Indulge in the creamy richness of this vegan pumpkin cheesecake with a decadent gingersnap pecan crust. Perfect for fall gatherings or any occasion, this dessert will impress vegans and non-vegans alike with its luscious texture and spiced pumpkin flavor.
Ingredients: 2 cups raw pecans. 1 1/2 cups gingersnap cookies vegan-friendly. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 cup raw cashews, soaked for 4-6 hours or overnight. 1 can 15 oz pumpkin puree. 1/2 cup coconut cream. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 2 teaspoons vanilla extract. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cloves. Pinch of salt.
Instructions: Preheat oven to 350F 175C. In a food processor, pulse pecans, gingersnap cookies, maple syrup, and melted coconut oil until finely ground and sticks together. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake crust for 10 minutes, then set aside to cool. In a high-speed blender, blend soaked cashews, pumpkin puree, coconut cream, maple syrup, melted coconut oil, vanilla extract, spices, and salt until smooth and creamy. Pour the pumpkin cheesecake mixture over the cooled crust. Smooth the top with a spatula. Refrigerate the cheesecake for at least 4 hours or until set. Once set, carefully remove the cheesecake from the springform pan. Slice and serve chilled. Enjoy your delicious vegan pumpkin cheesecake!

These rich and creamy Pumpkin Cheesecake Swirled Brownies are the perfect mix of rich chocolate and pumpkin cheesecake. A delicious treat for fall parties or whenever you want a sweet treat!
Ingredients: 1/2 cup pumpkin puree. 1/4 cup cream cheese, softened. 1/4 cup sugar. 1 egg. 1/2 teaspoon vanilla extract. 1/4 cup unsalted butter. 1/2 cup semisweet chocolate chips. 1/2 cup granulated sugar. 2 large eggs. 1/2 teaspoon vanilla extract. 1/4 cup all-purpose flour. 1/4 cup cocoa powder. 1/4 teaspoon salt.
Instructions: Warm the oven up to 175F 350C. A 8x8-inch baking pan should be greased. Put pumpkin puree, softened cream cheese, 1/4 cup sugar, 1 egg, and 1/2 teaspoon vanilla extract in a small bowl. Mix the ingredients together until the mixture is smooth. Put away. Using 30-second bursts to stir, melt the chocolate chips and butter in a bowl that can go in the microwave. In a different bowl, mix the granulated sugar, two eggs, and half a teaspoon of vanilla extract with a whisk. Add the melted chocolate mixture and mix it in well. Mix the flour, cocoa powder, and salt into the chocolate mixture until they are just combined. Spread the chocolate batter out evenly in the baking pan that has been prepared. Put small amounts of the pumpkin cheesecake mix on top of the chocolate batter. Mix the two mixtures together with a knife. In a hot oven, bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out with a few moist crumbs on it. Before cutting the brownies into squares, let them cool all the way in the pan.

Whip the heavy cream in a different bowl until stiff peaks form. Add the whipped cream slowly to the pumpkin mixture and mix it well. Put graham cracker crumbs, pumpkin cheesecake mixture, and caramel sauce in serving glasses or bowls. Add more layers until the glasses are full, and then put a dollop of the pumpkin cheesecake mixture on top to finish. The parfaits should have chopped pecans on top of them. Put it in the fridge for at least two hours before you serve it. Add more graham cracker crumbs and a drizzle of caramel sauce on top before serving.

Slowly add the eggs, making sure to mix well after each one. Heavy cream should be stirred in until it is fully mixed in. After the gingersnap crust has cooled, pour the pumpkin cheesecake filling into it. Put it in the oven for 35 to 40 minutes, or until the edges are set but the middle still moves a little. Take out of the oven and let cool all the way down. Put it in the fridge for at least four hours or overnight before you serve it. If you want, you can serve tart slices with whipped cream.

hello its me again.
yeah today i feel better, not overwhelmed with my own thoughts and the past. today a sucker from past texted me and another guy asked for my number. i replied the sucker and still not replied to another guy. i'm kinda afraid to like someone new but i also feel ready to another failed relationship lol. i finally understood, my personality is doomed to have failed relationships, i know its because im ugly. so i know all my relationships will fail and this fact doesn't hurt me anymore, because this fenotype is, i was born this way. im ugly so what can i do right ?
other than that it was a calm day mentally. i worked and eat and now drinking coffee outside and doing my stuff. so all sounds good. got over the biggest heartbreak ever, he's not valuable to me anymore. and not feeling in need of someone anymore. so all good. i'm reading schopenhauer's book about happiness. he says " the best way is to have the least amount of pain possible" and i think he's right. so im trying to avoid pain, avoiding hard decisions, trying to chosse simple and easy things. which causes me less trouble and pain. a good life is a life with the least suffering as possible. i believe that. i will work on having an easy and no-suffer life from now on so at least it be bearable.
im eating a pumpkin cheesecake in tchibo now. their cheesecake is normally the best but this one is mehh.
