Diwali – the festival of lights, enjoyment, and celebration, is around the corner. No Diwali celebration is complete without sweets and savory. This festive season let’s look at some of the famous and popular sweets and snacks from different parts of the country that you need to add to your basket.
Karanji/Gujiya:
One of the best-known traditional sweets of Maharashtra, Karanji (or referred to as ‘Gujiya’ in Uttar Pradesh) is a sweet deep-fried dumpling made with Maida and stuffed with a sweet and succulent filling of coconut, semolina, spices, and nuts.
Kaju Katli:
Kaju Katli is one of the most famous sweets in North India which serves most gifting purposes right, during Diwali. Rich in taste and almost loved by everyone, Kaju Katli is made using cashews and sugar syrup. You can serve alongside savories such as Chivda, Namkeen, Mathri or Chakli.
Mohanthal:

Khasta Methi Mathri, flaky and crispy Mathris with flavourful Methi or Fenugreek Leaves. A very popular tea time snack from North India.
Mathri a crispy, flaky, savory deep fried snack from North India best enjoyed with a cup of Chai with some pickle or chutney. It is an anytime snack, loved by kids and grown ups alike. Mathri or Matthi as popularly called in Western Uttar Pradesh is made with All-purpose flour or Whole Wheat flour, Semolina and spices like ajwain or caraway seeds, neiglla seeds and black pepper.
Khastha Mathri are made especially made in Northern India during the festivals like Diwali and Holi when lot of guests come to visit. Mathris along with other festive snacks like Gujjiya,Chivda are served along with tea other refreshments. During this time people make big batches at home or buy from sweet shops which are loaded with so many varieties of festive snacks.
There are many versions of making these crispy Khastha Mathri . Many like to add pickle masala for the extra flavour (Achari Mathri) or dried fenugreek leaves and even fresh coriander leaves for masala mathri.
For my version of Masala Mathri I have used fresh Fenugreek leaves along with spices. Dried fenugreek leaves are usually used for making Methi Mathri. But I had got 2-3 fresh bunches of fenugreek from Indian store here, and since many times for months I do not see this leafy green vegetable, I immediately bought 2-3 bunches.
One bunch I used in making Methi Parantha, one I cleaned and kept for using it after 2-3 days to use in vegetables like Gajar Aloo Methi ki Subzi or Aloo Methi and from the 3rd bunch I made these flavourful extra crispy and flaky Khastha Methi Mathris.
Benefits of Fresh Fenugreek Leaves
Whenever it is available I love to use fresh fenugreek in my cooking. This leafy green herb is one of the richest source of iron, purify blood, lower sugar levels. These are also rich source of antioxidants and minerals.
Fenugreek herb is native to Indian Sub-continent especially in North India and is available in winters. It is widely used in Indian cuisine and ayurvedic medicine.
Methi in Cooking
Many people do not like the strong bitter flavour of these leaves. But I love to use it in my cooking. Side vegetables like Gajar Aloo Methi Ki Subzi, snacks like onion bhajia(onion fritters), Makkai aur Methi Vada(Cornmeal and Fenugreek fritters), Methi pooris(deep fried puffed Indian flatbread) or Methi Malai Matar(vegetarian creamy curry with peas and fenugreek leaves). Fortunately my kids too do not make any fuss while having any of methi dishes. Whenever travelling if fresh fenugreek leaves are available I always pack Methi Thepla . Kids love to take Methi Parantha or Thepla or with cream cheese dip or this sweet and sour mango chutney.

