Jaggery Appam (Coconut Milk Pancakes with Jaggery)
Jaggery Appam is a delicious and sweet variation of the classic Nei Appam, featuring a rich jaggery flavor. This sweet dish is enjoyed by many especially in South India mainly during festivals. Do try out this amazing recipe and let me know in the comments.

Ingredients:
1 cup rice, soaked overnight
1/4 cup coconut milk
1/4 cup water
1/4 cup grated coconut
1/4 teaspoon fenugreek seeds
1/4 teaspoon cardamom powder
1/4 teaspoon turmeric powder
1/4 teaspoon salt
1/4 cup jaggery, grated
1/4 cup clarified butter (ghee)
Instructions:
Grind the batter: Grind the soaked rice, coconut milk, water, grated coconut, fenugreek seeds, cardamom powder, turmeric powder, salt, and jaggery into a smooth batter.
Ferment: Let the batter ferment in a warm place for 4-6 hours, or overnight.
Cook: Heat a non-stick pan or appam pan over medium heat. Pour a ladleful of batter into each well or onto the pan. Swirl the batter to create a thin, lacy pattern.
Cook: Cook until golden brown on both sides, and the edges are crisp.
