A Hearty Bowl of Porridge
Nothing translates quite literally to a warm hug than the first generous spoonful, hot and creamy, from A Hearty Bowl of Porridge! I do eat oats for breakfast all the year around, but I must say I have a special fondness for oatmeal in the Winter, when it's cold and grey outside and I can hunker down in bed with a book or a radio programme and enjoy it as the treat it is! Sometimes, I'll have my oats rather plaine, other times, I'll make them indulgent or decadent, even! So, take a look at the sky, and choose accordingly!

Rice Porridge (that is also for adults)!
PREP TIME: 5 minutes
COOK TIME: 30 minutes
TOTAL TIME: 35 minutes
SERVINGS: 6
Ingredients:
1 cup (220g) sushi, jasmine, or white rice, cooked
1 tablespoon sesame oil OR extra virgin olive oil
1/2 pound lean ground beef
1/2 cup (70g) finely chopped yellow onion
2 teaspoons garlic, minced
1/2 cup (70g) finely chopped zucchini
1/2 cup (70g) finely chopped carrots
1/2 cup (15g) finely chopped kale OR spinach
4 cups water or low-sodium broth of choice
Instructions:
In a large pot add 1 tablespoon sesame oil. Add beef and cook over medium high heat for 2-3 minutes, breaking up large clumps, until no longer pink.
Add onion and garlic and cook for 2-3 minutes.
Add strained rice and cook for 3-4 minutes over medium heat, stirring frequently to prevent it from sticking to the bottom of the pan.
Add the rest of the vegetables and stir for about a minute or so.
Pour 4 cups of water into pot and bring to a boil. Lower heat to medium low and cook, stirring occasionally, for about 15-20 minutes. Be sure to keep scraping the bottom of the pot to prevent rice from sticking.
At this point, you can add more water if thinner consistency is desired.
Optional: Add a drizzle of sesame oil, or season to taste with salt and pepper, or add a splash of soy sauce.
Notes:
Leftover porridge can be stored in an airtight container for up to 5 days. The longer it sits, the thicker it gets. Reheat in the microwave or on the stovetop. Stir in a little water to loosen it up, if necessary.
Can also be frozen for up to 3 months. Thaw in the fridge overnight.

Pine nut porridge
Jatjuk 잣죽
Ingredients
Serves 2
½ cup short grain rice (aka sushi rice) soaked in cold water for 1 hour
¼ cup pine nuts, rinsed and drained
3 cups water
½ teaspoon kosher salt
2 large jujubes and several pine nuts for garnish (optional)
Directions
Drain the soaked rice and add it to your blender. Add the pine nuts and water. Blend for 1 to 2 minutes until smooth and milky.
Transfer it to a medium heavy pot on the stove. Turn on the heat to medium high heat.
Cook for about 5 minutes, stirring with a wooden spoon, until bubbles pop up and it gets thick.
Add the salt and keep stirring for about 1 minute, until the porridge gets thinner and semi-translucent.
Transfer it to a bowl and add the jujube garnish (if used) to the top of the porridge. Serve immediately, while it’s hot.
