The percentages are based on averages and companies looking for loopholes to bring down the percentage or calorie count.
But so much we know about nutrition is thanks to the intentional starvation (sometimes to death) of indigenous children in residential schools so not scientific, scientists were barely involved (if at all), with a good dose of child torture and genocide. I reiterate that much of the foundational knowledge is from children. Children's metabolisms and bodies are different than adults'.
BMI is also bogus as it's an average and generic and doesn't account for build, height, muscle, or exercise. Too many people freak out because their BMI puts them at overweight so they exercise more and build even more muscle.
Muscle weighs more than fat so it becomes a vicious cycle that not everyone survives.
i'm not a doctor or a nutritionist, but sometimes i hear women talking about their diets and it takes all i have to not be like "this is not normal. you have an eating disorder and you are in a cult."
