concert he'd like to go to soon, if you'd be interested. Of course, you'd have to behave, he made that clear, but he said he'd like to go to more things with you. He doesn't like the thought of you being bored and lonely in the house.
Two months ago, you would've happily agreed and ran at your first possible opening. But now, you're not so sure. It's really not bad being here, and he's a great roommate. He cooks, cleans, and always apologizes when he loudly watches anime half the night. He always says if you want to go back to work in the future, you're welcome to, but otherwise he'll support you. All you have to do is stay with him. He's attractive, hot even; you've seen the evenings when he's come out of the bathroom, basketball shorts slung low enough on his hips that you can see the muscles pointing straight to his groin before he excuses himself to his bedroom to get a shirt. You try to avert your eyes in time, but you find you can't. Those perverted thoughts keep you up at night, but you find you don't care.
You could really see yourself loving him, being with him, being intimate with him.
Tentatively, your hand starts to move away from your side, over the seat cushions, and towards him. When your hand bumps against his leg, he almost convulses. He throws himself from his seat to the floor, immediately hurling himself into apologies, saying he didn't mean to touch you and he would never take advantage of you like that and he's really really really sorry. He's almost in hysterics as he tries to convince you that he wasn't trying to be creepy or anything, and you almost don't want to interrupt the adorably panicked expression on his face.
When you say that you were trying to hold his hand, he just looks at you for a second, like he didn't quite hear you properly. You say it again, and that doesn't change his look, but he does ask a soft "Are you sure? You don't have to" like he isn't expecting you to agree.
His hands are rough and calloused, but warm. In fact, all of him seems to be warm. His eyes aren't focused on the TV anymore, the only thought you can see running through his head is the word "HAND" repeating. But his thumb idly strokes your knuckles, and it feels as nice as you thought it would. He holds your hand for the whole rest of the movie, and mock-bows and gives it a second-long kiss before bed. He thanks you for the opportunity to hold your perfect hand and heads to his own room to sleep, not asking for anything more.
In the morning he is all smiles, making homemade bacon waffles and cut-up berries. He asks if you want to take a walk with him later and five minutes in, he shyly asks if he can hold your hand again. When you agree, he has to jump up and down a few times to expel some energy before he can do it, and you walk around the lake and feed the ducks some green peas Vivien keeps in his pockets.
That night, he knocks at your door, and when you open it, he shoves a small bouquet of blue and pink hydrangeas at you before running back to his own room. The card thanks you for the lovely day and asks if he may start dating you for real and if he might, and its totally cool if you say no because he won't force you it was just a suggestion, kiss you.
Yeah. You could see yourself loving this man sometime soon.

Regina George thinks a lot about Y/N. Like a lot and she talks about her a lot. After a talk with her new friends and her former girl squad, she realizes she is bisexual and that she likes Y/N!
I'm loosely incorporating lyrics from Girl Crush by Little Big Town and they will be in italics! Also - I know the song is about wanting another girl's man, but I used it differently.

Regina's POV- Saturday Afternoon
I'm on my way to see Y/N. She invited me for a sleepover. We only see each other on weekends because she goes to a different school and it's at least a 30 minute drive away. My mom and her mom don't want either of us driving on week nights. If she ever needed me on a week night though, I would go in a heartbeat.
Recently I found out I was bisexual. I used Aaron back in junior year for power and because I was a b****!!!! I can admit that to myself now. I say now as if it has been so long since it happened. It's only spring of my senior year, so like half a year.
I arrive and knock on the door. Y/N’s mom opens the door and exclaims, "Ah Regina! Good to see you, sweetheart. Y/N is in the backyard already. I can bring your bag to her room if you want to go straight out there." I reply, "Thank you. That's perfect! I'll go out back! Thanks for having me." She replies, "No problem sweetie. You girls have fun." I nod and smile.
I walk through the house, go outside to the chairs next to the pool, and sit next to Y/N, who is lost reading. She's beautiful.
I ask, "Aren't you gonna say hi to your guest?" Y/N looks up, smiles, jumps up, and hugs me. I hug her back and smile. Wow, can we hug forever? Maybe? Pls. She says, "Omg Regina! I'm so sorry! I was just so lost in my book and I lost track of time." Old me would have made fun of her for being such a nerd. New me doesn't do that. That is personal growth.
After we release from the hug, I smile at her. She smiles back and asks, "Sooo... did you wear your swimsuit and want to swim?" I answer, "Yes, and yes!" She then takes off her sundress and she's left in her bikini. My jaw drops. She's wow. Stunning, beautiful, pretty, and perfect. Y/N laughs and replies, "Regina, are you okay over there? Did my bikini leave you speechless?" Oh, she has no idea. I reply, "I ... It is actually very flattering. You look really good." Was it too obvious that I like her? She answers, "Thank you so much." I take off my dress and she says "I love your bathing suit too. Everything is better in pink." She's so sweet! Wow:) I reply, "True."
We both swim and eventually she brings two floats over, so we can both lay on them. We float around the pool and we talk about our life recently.
I get out the pool to grab some water and Y/N swims a little more.
I lie back on the pool chair and Y/N pulls herself out of the pool. Ahhh you know how people do! She places her hands on the side of the pool and pulls herself up and out of the pool letting the water fall down her body. If I didn't already have a crush on her, I would now. That song by Little Big Town goes through my head ... I got a girl crush Hate to admit it but I got a heart rush It ain't slowing down...
