Lmao. i could have just successfully completed thee most demanding series of tasks at work, saved a bunch of babies + nuns from a burning building on my lunch break, fixed a longtime family relationship that was irretrievably broken, and not missed a single run or swim all week long
but when i get home and wanna cook something i been thinking about all day long, and find im completely out of some basic ass ingredients …. i feel like a complete failure at being an adult

Beef ’n Rice Enchilada

Chef’s Note: Okay, so it’s messy to try and roll, and they stick together, but they do taste so good
Ingredients
1 package (5.6 oz) Spanish rice mix
1 tbsp unsalted butter
2 cups water
1 can (14.5 oz) diced tomatoes (regular or with diced chilies)
1 red bell pepper, chopped small
1 pound ground beef
2 cans (10 oz, each) enchilada sauce, divided
10 medium (8-inch) flour tortillas, warmed
~ 1 2/3 cups shredded cheddar cheese
(opt.) Chopped fresh cilantro, for topping
Sour cream, for topping
Refried beans, for side
Instructions
0. Chop red bell pepper
1. Prepare rice mix according to package directions using butter, water, and diced tomatoes.
2. Meanwhile, in a large skillet, cook beef and red bell pepper over medium heat until beef is no longer pink. Crumble meat and drain.
3. Into meat, stir Spanish rice and 1 can enchilada sauce. Taste and adjusting seasoning if necessary 
4. Start preheating the oven to 350°F.
5. Drizzle some enchilada sauce in the bottom of an ungreased 9x13-inch baking dish
6. Spoon about 2/3 cup beef mixture down the center of each tortilla. Top each with 1 tablespoon cheese; roll up and place in the baking dish. 
7. Top with the remaining beef mix, enchilada sauce, and cheese.
8. Bake, uncovered until the cheese is melted, 20-25 minutes.
9. If desired, serve topped with cilantro and sour cream, and a side of refried beans

red lentil dahl
(double the recipe for a big serving that can be frozen)
150g red lentils (this will be enough even though it looks small)
Half an onion
carrot
1 garlic
Ginger
Half tbsp oil
Half tsp turmeric
Half can diced tomatoes
lots of pak choy
400ml coconut milk
1 cup vegetable broth
rice
Vegan sour cream
ripe mango
maple syrup
optional: curry powder, mustard, lemon or lime juice, chillis or red pepper flakes, coconut sugar, vegetables on the side like broccoli
METHOD:
Dice the onion, cut the carrot into as small pieces as possible, cut up the chilli, while soaking the lentils
Open the cans of lentils and coconut milk
in a large pot or skillet, heat oil over medium heat
boil kettle for vege broth, make vege broth
Add onion and saute until soft, add carrot
Add garlic and ginger, cook until fragrant
Add turmeric and red pepper flakes, curry powder, mustard,
Add lentils, diced tomatoes, pak choy, chilli, half can coconut milk, vegetable broth, coconut sugar
Bring to boil, then reduce heat and simmer on a LOW heat for 25 minutes, stirring occasionally to make sure the lentils don't stick to the saucepan
cook some rice (long grain white rice, 20 mins to cook)
add lemon or lime juice
combine ripe mango with coconut milk, sour cream, lime juice and maple syrup
Serve with cooked rice, vegan sour cream, mango lassi
