Had to make this Yummy Potato & Leeks soup today! 😋 We had our first snowfall of the Season, and temps were definitely perfect for this soup! 🥣 What I like to do though, is change it to my liking! I tweak it and add a few extras here and there! Come on, who else does this with their recipes? 🙋♀️ Here’s the original recipe I got from one of my emails from Eating Well Daily Nosh @eatingwell • 4 leeks (white parts only), cleaned and thinly sliced (about 4 cups) • 2 tablespoons olive oil Bertolli Rich Taste Extra Virgin Olive Oil 8.5 Fl Oz

• 5 cloves garlic, chopped • 1 tablespoon chopped fresh thyme • ¾ teaspoon salt • 6 cups no-salt-added vegetable broth • 2 pounds russet potatoes, peeled and cubed • 1 pound small red potatoes, cubed • ½ teaspoon ground pepper • 2 tablespoons chopped fresh chives Preparation • • Prep

55 m • Cook leeks and oil in a large heavy pot over medium-high heat, covered and stirring occasionally, until the leeks are slightly tender, 5 to 6 minutes. Stir in garlic, thyme and salt; reduce heat to medium and cook, covered and stirring occasionally, until the leeks are very soft, 10 to 12 minutes. Add broth, russet potatoes and red potatoes to the leek mixture; bring to a simmer over high heat. Cover, reduce heat to medium and cook, undisturbed, until the russet potatoes start to break down and the soup thickens slightly, about 30 minutes. Stir in pepper. Ladle evenly into 6 bowls; sprinkle with chives. • To make ahead: Cover and refrigerate for up to 4 days or freeze for up to 3 months. 🥣 I Tweaked it with: 😋 Chicken (cut-up) 😋 Butternut Squash (already cubed) 😋 Sweet Yellow Onion (chopped) 😋 Carrots (Multi-colored/chopped) 😋 Lemon-pepper seasoning, garlic salt, other herb seasonings.
