Maple Miso Scones
3 cups all-purpose flour
1/2 cup organic brown sugar
1 tbsp baking powder
1/2 tsp sea salt
1 cup cold vegan butter
1/2 cup soy milk
1/4 cup pure maple syrup
2 tbsp miso paste
1 tbsp maple extract
1 tbsp vanilla extract
In a large glass mixing bowl, sift together the; AP flour, brown sugar, baking powder, and sea salt. Cut the cold butter into the dry ingredients and use your hands to fully incorporate.
Place the; soy milk, maple syrup, miso paste, maple extract, and vanilla extract into a blender and blend until no lumps remain. Pour the wet ingredients into the dry ingredients and stir until everything is fully incorporated.
Please batter in the fridge while you preheat the oven.
Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
Remove batter from fridge. Using a 1/3 cup measurement, form approximately 12 balls. Flatten each ball gently to form discs. Place discs on lined cookie sheets. Sprinkle each disc with a touch of raw cane sugar. Bake in preheated oven for 12-15 minutes.
Allow to cool for a few minutes before serving.
Ideal served with Maple Miso Butter.
Maple Miso Butter
1 cup vegan butter
1/4 cup organic brown sugar
1/4 cup pure maple syrup
2 tbsp miso paste
1 tsp pure vanilla extract
Whip all of ingredients together in a blender. Serve with scones.

A new roasted parsnips recipe! Just felt like a good time to try something a little new for one of my lunch salads.
I roughly quartered this using olive oil and slicing into smaller strips (parsnips are hard to cut evenly, especially at length). 20 minutes in the oven would have better than the full 25 I gave it, but a little char is something I can certainly handle.
The glazed mixed with the hot, freshly roasted strips beautifully, making for a superbly flavorful addition to my lunch salad.