How to make Khasta Methi Mathri
Coming back to Khastha Methi Mathri, I made these with whole Wheat flour(Atta), Semolina(Sooji). Ajwain or carawy seeds and nigella seeds(kalonji) with black pepper and fennel seeds flavour these crispy deep fried biscuits.
Tips to Make Crispy Mathri
The main trick to get the flaky and crispy mathri is to bind the flour with oil or ghee. I used oil to make these this time, you can also use desi ghee. It gives a more flaky texture.
Dough should be firm and smooth and should be kept for 20 at least 10-15 minutes.
Please Note.. If you are using fresh fenugreek leaves do not leave the dough for longer time as due to salt in dough, fresh leaves may leave water and dough will become loose, that will spoil the texture of mathri.
Also do not fry Mathris in very hot oil. It should be medium warm so that mathris are fried to a nice crispy texture.
Cool Mathri completely before store in an air-tight container.
Let’s see how to make Khastha Methi Mathri
Clean methi/fenugreek leaves. Separate soft methi leaves from thick stem.
Wash fresh fenugreek leaves very nicely in running water. Clean all the dirt that sticks to the leaves and stems.
Leave the leaves in a colander or seive so that extra water drips away.
Take Flours(Whole Wheat Flour, Semolina in a mixing bowl.
Mix in seeds(caraway seeds, neiglla seeds), crushed black pepper, fennel seeds and salt.
Add oil to the flour and rub it nicely with fingers till the flour resembles bread crumbs and comes together as shown in pic below when taken in fist.

Add very finely chopped fenugreek leaves. You can use Kasuri methi also in case you do not have fresh fenugreek leaves. Pls see recipe card for details.
Knead to a soft but firm dough using cold water.
Leave it covered for 10 minutes.
Divide dough into small lemon sized portion, flatten with hand a bit. Refer to the pic below.

Shape all the dough portions this way. Meanwhile heat oil for frying on medium flame.
Drop a small portion of dough, It should sizzle and rise slowly.
Drop a bunch of dough portions for frying and fry till golden brown.
Take out on an absorbent paper.
Do make these crispy flaky biscuits for anytime snacking, kids lunchbox or to serve with tea. These can be stored well for around 15 days.

Deepawali is the festival of light, new hopes, and celebrations. It is, of course, the favorite and most awaited time of the year for most of us. In a country like India, no festival is completed without scrumptious delicacies.
Be it savor snacks, main courses or desserts, they gear up zeal and excitement of every celebration. With Diwali on its way, here is the list of such delectable and healthy dishes, from starters to lip-smacking desserts.
Spinach Paneer Cutlet
Spinach paneer cutlets
Servings-4
Ingredients
Paneer- 250 gram, grated
Spinach- 1 bundle, blanched and drained
Ginger- finely chopped, 1 tbsp
Garlic paste- 1 tsp
Green chilies- finely chopped, 1 Tsp
Coriander powder- 1 tbsp
Cumin seed powder- 1 Tsp
Boiled potato-1, small
Suji- 4 tbsp
Salt- to taste
Onion- finely chopped, 1 small
Oil- 2 tbsp
Method of Preparation
In a pan, add 1 tbsp of oil and add ginger, garlic and green chilies and saute for few seconds.
Now, add finely chopped and blanched spinach with spices and heat till the spinach is cooked well.
Take out the ingredients off the pan in a bowl and add grated paneer with boiled potatoes.
Divide the mixture into equal small balls in tikki form.
Drizzle oil onto a pan and shallow fry the cutlets till crispy brown on both sides.
Hot and crunchy cutlets are ready to serve with ketchup or green chutney.
Baked Mathri

Servings– 4-6
Ingredients
Whole wheat flour- 1 cup
Semolina- ½ cup
Kasuri methi- 2 tbsp
Cracked pepper- 1 tsp
Cumin powder- 1 tsp
Ghee- ¼ cup
Salt- to taste
Method of Preparation
Add all the dry ingredients in a bowl.
Now, add ghee and mix well till it imparts the crumbled, sandy texture.
Afterward, slowly add water and knead until it makes a soft dough.
Preheat the oven at 180℃.
Divide the dough and spread the dough into a sheet. Shape them into any desired pattern.
Place onto baking tray and sprinkle any herb (as per preference) and place in oven for 5-7 minutes.
Flip in between and bake for another 7-8 minutes.
Once baked, take it out and let it cool. After that, it can be stored in airtight containers.
Dal Dhokla
dal dhokla
Servings-4
Ingredients-
Moong dal- without skin, ½ cup
Chana dal- without skin, ½ cup
Masoor dal- ½ cup
Curd- ½ cup
Asafoetida- ¼ tsp
Turmeric powder- ½ tsp
Ginger paste- ½ tsp
Mustard seeds- 1 tsp
Green chilies- 3-4, slit and halved
Salt- to taste
Oil- 2 tsp
Method of Preparation
Soak all the dals for at least 4-5 hours or overnight.
Place them together in a grinder and grind till a thick paste is obtained.
In a large bowl, mix the dal paste with turmeric powder, asafoetida, curd, and salt.
Oil the dhokla stand or tin trays and pour the batter and keep into the steamer with the lid closed.
Let it steam for 10 minutes on high heat flame.
After 10 minutes, take out the tray and let it cool.
Cut it into any desired shape and garnish it with the tempering of mustard seeds and green chilies.
Serve dal dhokla hot with green chutney.

