Had to make this Yummy Potato & Leeks soup today! 😋 We had our first snowfall of the Season, and temps were definitely perfect for this soup! 🥣 What I like to do though, is change it to my liking! I tweak it and add a few extras here and there! Come on, who else does this with their recipes? 🙋‍♀️ Here’s the original recipe I got from one of my emails from Eating Well Daily Nosh @eatingwell • 4 leeks (white parts only), cleaned and thinly sliced (about 4 cups) • 2 tablespoons olive oil Bertolli Rich Taste Extra Virgin Olive Oil 8.5 Fl Oz

• 5 cloves garlic, chopped • 1 tablespoon chopped fresh thyme • ¾ teaspoon salt • 6 cups no-salt-added vegetable broth • 2 pounds russet potatoes, peeled and cubed • 1 pound small red potatoes, cubed • ½ teaspoon ground pepper • 2 tablespoons chopped fresh chives Preparation • • Prep

55 m • Cook leeks and oil in a large heavy pot over medium-high heat, covered and stirring occasionally, until the leeks are slightly tender, 5 to 6 minutes. Stir in garlic, thyme and salt; reduce heat to medium and cook, covered and stirring occasionally, until the leeks are very soft, 10 to 12 minutes. Add broth, russet potatoes and red potatoes to the leek mixture; bring to a simmer over high heat. Cover, reduce heat to medium and cook, undisturbed, until the russet potatoes start to break down and the soup thickens slightly, about 30 minutes. Stir in pepper. Ladle evenly into 6 bowls; sprinkle with chives. • To make ahead: Cover and refrigerate for up to 4 days or freeze for up to 3 months. 🥣 I Tweaked it with: 😋 Chicken (cut-up) 😋 Butternut Squash (already cubed) 😋 Sweet Yellow Onion (chopped) 😋 Carrots (Multi-colored/chopped) 😋 Lemon-pepper seasoning, garlic salt, other herb seasonings. The latest project in the ongoing renovation is my back porch. As you can see it was a hot mess when I bought this place, so I cleaned it up as best I could and I've been living with it ever since. Until this weekend that is. As of this weekend the floors have been sanded and the walls and the floors have been painted a clean, btight white. Not because I'm madly in love with white but because that's what I have and I see no reason to go spend money on paint when I have it already. Next the glass will be replaced in the broken windows and insulation will be installed by the outside door. I might (probably will) even get carried away and add mini blinds and curtains. This back porch does a lot for me, it's where I keep all the animal feed for the cats, dog, and chickens. It's also where I keep my dehydrator because I don't like stinking up the house with strongly scented herbs. I'm in and out that back door several times a day so the nicer it looks the better. The paint isn't even dry yet but I'm already so much happier with it. I can't wait to get it back in use, mostly because many of the things that were on the back porch are now hanging out in my kitchen until they can be moved to their rightful places. It's a minor inconvenience and so with it.
