The pop-up Ji Xiang Ang Ku Kueh (吉ē„„ēŗ¢é¾Ÿē²æ) stall in Sun Plaza never fails to attract us with their colourful range of kuehs. Mum picked up some Peanut Ang Ku Kuehs (front row) and Sweet Bean Ang Ku Kuehs (back row). These traditional glutinous rice snacks are sticky and soft, packed with fillings. Best eaten on the day of purchase or keep it in the fridge then steam it.

Me, I am intrigued by these blue and white lumps of glutinous rice snacks. The inside is filled with gula melaka sweetened desiccated coconut. I couldnā€™t find any information on it but the nearest I came across is Pulut Inti (Steamed Glutinous Rice with Coconut Topping). Taste wise, it is comparable but lose out on the banana leaf fragrance as it uses paper wrappers.

This Labubu doll craze is taking the whole world by storm. Even Ji Xiang Ang Ku Kueh is coming out with a set of seven Labubu Ang Ku Kuehs (S$60) with a choice of peanut, sweet bean or mixture of the two fillings. If you just want to buy one piece, it will cost you S$10.

ArrĆ²s de muntanya (meaning "mountain rice" in Catalan) is one of the many rice recipes typical of Catalan cuisine. We say "mountain rice" to mean it uses ingredients from the land (mushrooms and rabbit are to be expected, it can also have other kinds of meat and vegetables) in opposition to "sea rice" recipes which have seafood and fish.
Catalan cuisine uses many wild mushrooms. Many different species can be used with rice dishes like this. In this case, they are using a mix of different dehydrated ones, so we can make this recipe outside of mushrooms season ā˜ŗļø.

For dinner tonight, homemade congee -- savory rice porridge -- that sticks to the bone.
Homemade Congee
For 4 servings:
Congee:
1 cup [uncooked] long grain rice
4 cups bone broth [chicken or beef]
3 cups water
1 tsp. Kosher salt
Combine all the ingredients together in a small pot. Bring to a boil; simmer on the stove for at least 1-hour and cooked down to desired texture. (I donā€™t like my rice too broken down.)
Common congee seasonings include green onions, ginger, roasted peanuts, egg, pork floss and so much more. But for this recipe, I added duck to mine!
Duck Breast (the lazy air-fryer version) -- Optional:
12-ounces Moulard duck breast
1/2 teaspoon five spice
1/4 teaspoon kosher salt
1 tbsp. vegetable oil
Pat dry the skin on the duck breast with a clean paper towel. Score the skin with a crosshatch pattern. Add seasonings and oil on the skin, spreading evenly. Cook in an air fryer at 400F for 15 minutes -- the internal temperature should be around 130F. Slice before serving with congee.

#this isnā€™t about anything in particular btw. I just have to add a lot of memos when Iā€™m doing things because some things are done a certain#way and it isnā€™t explained well in the instructions. like my mom has instructions on her baking recipes right#but when it says stuff like add dry ingredients to wet ingredients it also means you donā€™t dump it in one go you add it slowly by portion#this is probably why I find videos and demonstrations the most helpful when I learn something. like I almost always ask someone to show me#how they do it because there could be something they do thatā€™s already second nature and wouldnā€™t really be considered in an explanation yk#I donā€™t think Iā€™m an exception either. when the rice is done cooking I divide it into 4 quarters to bless it#but there are a million ways to divide rice and it makes me think that one persons way of doing it or not doing it all is just as valid#theres also technically no wrong way to divide rice afaik. this means either all ways of dividing rice is safe or valid until we find some#universally terrible way of dividing rice. until that happens nobody really thinks about specifying HOW you divide the rice#source: I have anxiety starting and doing things for the first time because I got way too many people yell at me NONONO WHAT ARE YOU DOING#THATS WRONG while Iā€™m in the middle of doing the thing. I would rather have people think Iā€™m either very stupid or overly specific#than go thru the panic inducing fear of ā€˜YOURE DOING THIS WRONG OMG WHY DIDNT YOU ASK AHEAD OF TIME THIS WILL BE FUCKED UP FOREVERā€™ šŸ§#nothing wrong if you donā€™t give something a second thought because youā€™re so used to it. but I can and will ask about it and I donā€™t think I#really should feel bad about it if I donā€™t know enough to dispute it. idk#the other way around I try to be as specific as possible and word things in a way that people who might not get where Iā€™m coming from will#understand. but the problem with that is my explanations tend to be lengthy and I lose them either way šŸ—æ#Im. trying to work on that using examples and stuff because they seem to work the best#but if I could write everything down on a word doc and beam it into your melon that would save both of us time and embarassment#im rambling the short version is I have adhd#yapping

Oven-baked rice (arrĆ²s al forn), one of the most popular Valencian dishes. It's made of rice with tomato, botifarra de ceba (Valencian sausage made with pork blood and onion), potato, chickpeas, bacon, pork ribs, and garlic.
This recipe is found already in Medieval cooking books, proving that back then it was a very popular recipe in all the Catalan Countries (including the Valencian Country, the Balearic Islands, and Catalonia). Nowadays this dish is not eaten in Catalonia, and in the Balearic Islands it has derived in a dish called arrĆ²s de la terra (land rice), which despite its name is not made with rice anymore -like it was in its origin- but with bulgur. Meanwhile, arrĆ²s al forn continues being very popular in the Valencian Country.
