Anchovy and Tomato Pasta Salad

This simple yet tasty Anchovy and Tomato Pasta Salad makes good use of leftovers, and is perfect for a picnic or to go on adventures! Happy Saturday!

Ingredients (serves 1):

1 cup leftover cooked whole-wheat pasta (such as penne, rotini or farfalle)

1 ripe tomato, rinsed

half a dozen slices Pickled Cucumbers

2 large leaves fresh lettuce, rinsed and spin-dried

2 large anchovies, kept in oil

1/2 tablespoon olive oil

1/2 tablespoon Modena Balsamic Vinegar

Parmesan

Spoon pasta in a medium bowl.

Dice tomato, and add to the bowl, along with Pickled Cucumbers.

Chop lettuce and anchovies, and add to the bowl as well.

Drizzle with olive oil and Balsamic Vinegar, and toss gently, to combine.

Serve Anchovy and Tomato Pasta Salad, with a few Parmesan shavings on top.

It seemed so up-to-date when I first saw Reston in 1965! Unlike much architecture of that now long gone era, this building has aged fairly well, on the exterior at least.

Cúpula, Catedral de Sta Maria la Real de la Almudena, Madrid, 2016.

Among my least favorite buildings in Spain, the cathedral is a modern confection pushed toward completion when Franco was dictator. The building was started in 1883 but not finished until 1992 long after Franco's death. It is a mish-mash of styles with excessive decoration both inside and out.
