A Portuguese Cognac Cake Recipe
Tumblr media
I have no idea where I got it from, all I have is this clipping. It's funny how synthetically explained. it is.
As I said in my previous post, I feel Christmas time relates with sweet alchohol, liquors, spices, caramels, aromatic pastes...all that stuff that warms the body and the soul. So here's the translation:
5 eggs 300grs sugar 300grs flour 150grs butter 30ml cognac toasted almonds fresh butter to taste fruit jam to taste Melt the butter, add the flour little by little and then the egg yolks already mixed with the sugar; after everything is well mixed, pour in the cognac and whip. Finally, gently mix the egg whites beaten in stiff peaks. Bake in a mold greased with butter and sprinkled with flour. When finished, spread with the fruit jam and cover with the toasted almonds.

Courgette and Pea Frittata (Vegetarian)
Tumblr media
This tasty Courgette and Pea Frittata, fragrant with herbs and nicely spicy, makes a simple yet hearty dinner. Happy Thursday!
Ingredients (serves 4):
4 tablespoons olive oil
1 onion
1 fluffy sprig fresh oregano
1 small fluffy sprig fresh rosemary
4 medium leaves Garden Sage
1/3 red chili pepper
1/2 courgette, rinsed
1 cup frozen green peas
1/2 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
7 large eggs
a pinch of salt and freshly cracked black pepper
Heat 2 tablespoons in the olive oil in a large, oven-proof frying pan or skillet over medium-high heat.
Peel and finely chop onion. Add to the skillet, and fry, a couple of minutes.
Finely chop oregano, both leaves and stalks. Remove rosemary leaves from their stalk, and chop them finely. Chop Garden Sage, too.
Add chopped herbs to the skillet, and fry, another couple of minutes.
Thinly slice red chili pepper, and add to the skillet. Cook, 1 minute.
Dice courgette, and stir into the skillet. Cook, about 3 minutes, before stirring in frozen green peas. Cook, 3 minutes more until softened. Season with fleur de sel and black pepper.
Preheat oven to 160°C/320°F.
Break the eggs in a medium bowl. Whisk energetically until well-blended. Season with a pinch of salt and pepper, and whisk again, to mix.
Add remaining olive oil to the peas and courgette in the skillet.
Once hot, pour the egg mixture over the vegetables. Cook, about 3 to 4 minutes, until just set at the bottom; then, place in the middle of the hot oven.
Bake at 160°C/320°F, for 15 minutes until nicely set on top.
Serve Courgette and Pea Frittata warm, with dressed lettuce.

Food #003: Battered cod & Portuguese (Nando's) rice
Tumblr media
MADE: 26 MAR 2023
The reason behind this pairing is that I was craving fish and chips—but:
Fish and chips in local restaurants here is insanely overpriced
Chips are not exactly the healthiest choice
The fish was what I was craving anyway
The solution, therefore, was making the damned fish myself... so I did. Plus, I saw an article saying that battered fish went well with spicy rice. It was an epiphany—I did love Nando's rice when I tried it on my latest trip to Canada. So I armed myself with this recipe and this recipe for the rice, as well as the door stopper that is the Complete America's Test Kitchen Cookbook for the fish (a book recommended by my American friends, and ngl the recipes I tried so far are pretty good).
Changes I introduced:
(rice) 1 TEASPOON turmeric instead of 1 tablespoon good lord, I wanna taste some rice among all the yellow (btw rice I used is basmati)
(rice) more paprika because I don't have chili powder, only flakes
(rice) one chopped tomato on top of all the other veggies, because why the hell not
(fish) using sparkling water instead of beer, because there's no place for beer in this house 😾 (more seriously, I know beer batter is traditional, but alcohol is one of my strongest food aversions, and beer is easily the worst offender I can think of)
Eating a bit of fish that fell off while I cut it, I wasn't totally convinced. And then, I actually started eating. It was so good. Extremely messy to cook (mmmm oil flying everywhere), but just. So. Damn. Good. And the rice too, rice is pretty addictive 🙃
10/10 would recommend.
Oh, and don't be cheap with the fish. Fresh, quality fish is really what makes it imo.

Must-Eat while touring Algarve, Portugal
I’ve never devoted a blog about food at any of my destinations traveled before, but was so impressed with the Algarve food that couldn’t skip this one. You will regret it if you don’t pay special attention to the Algarve must-eat meals. I even overcame my prejudices and allergy threats by dipping into South Portuguese cuisine with exotic sauces, gourmet bites, traditional culinary, and…
