COCONUT CHOC CHIA PUDDING π₯₯ . This pudding is full of delicious chocolate, caramel and coconut flavours. It's Refined sugar free, dairy free and gluten free! How yum is that!? π . Want the recipe?? Here it is π . [Choc layer] 1/4 cup chia seeds 3 tsp vegan hot chocolate @naturalhealthwarehouse 1 1/2 cup water/almond milk . [Coconut layer] 1/4 cup chia seeds 1/2 tsp vanilla extract 1 1/4 cup coconut milk . [Caramel layer] 13 mejool dates 1 tsp vanilla extract 2 tbsp coconut oil 30ml + 3 tbsp almond milk 1/2 tsp vegan hot chocolate Mix the ingredients for the coconut layer in a bowl, refrigerate for 3 hours/overnight. Repeat for the choc layer. To make the caramel. Blend all the ingredients in a high powered blender until smooth and creamy. A few spoonfuls at a time, push the mixture through a fine sieve to remove the skins from the mejool dates. The end result should be a thick and creamy caramel sauce. Layer the 2 chia mixtures, add half a chopped @nanukichocolate bar, spread on the caramel layer and top with the remaining @nanukichocolate bar and some coconut shavings @naturalhealthwarehouse . EASY & CREAMY HUMMUS π For those afternoon snacks or a delicious topping for a dinner salad. You can't go wrong with this recipe! . Ingredients: - 1 tin chickpeas - 3 garlic cloves (crushed with skins removed) - 1/3 cup organic plain yoghurt - 3 tbsp fresh lemon juice - 1/4 cup fresh cilantro herbs - 3/4 tsp salt - 3/4 tsp ground pepper - 1 dash of Cantina Mexican from @naturalhealthwarehouse . Rinse and drain the chickpeas then gently remove as much of the skins as possible - this allows for a smoother consistency. Add the chickpeas to a food processor or a powerful blender along with all the ingredients (except the salt). Blend until creamy and smooth, scraping down the sides as necessary. Blend and taste, adjust flavour as desired by adding the salt for more saltiness and more lemon juice for more acidity. If the hummus is took thick, add water or yogurt until desired consistency. Tropical lunch for today as I'm just in love with papaya and all things coconut π₯₯ Some days I like to full my plate with fruit, and sometimes make it a little fancy like adding some coconut chia pudding, nuts and coconut shavings. Papaya is excellent for improving digestion and is super delicious when filled with coconut chia pudding π All it takes is 1/4 cup chia seeds, 1 & 1/4 cup coconut milk, 1 tsp vanilla extract. I didn't use any sweetener as it wasn't needed because papaya is sweet enough for me. But feel free to add in a little maple syrup for some extra sweetness. Then top with your favourite toppings and extra fruit. GLUTEN FREE FUDGY BROWNIES.... Chocolate anything is a literally my fav besides for caramel flavors ππ Pair that yummy with a slice of Gluten-free banana bread, berries and a cup of tea - it's just too delish! These brownies are topped with some delicious coconut caramel sauce and frozen raspberries. The raspberries tie it all together. Here's the recipe: BROWNIE - 3/4 cup butter/coconut oil - 3/4 cup coconut sugar - 1 tsp vanilla extract - 3 large eggs - 1/2 cocoa - 1/2 cup almond flour - 1/4 cup dark chocolate chips CARAMEL SAUCE - 1/4 cup coconut sugar - 1/4 cup coconut milk - 2 tsp coconut yogurt - 1/2 tsp vanilla extract - 1/2 tsp caramel extract - Pinch of Himalayan salt - pinch salt *The ingredients used are from @naturalhealthwarehouse @crede_natural_oils and @yokos_za 1. Preheat oven to 160Β° C. Grease and line a square dish with baking paper. 2. For the brownies; In a large bowl, gently whisk the butter/coconut oil with the coconut sugar together. Add the vanilla extract and stir. 3. Add the eggs, one at a time, mixing well in-between, then sift in the cocoa and almond flour. Mix until combined the fold in the chocolate chips. 