[Begin recording.] Hey there. Back at this weird pizza… mall… thing with the robots. For some reason it’s always night when I show up here? Not sure why. I bet it’s awesome when it’s actually open, but time seems to move weirdly while I’m here. The robots seem pretty cool with me being here, as long as I’m cooking. I don’t mind— since they can eat (for some reason?) they’re a pretty good audience. I’ll probably head back to the weird computer world soon… but later. The robots want me to go bowling. See you! This dish was delicious, if not totally immersive to FNAF (though I could see this being served at the Pizzaplex, since it’s more akin to a Dave and Buster’s than a Chuck-e-Cheese). Since my family is plant-based, I decided to give it a shot, since this is one of the few recipes in the cookbook that needs no substitutions. It was a lot of work— between all of the vegetables and frying the tofu and roasting the chickpeas, I did all of it manually. But it was SO worth it. I didn’t include the broccoli (because I don’t care for it and had already chopped up 5 radishes, a red onion, and a zucchini) but it wasn’t missed. Solid meal, and it was fun to prepare!

Fresh strawberries, a couple scoops of ice cream, and whipped cream with sprinkles. Really, impossible to go wrong with. And it didn’t go wrong here! I don’t have much to say about this shake, really— it was delicious and really, really easy to prep. My only complaint is that it called for chia seeds…. 1 tablespoon of chia seeds…
We now have a… very large… bag of chia seeds. Please give me suggestions for foods you can make with chia seeds. I think we’ll be working through that bag for awhile. I’m not even sure what it even added to the shake… but honestly, it definitely fits with the Pizzaplex vibe. Chia seeds are just… they sound healthy while not really adding much in terms of taste.
Seriously, though. I need chia seed use ideas.

A very simple, classic buddha bowl that I chose to make for an on your own night this week. I'm honestly surprised that I haven't made this one before, but sometimes these simpler bowl recipes aren't always a priority for me, so this was a welcome venture!
I made roughly a third of this, but went ahead and made my chickpeas in full so that I could use the leftovers on my lunch salads.
This took me a bit longer than I thought it would, namely because I'm still getting reused to how long the oven here takes to heat up. The chickpeas and dressing were basically done before my sweet potatoes and red onion even made it in the oven. I do think I could have cooked all the veggies for a little bit longer, but at that point, I was ready to eat, so I just went ahead and took them out.
Overall, this was unsurprisingly delicious, simple and classic, as I said before, but super yummy. That tahini dressing is indeed to die for. I'm really not a huge broccolini fan, so I wouldn't say I'd trip over myself to make this again, but it was a great meal regardless!

Vegan Buddha Bowl
I recently re made this salad and it is just so good, I was scraping at my bowl as I finished this. So this is an original recipe I had to put back on the blog.
Ingredients
Salad Blend
half a red cabbage 1 cup of kale 1 jalapeño 1-2 garlic cloves 1-2 green onions a splash of olive oil (or sesame oil) salt to taste pepper to taste half of a lemon juice Lentils 1 cup of red lentils 2 nori sheets shredded 1 tbsp of miso paste 1 tsp of smoked paprika The Sauce 2 tsp of gochujang paste 1 tsp of miso paste 1/2 tsp of garlic 1/2 tsp of ginger 1 tsp of soy sauce 2 tbsp of maple syrup splash of hot water Oyster Mushrooms and Jackfruit 1 package of oyster mushrooms 1 can of jackfruit half of the sauce
Instructions
1.) cook 1 cup of quinoa and put to the side. 2.) chop up all the vegetables for your salad blend and then massage all ingredients together in a big bowl and then set aside. 3.) cook 1 cup of lentils with along with the following ingredients as listed above in your pot and then set aside. 4.) make sauce and then use half of it and put into the oyster mushroom and jackfruit combination in a skillet (make sure to rinse and strain jackfruit). 5.) assemble bowl and add fresh chopped cilantro on top as well as the remaining sauce from earlier.

Buddha bowls - these are fun because you put whatever you like in these. I followed a basic recipe of using rice, chicken, raw veggies and roasted veggies, topped with pickled onion and roasted chickpeas. For the sauce I used soy vay teriyaki and a sweet Thai sauce.
Its was a lot of prep work. Lots of chopping and roasting. But worth the effort.
For raw veggies I sliced carrots and cabbage very thin.
For cooked veggies I pan fried Trader Joe’s power greens.
For roasted veggies I roasted carrots.
I also roasted chickpeas to try to get them crispy as a topper. They were good but not crispy enough.
I bought cooked chicken and pan fried it in a bit of oil and seasonings.
Picked onions are quite easy but again there’s the prep work of slicing onions thin and boiling water, vinegar and sugar. Lots of online recipes for amounts.
I was really happy with this combo.
