Pasta Primavera

Pasta Primavera is a lovely Italian dish showcasing lots of sparkling greens mixed with pasta. Here’s a recipe for Pasta Primavera:

Ingredients:

12 ounces (340g) pasta (linguine, spaghetti, fettuccine, or any pasta of your choice)

2 tablespoons olive oil

three cloves’ of garlic, minced

1 small onion, thinly sliced

2 cups mixed vegetables (together with bell peppers, broccoli florets, cherry tomatoes, carrots, zucchini, peas, and so forth.), sliced or chopped

Salt and pepper to taste

half cup heavy cream (or substitute with 1/2-and-half of coconut cream for a lighter choice)

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh basil or parsley, chopped (for garnish)

Optional: Red pepper flakes for heat, lemon zest for brightness

Instructions:

Cook Pasta: Cook the pasta in a big pot of salted boiling water according to the bundle commands until it is al dente. Drain the pasta, bring about half a cup of pasta water, and set aside.

Prepare Vegetables: While the pasta is cooking, warmth olive oil in a large skillet or pan over medium heat. Add the minced garlic and sliced onion, and sauté for 1-2 minutes till fragrant.

Add Vegetables: Add the blended vegetables to the skillet. Cook and stir sometimes for 5-7 mins or until the veggies are tender-crisp. Season with salt and pepper to flavor. If using peas or cherry tomatoes, upload them closer to the top of cooking to maintain their freshness.

Combine Pasta and Vegetables: Add the cooked pasta to the skillet with the veggies. Toss the whole lot collectively, permitting the flavors to mix.

Add Cream and Cheese: Pour inside the heavy cream (or opportunity) and grated Parmesan cheese. Stir lightly to coat the pasta and vegetables. If the sauce seems too thick, you can upload a bit of the reserved pasta water to loosen it.

Adjust Seasoning: Taste and alter the seasoning if wished. Add more salt, pepper, or purple pepper flakes for warmth if favored. Squeeze a bit of lemon juice or add lemon zest for a hint of brightness.

Garnish and Serve: Remove from warmth and garnish the Pasta Primavera with chopped sparkling basil or parsley. Serve hot, with greater Parmesan cheese on the facet if favored.