Ingredients
Paneer- 500 gram, cubed and shallow fried till light brown
Ginger paste- 1 tsp
Garlic paste- 1 tsp
Green chilies- 3-4, slit
Hung curd- ½ cup
Turmeric powder- 1 Tsp
Coriander powder- ½ tsp
Garam masala- ½ tsp
Cumin seeds- 1 tsp

Method of Preparation
Heat the oil in a pan and add bay leaves with cumin seeds.
Now, add ginger and garlic paste and saute till they are golden brown.
Once they are cooked, add all the spices, hung curd and green chilies.
Stir fry them till they are cooked.
Once the fat separation occurs, now add fried paneer and cook on medium heat for 10-12 minutes.
Piping hot and creamy curry is ready to serve with tandoori roti or naan for best taste.
Baked Mixed Dal Kachori

Servings- 4
Ingredients
Whole wheat flour- 2 ½ cups
Besan- 1 cup
Suji- 3 tbsp
Salt- as per taste
Urad dal- ½ cup
Moong dal- 1 cup
Chana dal- ½ cup
Ginger- ½ tsp, finely chopped
Garlic- ½ tsp, crushed
Cumin seeds- ½ tsp
Hing powder- a pinch
Saunf- ½ tsp
Coriander powder- ½ tsp
Garam masala- ½ tsp
Oil- For dough formation and baking
Method of Preparation
Mix whole wheat flour, besan, suji and oil in a bowl. Add water and make dough out of it.
Keep it aside and let it rest for some time.
Preheat the oven at 180℃.
Soak dals overnight and put it in the blender with ginger, garlic, cumin seeds, Hing, coriander powder, garam masala, and salt. Blend till it becomes a coarse paste.
Now, add 2 tsp oil in a pan and put dal paste into it. Roast till it becomes golden brown. Set it aside to cool.
Now, put small balls from the dough and put dal filling into it. Flatten it with rolling pin.
Grease the baking tray with oil, place the kachoris over the tray and brush them with oil. Place it in the oven at 200℃ and bake about 10-15 minutes. Check in between till it becomes golden brown.
Hot and scrumptious kachoris are ready to eat with green chutney or aloo ki bhaji.

Servings– 4
Ingredients
Yogurt- 3 cups
Warm milk- ½ cup
Saffron- few strands
Powdered sugar- 4 tbsp
Cardamon powder- a pinch
Almonds- 10-12, finely chopped
Pistachios- 10-12, finely chopped
Method of Preparation
Soak the saffron strands in 1 tablespoon of warm milk and keep aside.
Mix yogurt, milk, sugar, and cardamom powder together in a blender and blend little.
Now, add saffron milk and ice cubes and blend some well.
Pour chilled in glasses and garnish it with slivered almonds and pistachios.
Sweet Kesar lassi is ready to relish.
Multigrain Laddoos

