Lavender Honey Madeleines
♡Delicate, floral, and just a little decadent♡
Ingredients:
♡For the Madeleines:
1/2 cup unsalted butter, melted
3/4 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
2 large eggs
1/2 cup sugar
1 tbsp honey
1 tsp vanilla extract
1 tbsp culinary lavender, finely chopped
♡For the Glaze:
1 cup powdered sugar
2 tbsp milk (or more as needed)
1/2 tsp vanilla extract
A few drops of lavender food coloring (optional)
Instructions:
♡Prep the Pan and Melt Butter:
Preheat your oven to 350°F (175°C). Grease a madeleine pan with butter or a light coat of oil.
Melt the butter and set it aside to cool slightly
♡Mix the Dry Ingredients:
In a small bowl, whisk together flour, baking powder, and salt
♡Prepare the Batter:
In a mixing bowl, beat the eggs and sugar on medium-high speed until light and frothy (about 3-4 minutes). Add honey and vanilla extract, and mix briefly to combine
Gently fold in the flour mixture and the finely chopped lavender, followed by the melted butter. The batter should be smooth and slightly thick
Spoon the batter into the madeleine pan, filling each mold about 3/4 of the way
♡Bake:
Bake for 10-12 minutes or until the madeleines are golden around the edges and spring back when lightly touched
Cool for a few minutes, then remove from the pan and let them cool completely on a wire rack
♡Make the Glaze:
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Add a few drops of lavender food coloring if you want a soft purple glaze
Dip the madeleines in the glaze or drizzle it on top for a delicate, shiny coating
♡Serve:
Garnish each madeleine with a few edible lavender buds or a sprinkle of powdered sugar for extra cuteness
Enjoy!

Amber chocolate Madeleine (GF)
I have this really beautiful chocolate that I buy sometimes with a real interesting taste profile. It's got some caramel or maybe more accurately milky fudgey notes, and is very rich and creamy.
I made some chocolate muffins the other day for my children's school, and I thought I would seize the opportunity to make some lovely Madeleines. I first baked them in the mold, let them cool, cleaned the mold and then covered the molds in melted chocolate, before pressing the Madeleines into the mold.
