1/2 cup grated Parmesan cheese (plus extra for serving)
Fresh basil or parsley, chopped (for garnish)
Optional: Red pepper flakes for heat, lemon zest for brightness
Instructions:
Cook Pasta: Cook the pasta in a big pot of salted boiling water according to the bundle commands until it is al dente. Drain the pasta, bring about half a cup of pasta water, and set aside.
Prepare Vegetables: While the pasta is cooking, warmth olive oil in a large skillet or pan over medium heat. Add the minced garlic and sliced onion, and sauté for 1-2 minutes till fragrant.
Add Vegetables: Add the blended vegetables to the skillet. Cook and stir sometimes for 5-7 mins or until the veggies are tender-crisp. Season with salt and pepper to flavor. If using peas or cherry tomatoes, upload them closer to the top of cooking to maintain their freshness.
Combine Pasta and Vegetables: Add the cooked pasta to the skillet with the veggies. Toss the whole lot collectively, permitting the flavors to mix.
Add Cream and Cheese: Pour inside the heavy cream (or opportunity) and grated Parmesan cheese. Stir lightly to coat the pasta and vegetables. If the sauce seems too thick, you can upload a bit of the reserved pasta water to loosen it.