4. Pour the batter into the dish and place into the oven. Bake for 20 to 25mins. 5. For the caramel sauce; In small pot, mix the coconut sugar and coconut milk on a medium heat. Once the sugar is dissolved and the salt. Stir until the thickens. 6. Once it has thickened slightly, take off the heat and add the vanilla and caramel extract. Mix in and add the coconut yoghurt (you can add more or less depending on what you like. Drizzle the brownies with sauce and top with raspberries. Yummy and energizing CHOC PEANUT BITES π I'm a lover of chocolate and medjool dates, combined with some natural peanut butter it's a winning combination. Medjool dates are amazing for energy and promoting good digestive health. Not only that, but it's high in potassium and fiber. These bites are the perfect snack for an energy pick up, plus they taste delicious so try not to eat them all at once. Moderation is key ππ __ INGREDIENTS: - 8 medjool dates soaked overnight in 60ml water - 2 tbsp natural peanut butter - 1 tbsp coconut oil - 2 tsp chia seeds - 9 Tbsp almond flour - 1/4 cup chopped dark chocolate chips 1. Blend the dates with the water and coconut oil until smooth then add the peanut butter and continue to blend until combined. 2. Add the rest of the ingredients and continue to blend (or mix with a wooden spoon) until combined and slightly firm. The consistency should not be too wet or too dry. But firm enough to roll gently between your hands. 3. Roll some in crushed nuts or extra chocolate if you please. BANANA CHOC CHIP MUG CAKE π I used to make mug cakes allll the time! Sometimes I'd make multiple times a week. I'm a huge lover of them because they are super quick to make and so simple. They never fail to satisfy my sweet tooth when I'm looking for a healthy treat. Bananas are really great to add to your diet, they are full of potassium, high in fiber, a powerhouse of nutrients and a natural sweetener. CRANBERRY QUINOA GRANOLA π . Nutty Crunchy Nutritious & Delicious . Want the recipe? Here is my simple and easy to make Granola recipe. It's perfect for a quick breakfast or as a healthy topping for those puddings π . INGREDIENTS 1/4 dried cranberries 1 cup G/F oats 1/2 cup white quinoa 2 cups mixed nuts chopped (almonds & cashews) 1 tbsp coconut sugar Pinch salt 3 1/2 tbsp coconut oil 1 1/2 tsp cinnamon 1 tsp vanilla extract 1/4 cup maple syrup __ Preheat oven to 170Β°C. Add quinoa, oats, nuts, coconut sugar, salt and cinnamon to a large bowl - stir to combine. In a small pan, add the coconut oil and maple syrup to a medium heat for 3 mins - whisk until totally combined. Turn off the heat and whisk in the vanilla extract. Immediately pour over the dry ingredients and stir to combine until all is thoroughly coated. Spread over a large baking sheet into an even layer. Bake for 15mins. Remove from oven and toss. Turn the baking sheet around and bake for a further 5 - 10 mins. Watch carefully until granola is a golden brown. Let it cool completely before adding in the cranberries. CHOC-CHIP PEANUT BUTTER BALLS π« Last week I did an amazing giveaway with @bantingblvd where I created a few treats with their premixes. One of them, was these to die for CHOC-CHIP peanut butter balls. So I thought I'd share the recipe so that you could enjoy it too! Plus they can be turned into something else (read the bottom of this postπ) β’ 1 packet @bantingblvd No bake almond Chia balls Premix β’ 2 tbps coconut oil @crede_natural_oils β’ 2 tbsp peanut butter @ohmega_nutbutters β’ 2 tbsp warm water β’ 2 tbsp organic maple syrup β’ 1/2 slab of @woolworths_sa Belgium dark chocolate sugar free (chopped) 1. Mix all the ingredients together except for the Chocolate until well combined. 2. Add the Chocolate and mix gently into the mixture. 3.
