10 Years of Sandwiches
The Tribunal has been writing about sandwiches for 10 years now, and if we've learned anything, it's to eat more sandwiches!
10 years ago today, on August 21, 2014, I registered the domain sandwichtribunal.com. We went to St. Lawrence Market again, only this time we decided to get some actual food!



We went to Paddington’s Pump, the only full-service/sit-down restaurant in the market, and it lived up to the promises of generous portions and friendly service. I went with their famous peameal bacon sandwich with cheddar (as recommended by my server), while M opted for the Montreal-style smoked meat sandwich, which is like pastrami but a little saltier. Both were really damn good, and it always makes me so happy when a tourist-friendly spot lives up to the hype and delivers a satisfying meal.








I did a quick spin around the main market level to take photos after our lunch, definitely influenced by seeing the market featured in the promotional material for the latest season of Top Chef that’s set in Canada.

National Canadian Bacon Day
For meat lovers, there’s not much that is better than good old slices of yummy bacon! In sandwiches, fried up on a breakfast plate, served in pancakes, even served with syrup – bacon is the meat candy of the world and has more than its fair share of dedicated fans!
But, then, there are different kinds of bacon to enjoy in different capacities– and one of them is Canadian bacon, as it is known in the United States.
Many people think that Canadian bacon is a little more like ham than actual bacon, because of the way it is served. Made from back bacon and formed into a cylindrical shape, this type of meat is sold ready to eat.
History of National Canadian Bacon Day
According to rumor, Canadian bacon may have once upon a time been known as ‘peameal bacon’. This is because the ham was prepared with brine and then rolled in ground-up dried yellow peas that would extend the meat’s shelf life. The versatility of the product led to it being quite popular and useful, especially for those who were in a hurry to prepare a meaty meal.
Today, Canadian bacon is still cured, but it is usually rolled in yellow cornmeal instead of the dried yellow peas. But the composition of the savory treat remains the same – cut from the loin and served unsmoked in thick, circular slices. This is a leaner cut of pork than standard bacon, making it a slightly healthier choice for those trying to cut down on the amount of fat they eat.
If you were to go to Canada and ask for Canadian bacon, you might be met with a few confused looks. In Canada, it is usually known instead as ‘back bacon’, or simply ‘ham’. If you just asked for bacon in Canada, you would likely receive the same streaky pork belly slices that you’d be used to in the United States.

B&B, Bulking boys
Konig, Soap & Ghost- Fluffy? Non canon, pretend Konigs in 141, Proof read!! Part 2 soon
You owned a large b&b that military men have found themselves in every time they return home from a mission together, their own little tradition of spending time together.
You knew they’d smoke and drink despite your clear rules, But they were mature men and always made sure to take care of the space so you didn’t give it much mind.
You’d never learnt their real names, But they’d refer to each other as Ghost, Konig & Soap.
You’d always supply the men with breakfast each morning, 7:20 sharp. Before they’d leave for the gym, but today was different.
The usual tray of 4 bacon strips, one sunny side up egg, scrambled for Soap, and a quarter cup of hash browns was left outside each bedroom door on the upstairs of the building, and twenty minutes later the men would come down and leave for the gym.
But they didn’t leave this morning, all three of them made themselves comfortable in the common living room. “Don’t you three have somewhere to be?” You asked kindly, looking up from your book. it took a moment for the man sat in the lazy boy to speak up, “It’s bulking season las, we’ve got nowhere to be other than the kitchen.” He spoke, the Scottish one, Soap. “Ah.” You responded.
You of course took this into account the next morning, and placed three new dishes out side of the men’s rooms for breakfast, 2 pieces of Peameal(Canadian) bacon, 2 eggs on toast, and some shredded chicken on a wrap with lettuce.
Of course making all this food took longer then the usual, so it was 7:26 when you placed the last tray, seeing the tallest man open his door to retrieve his food, Konig.
He looked down at the tray, and over to you, “Trying something new?” He asked, you hesitantly nodded. “It won’t affect your price sir, I just figured you boys would need a bit more food to start your mornings.” You said with a smile, He grinned.

An alcoholic Cocktail made of, Vodka, Clamato (Primarily Tomato Juice and Clam broth with seasoning) hot sauce, Worcestershire sauce. Rim is coated in Celery Salt.
Basically like a bloody Mary but what distinguishes it from that is the Clam Broth.

American bacon or Canadian bacon? 🥓
Depends on the recipe used, or the lack of recipe.
Peameal bacon can be cooked as a roast, and then sliced to make sandwiches, it's more akin to a pork roast than bacon.
Bacon however, can be used in many dishes, on a sandwich, hotdog and so on.
If I'm on a diet however, peameal over bacon.

Jack 'Whiskey' Daniels! I'd squirrel him away to a cabin in the Canadian Rockies and make French toast and peameal bacon. Why?