Servings- 4
Ingredients
Ragi flour- ½ cup
Bajra flour- ¼ cup
Whole wheat flour- ½ cup
Besan- ¼ cup
Flaxseeds- ¼ cup
Sesame seeds- ¼ cup
Jaggery- ½ cup
Desi ghee- 2 tbsp
Cardamom powder- ½ tsp
Roasted almonds- 10-12, coarsely chopped
Method of Preparation
Heat ghee in a heavy-bottomed pan and roast all the flours with proper mixing. Stir occasionally till it turns light brown with the aroma.
Melt jaggery with water in a pan. You can filter it as well to remove impurities if any.
Boil the jaggery syrup till it gets a thick consistency. For that, in a bowl, take water and dip a few drops of syrup. If on cooling, it forms a softball, the syrup is ready.
Now, mix flour into the syrup little by little and mix rapidly till no lumps are left.
Add nuts to the mixture.
Make laddoo sized balls as per the desired size while it is hot.
Store it in air-tight containers.

Be it savor snacks, main courses or desserts, they gear up zeal and excitement of every celebration. With Diwali on its way, here is the list of such delectable and healthy dishes, from starters to lip-smacking desserts.
Spinach Paneer Cutlet

Servings-4
Ingredients
Paneer- 250 gram, grated
Spinach- 1 bundle, blanched and drained
Ginger- finely chopped, 1 tbsp
Garlic paste- 1 tsp
Green chilies- finely chopped, 1 Tsp
Coriander powder- 1 tbsp
Cumin seed powder- 1 Tsp
Boiled potato-1, small
Suji- 4 tbsp
Salt- to taste
Onion- finely chopped, 1 small
Oil- 2 tbsp
Method of Preparation
In a pan, add 1 tbsp of oil and add ginger, garlic and green chilies and saute for few seconds.
Now, add finely chopped and blanched spinach with spices and heat till the spinach is cooked well.
Take out the ingredients off the pan in a bowl and add grated paneer with boiled potatoes.
Divide the mixture into equal small balls in tikki form.
Drizzle oil onto a pan and shallow fry the cutlets till crispy brown on both sides.
Hot and crunchy cutlets are ready to serve with ketchup or green chutney.
Baked Mathri

Servings– 4-6
Ingredients
Whole wheat flour- 1 cup
Semolina- ½ cup
Kasuri methi- 2 tbsp
Cracked pepper- 1 tsp
Cumin powder- 1 tsp
Ghee- ¼ cup
Salt- to taste
Method of Preparation
Add all the dry ingredients in a bowl.
Now, add ghee and mix well till it imparts the crumbled, sandy texture.
Afterward, slowly add water and knead until it makes a soft dough.
Preheat the oven at 180℃.
Divide the dough and spread the dough into a sheet. Shape them into any desired pattern.
Place onto baking tray and sprinkle any herb (as per preference) and place in oven for 5-7 minutes.
Flip in between and bake for another 7-8 minutes.
Once baked, take it out and let it cool. After that, it can be stored in airtight containers.
Dal Dhokla

Servings-4
Ingredients-
Moong dal- without skin, ½ cup
Chana dal- without skin, ½ cup
Masoor dal- ½ cup
Curd- ½ cup
Asafoetida- ¼ tsp
Turmeric powder- ½ tsp
Ginger paste- ½ tsp
Mustard seeds- 1 tsp
Green chilies- 3-4, slit and halved
Salt- to taste
Oil- 2 tsp
Method of Preparation
Soak all the dals for at least 4-5 hours or overnight.
Place them together in a grinder and grind till a thick paste is obtained.
In a large bowl, mix the dal paste with turmeric powder, asafoetida, curd, and salt.
Oil the dhokla stand or tin trays and pour the batter and keep into the steamer with the lid closed.
Let it steam for 10 minutes on high heat flame.
After 10 minutes, take out the tray and let it cool.
Cut it into any desired shape and garnish it with the tempering of mustard seeds and green chilies.
Serve dal dhokla hot with green chutney.
Paneer Curry with Hung Curd Gravy

Paneer- 500 gram, cubed and shallow fried till light brown
Ginger paste- 1 tsp
Garlic paste- 1 tsp
Green chilies- 3-4, slit

Cumin seeds- 1 tsp
Oil- 1 tbsp
