ME SAY OMNOMNOM: Pumpkin/spice cake muffins

1 box Duncan Hines or Betty Crocker spice cake mix

1 can pumpkin puree - 15oz

That's it. That's the post.

Optional add-ins:

1 teaspoon or more pumpkin pie spice

Bittersweet or semisweet chocolate chips

Pecan or walnut pieces

Topping suggestions:

Pecan or plain streusel

Brown sugar

Chocolate glaze

Cream cheese frosting

Instructions:

Preheat your oven to 350°F.

Line a muffin pan with cupcake liners.

Add the pie spice to the dry cake mix if you're using it, then add the pumpkin.

Stir in pumpkin until combined.

Add chocolate chips or nuts if using and commbine.

Fill the cupcake liners 3/4 full.

If you're using streusel or brown sugar, then sprinkle it on top and press it lightly into the batter.

Bake for 20 to 25 minutes or until a toothpick test comes out clean.

Let the muffins cool in the pan for a few minutes, then transfer to a cooling rack. Let them cool all the way before frosting or glazing. This recipe also works in a cake or loaf pan.
