This was my first time trying this cream spinach recipe... Turned out so well! Was really tasty ๐Ÿ˜ first i made a white sauce using @floraheartsa vegan margerine, almond milk and @natureschoicesa chickpea flour. In another pan i fried onion, garlic, turmeric, spinach, grated carrots and small cubes of butternut. I fried everything until it was nearly cooked, then i add the white sauce and allowed to simmer for about 20mins. I served the cream spinach/carrots with extra crispy roast potatoes. CRANBERRY QUINOA GRANOLA ๐Ÿ‘Œ . Nutty Crunchy Nutritious & Delicious . Want the recipe? Here is my simple and easy to make Granola recipe. It's perfect for a quick breakfast or as a healthy topping for those puddings ๐Ÿ˜‹ . INGREDIENTS 1/4 dried cranberries 1 cup G/F oats 1/2 cup white quinoa 2 cups mixed nuts chopped (almonds & cashews) 1 tbsp coconut sugar Pinch salt 3 1/2 tbsp coconut oil 1 1/2 tsp cinnamon 1 tsp vanilla extract 1/4 cup maple syrup __ Preheat oven to 170ยฐC. Add quinoa, oats, nuts, coconut sugar, salt and cinnamon to a large bowl - stir to combine. In a small pan, add the coconut oil and maple syrup to a medium heat for 3 mins - whisk until totally combined. Turn off the heat and whisk in the vanilla extract. Immediately pour over the dry ingredients and stir to combine until all is thoroughly coated. Spread over a large baking sheet into an even layer. Bake for 15mins. Remove from oven and toss. Turn the baking sheet around and bake for a further 5 - 10 mins. Watch carefully until granola is a golden brown. Let it cool completely before adding in the cranberries. GLUTEN-FREE BANANA BREAD ๐ŸŒ What do you do with a bunch of very ripe bananas?? You make Banana bread!! Now this recipe is actually inspired by the wonderful @minimalistbaker because I absolutely LOVE all her recipes! ๐Ÿ˜ I think this has to be my favourite banana bread I have ever made...even better than the ones I used to make as a child that were full of gluten...that's saying something (gluten-free things can be yummy too! ๐Ÿ˜). If you are feeling for some Banana bread, give this a try or save it for later โ˜„ - 6 small very ripe bananas - 1 egg/flax egg - 3 Tbsp maple syrup/honey - 1 tsp vanilla - 3/4 Cup milk of your choice - 3 Tbsp melted coconut oil - 2 Tsp stevia granules - 3 1/2 baking powder - pinch of Himalayan salt - 2 Tsp cinnamon - 1 cup gluten-free oats - 1 cup almond flour - 1 1/2 cup @natureschoicesa gluten-free self raising flour Preheat the oven to 180ยฐ degrees Celcius. Mash the banana in a large bowl then add all the ingredients except for the dry ingredients. Whisk until well blended. In a separate bowl mix the dry ingredients together then add it to the wet mix through a sieve. Stir in the ingredients then add it too a greased loaf tin. Bake for 45mins. What to do with overly ripe bananas?? Make banana bread or muffins of course!! ๐ŸŒ๐ŸŒ I try not to waste any food, so even Naartjie skins can be put to good use. I had to share with you my SWEET CITRUS BANANA MUFFINS.... INGREDIENTS: - 2 over ripe bananas - 3 eggs - 1 tsp vanilla extract - 1 cup @natureschoicesa coconut flour - 1 cup @natureschoicesa gluten-free self raising flour - 1 tsp baking soda - 1/2 Tsp cinnamon - 2 Tsp Naartjie zest - 1/2 cup almond milk - 1/2 cup coconut @crede_natural_oils - 1/4 cup & 1 tbsp maple syrup Preheat the oven to 180 degrees Celcius. Mix all the dry ingredients together In a large bowl. Then separately blend bananas until smooth. Add the rest of the wet ingredients and mix together. Pour the wet into the dry and whisk together. The consistency shouldn't be too thick or runny. Spoon into a muffin tray and bake for 34 to 36mins. Sundays are for PANCAKES ๐Ÿ˜... and of course they are protein pancakes! ๐Ÿ’ชโœ”// Pancakes: โ€ข 2 1/2 scoops @usnsa Vanilla Whey โ€ข 2 tbsp @natureschoicesa gluten-free oats โ€ข 4 egg white . Topping: โ€ข 1 Tsp @ohmega_nutbutters cashew butter โ€ข 1/2 Tsp @rawlicioustribe Mesquite powder โ€ข 5 drops stevie โ€ข tbsp water โ€ข Handful of berries . Blend pancake ingredients together until smooth and cook on a low heat.
