Ingredients
Couscous – ½ Cup
Onion – ½ thinly sliced
Carrot – ½ finely chopped
Green peas – ¼ cup
Oil – 2 Tsp
Ginger garlic paste – ½ tsp
Red chilli powder – ¼ tsp
Garam masala – ¼ tsp
Bay leaf – 1
Clove – 1-2 no.
Cinnamon – ½ inch stick
Mint – few
Coriander – few chopped for garnishing
Salt to taste
Method
Heat oil in a heavy bottomed pan. Add cinnamon stick, cloves, bay leaf and saute for a few seconds.
Add sliced onions and cook until they become soft and transparent.
Add ginger garlic paste and saute for 2 minutes.
Add vegetables, red chili powder, coriander powder, garam masala powder, salt and saute for 5 minutes more.
Add 1 cup of water and allow the mixture to boil. One the water starts boiling, add mint leaves and couscous.
Simmer the flame and cook until the water is completely absorbed. If couscous is not yet cooked, add ¼ cup of hot water.
Garnish with chopped coriander and it is ready to be served.