She walks over to the chair area and smirks at me. I want to taste her lips ...
I ask, "So what's for lunch?" ... You? She answers, "My mom's making lunch. We found this yummy summer salad recipe and we decided to have smoothies since we will need something to cool us down. Tonight's dinner is going to be so good though because it is pasta and I made dessert." I smile and reply, "Good! I look forward to it!"
Her younger brother walks outside and hands Y/N a tray of two salads + two smoothies. We thank him and he walks off.
She hands me my food and we eat together.
I ask, "Can I ask you something kind of personal?" She answers, "Go ahead." I ask, "This is just something I've been thinking about recently. How do you feel about having friends that are LGBTQ? And what is your sexual orientation?" Yeah I didn't go the subtle route. She answers, "I think everyone deserves to be with whoever they love, so I'm cool with having friends who have different preferences than me. I think it's great to surround yourself with all kinds of different people. I am bisexual actually. What about you?" I answer, "I'm bisexual or I think I am. I only just kind of discovered it, but my friends at my new school said it was obvious. I didn't know it was obvious, but I guess it was." She laughs and smiles.
We continue talking outside until we decide to shower. I take a shower in her bathroom first and when I walk in, I see her perfume. I take off the lid off, smell it, and I smile. This smell is Y/N and it's wonderful. I want to drown myself... In a bottle of her perfume...
After my shower, I throw on my matching pink pajama set and I take a teeny bit of her perfume and put it on me. I then leave the bathroom.
Y/N goes in and showers.
As she's in the bathroom, I call my friend from lacrosse named Sally.
((Start of conversation)) R- Regina S- Sally S - Hey Regina. I thought you were with you know who. What happened with that? Is it not going well? R - Hi Sally. She's in the shower right now. I don't know what to do. S - Join her. R - I already took a shower and no I'm not doing that just yet. I haven't even told her that I like her. S - OK fine. What has happened so far?" R - We hugged, swam, sunbathed, ate lunch, and each took showers. I ... I also dropped my jaw seeing her bikini and just complimented her. It was a close call. Then I asked her what her sexual orientation is and she told me that she is bisexual. I told her I was too. She smiled about it. I just don't know if I want to tell her now or later or ever. S - I ship you two. You're so into her that I'm surprised it took you forever to realize it. What else is planned for the day? R - Dinner with the family and usually we watch a movie plus Y/N made a dessert for tonight, why? S- Wow, you're already meeting the family. I'm so proud of you. R - Omg geez Sally! Not like that! Haha! S - Fine fine whatever you say. Just tell her you like her. She knows you're bi and you know she's bi. That means you have a sliver of a chance. Take that leap. R - A sliver of a chance means I could still get rejected. Okay, I'm gonna go. Thanks, Sally. S - No problem Regina. Go get your girl. ((End of conversation))
I hang up laughing.
Y/N walked back into the room near the end. I notice her outfit and it's identical pajamas to mine just in a different color. I exclaim, "Omg I love your outfit. Wow, I always forget we have matching ones and then this happens." She replies, "Goals right?!" I laugh and nod. Y/N asks, "So, who were you talking to?" I answer, "My friend, Sally." Y/N asks, "Isn't Sally your lacrosse friend?" I answer, "Yeah, she's really cool and friendly. You'd like her." She replies, "I'll have to go to one of your games this semester to meet her and of course, to support you." I ask, "Wait you'll come to my soccer games to support me?" She answers, "Of course Regina. I'm so proud of how far you've come in both soccer and personal growth this year. I have to support you! And, at least this isn't the dance you did for the talent show." I laugh and ask, "Wait you didn't like it?" She laughs, smirks, and answers, "I liked it when you were dancing and center stage, you were really good." Did she just say I was a good dancer?! I was dating Aaron Samuels at the time, but I really wanted Y/N's opinion. So she liked my dance?! She might actually like me.
Her brother knocks and lets us know dinner is ready.
We go downstairs and eat dinner with her family. It's so good!!
After dinner, we eat dessert and Y/N asks, "How do you like the dessert?" I answer, "It's literally so delicious." She replies, "Thanks. I'm glad you liked it."
After dessert, we go to Y/N's bathroom to brush our teeth. I glance over at Y/N brushing her teeth and smirk causing toothpaste to slip out of my mouth. It's like we're an old married couple in a movie. Imagine me living with Y/N forever and always being her person. That would be the life. I really like her.
We both spit our toothpaste out and Y/N asks, "What made you laugh?" I answer, "Oh nothing. It's a silly idea." I then walk out and to my bag.
When I'm done, I get on her bed and she sits down next to me. She faces me and rests her hand on my hand. Y/N exclaims, "Regina, whatever you have to say, just say it. It made you smile. I want to know what made you smile. I care. I won't call it silly. I promise." I nod and say, "As we brushed our teeth, it just reminded me of old romantic movies where married couples brush their teeth together. That's all." I glance over at her and she replies, "I think that's a cute idea, Regina." Awww. Well, do I take that sliver of a chance? I think I will.
I exclaim, "Y/N, I like you. I've liked you for a while and I just didn't realize that I liked girls until recently. And when I realized it, it all clicked and I've just had a crush on you forever. I know that makes us hanging out awkward depending on what you say back, but I really like you. I just think you're perfect and I'd love to take you out on a date." She smiles and says, "I would love to go on that date with you. I like you too." I smile and ask, "May I kiss you?" She nods and we kiss.
