#I made this!#ingredients include: butter. cumin seeds. ground cumin. garlic granules#curry powder. katsu curry granules (they were in the Aldi middle isle. I mainly put them in because they have a thickening agent in)#1 red pepper. lots of carrot. 1 huge onion. 2 veg stock cubes#oh and 1 orange’s worth of zest#it was nice#kinda wish I had a handheld blender to make it smooth but it was nice anyway#I meant to put in potatoes too but my pot wasn’t big enough#soup#cooking

#homemade chili plus oven fries and shredded nacho cheese plus green onion and sour cream 😋#my chili has lean ground beef plus mini peppers plus black beans and kidney beans#it turned out really good despite only having cumin and seasoning salt on hand#but i also added black pepper and red chilli and oops forgot about the diced onion and garlic salt#wish we had plain paprika so i could have skipped the seasoning salt and used more paprika powder#also i used canned tomato paste instead of crushed tomatoes but it was actually better i think. turned out sweeter since i simmered it 1h

i am slow cooking the most delicious of concoctions in the kitchen rn
(my tags are so long lol whole half ass recipe down there)
#idk its some bastardized recipe for something called mongolian beef#well can it really be called bastardized when i actually fuckin improved it#like all there was originally was fucking soy sauce garlic brown sugar and onion#LITERALLY NO SEASONING#so i took my earned skills and actuallly made it good#the sauce is now flavorful and doesnt taste like garlic soywater#(the meat gets slow cooked in the sauce thats how i know how the sauce tastes)#added a teeny bit of mustard powder and cumin(half TBsp) added some ginger and onion powder(TBsp) and upgraded garlic to black garlic(TB)#it contained 1/2 cup of soy and 1/3 cup of Brown sugar#also replaced the water with beef broth(half cup)#theres also some oil(i did reg Veggie oil cause i dont like Sesame/ 1TB)#you serve ontop some seasoned/fried rice and mixed peppers/veggies thatve been lightly seasoned and fried in a skillet#the meat(1 1/4 Lb.) gets cleaned and sliced into strips#you leave the strips in a heavy salt solution to leach it/tenderize it(you can use other methods but this was what i had on hand) then rins#(you leave it in the solution for ATLEAST 30 minutes)#pat the strips down dry and using a 1/4 cup of Corn starch you coat the strips entirely#you then put the meat into your sauce and stir it around until the meat is entirely covered in it#then slow cook for however long you want(im doing 8 hours for some REAL tender shit)#alot of these measurements were eyed balled (except starch and liquids)[im skilled at this]#i will update yall once ive tasted the finished product#i went a little light on the seasoning but i dont have certain ingredients i want/can obtain so i had to make do(plus my parents cant shiit#DO NOT ADD EXTRA SALT TO THE DISH#leaching the meat and the soy sauce already has enough salt content#THE STARCH IS NECESSARY PART OF THE DISH#you can achieve black garlic by slow cooking regular garlic FOR WEEKS#longer = better#also i recommend using minced Ginger instead of powder for better flavour

Mexican Rice
Makes: ~3 quarts
Ingredients
3 Tbsp vegetable oil
2 carrots, peeled and cut into rounds
1 green bell pepper, diced
1 red bell pepper, diced
1 small yellow onion, chopped (~ 1 cup)
3 garlic clove, minced
2 cup long-grain rice, rinsed and drained
2 Tbsp tomato paste
2 1/2 cup chicken broth
1 can (10 oz) fire roasted diced tomato with diced chilies
8 oz tomato sauce
1 Tbsp chili powder
1 tsp Kosher salt
3/4 tsp ground cumin
1/2 tsp dried oregano
Instructions
1. In a large saucepan over medium heat, heat oil. Add carrots, bell peppers, onion, and garlic. Cook, stirring frequently, until onions have become translucent, about 5 minutes.
2. Add rice and tomato paste. Cook, stirring, until grains are toasted, 2 to 3 minutes.
3. Pour in broth, diced tomatoes, and tomato sauce. Season with chili powder, salt, cumin, and oregano.
4. Bring to a boil. Cover and reduce heat to low. Simmer until rice is cooked through and liquid is absorbed, stirring occasionally, about 17 minutes.
5. Serve warm

i made korean tacos for dinner (no recipe just vibes + what i had in the fridge) and they were unbelievably delicious. my god.
#with a lil hazy ipa on the side!!!!!!#i forgot how EASY and GOOD tacos are to just have fun with.#for the curious: i picked up some stir fry beef at the store and while i chopped cilantro/onion/radish/cukes i let it sit in a combo of:#gochujang + fish sauce + rice vinegar (a dash) + garlic + chili powder + cumin + black pepper + salt + lime juice + onion powder#(just a bunch of stuff i had laying around - use what you have or can get)#then after the veggies were chopped and ready to go i tossed all the meat in a wok and cooked it up#THEN after pulling out the meat i threw a couple tortillas in the wok one at a time and sprinkled some cheese on one side to melt and get#a lil crispy...and also mixed some mayo + sriracha into a sauce for drizzling#(i would've used sour cream instead of mayo if i'd had any but mine was bad T-T)#also i'm out if kimchi or i would've put that on top too. god that would've been so good. i'm kinda mad abt it#anyway then i filled the tortillas with the meat + cilantro + onion + cucumber + radish and drizzled on some sauce.#divine. transcendent. revelatory.#i absolutely love how well korean (honestly a lot of different asian) seasonings and flavor profiles pair with mexican foods and flavors.#CULINARY SYNERGY!!!!#i know this is not a new observation but it still brings me joy every time i remember#anyway fair warning i like spicy food so this is spicy. obviously.
