I’m more than happy to oblige with the recipe! So fair warning. My recipe starts off with “5 gallons heavy cream” so I’ve tried to scale it back and write out a recipe for a home cook. The nice thing about this sauce is if you cool completely before freezing then reheat over a low heat with continuous stirring, it freezes super nicely.
where is really starts is when we sear off our duck breast so we can use the fond (the golden brown amazing stuff in the bottom of the pan) to add flavor. To substitute this, honestly a bouillon cube crushed and mixed in a little water works.
to the Pan (with or without your fond/fond substitute) add two tablespoons butter and 3-5 large cloves minced garlic until the garlic becomes fragrant in the pan over medium heat. Then add in ~1/2 teaspoons of dried oregano, basil, thyme or a heaping teaspoon of Italian seasoning. (I prefer dry to fresh here tbh)
Once everything is fragrant, add 3/4 cup roughly chopped sun dried tomatoes (I prefer the ones not in oil but if you do get them, drain and pat to dry, discard oil) a teaspoon of tomato paste (optional unless you want to bring out the tomato flavor a lot) 1 cup chicken broth, 2/3 cup heavy cream (or half and half if that’s what you have but it won’t taste as rich) and 3/4 cup grated Parmesan cheese. Stir to combine and taste, add a few cranks/shakes of black pepper-or if you’re feeling good, crushed red pepper. Bring mixture to a boil then make sure to gently stir, watching so the pan does not over boil and scraping the bottom so nothing gets burnt.
once thickened enough to coat the back of a spoon, lower heat to simmer and add a little more parm (1/4 cupish) to stir in for a final sticky sauce. Taste again and season with salt and pepper if needed.
while this is all happening, boil your pasta to just before al dente and remove from water and drain. Combine in sauce and cook on simmer for one more minute or until desired texture. We plate in a shallow bowl with a lemon garlic salmon on top.
if you really want to just make your eyes roll, throw some finely minced shallot or white onion in there too right after the garlic and cook until translucent.

Side can be whatever, I suggest small red potatoes and or a salad, but I just roasted some canned russet potatoes and broccoli

We got two swordfish steaks for cheap and I made them for dinner with broccolini and roasted carrots and… the swordfish was underwhelming. It was fine, an interesting experience all in all.
The flavor is just so mild and the texture isn’t very fishlike at all. I think it’s a good fish for people who have money to blow and don’t like fish. I would just get salmon though, or cod if I want a white fish that’s a lil pricier.
I was pleased with how the texture came out compared to what they were describing. It was super easy to make—seared on one side, flipped and tossed pan and all into a hot oven. After it was done, drizzled with a few spoonfuls of lemon butter sauce. I seasoned it lightly��salt, pepper, garlic, a touch of chipotle powder—because we’d never had it before and wanted to taste the fish itself. I regret that lol.
