1 oz. Averna
0.75 oz. lemon juice
0.5 oz. maple syrup
Add all ingredients to a cocktail shaker with ice, and give it a long hard shake, 10 to 12 seconds, before straining either up into a coupe or over fresh ice in a rocks glass. Garnish with a lemon peel, a lemon wheel, or nothing at all.

#my recipe#Okay so some tips is the lemon juice will taste less artificial if it is freshly squeezed#But thematically I think the artificial is better and I personally like it more#Sugared rim is optional but fun to sugar a rim you just get the glass wet and turn it around upside down in a little dish of sugad#Sugar but I’m not retyping that#Simple syrup is 1 part water 1 part sugar just boiled together in a pot#Club soda and tonic water are BASICALLY the same. Club soda is more sweet and tonic water is more bitter#They can be used interchangeably most of the time. This is one of those times#If you want to make it a COCKTAIL and not a mocktail it’s pretty much a lemon drop with extra steps so just go with vodka#This recipe image has less flair to it because this is a less. Bergamot Marmalade
When we were in Menton, in the Summer of 2023, we brought home a host of citrus-y goods, the French Riviera town being renowned for its lemons. One of my favourite was an absolutely delectable Confiture de Bergamote, which unique flowery scent and flavour beautifully spruced up a morning toast or Yoghurt! I made this golden Bergamot Marmalade, glistening like amber or jewels, for my sister!
Ingredients (makes a medium jar):
2 bergamots
3 lemons
1/2 cup caster sugar
1/3 cup water
Thoroughly grate the zest of a whole bergamot and a whole lemon into a medium saucepan.
Cut the tops and bottoms off each bergamot and lemon. Working with one citrus fruit at a time, sit it on a cutting board and cut off the skin, removing all the white pith, turning the bergamot or lemon as you go.
Then, holding it over the saucepan with one hand, cut segments out of the fruit until none remains, then squeeze hard to release every last drop of its juice.
Proceed likewise with remaining bergamots and lemons. Scoop out the pips, and stir in caster sugar and water. Bring to the boil over medium-high heat, then boil rapidly for about 25 minutes, stirring very often, until marmalade thickens slightly and takes a golden hue.
Reduce heat to medium-low and simmer, 5 minutes more.
Pour hot Bergamot Marmalade into a sterelised glass jar, close tightly with its lid, and turn upside down on your kitchen counter. Allow to cool completely, label and store.
Once opened, keep Bergamot Marmalade up to three weeks in the refrigerator, but it shan't last that long!

#how is that so GOOD!!! like alright so that's what people try to describe when they talk about umami huh haha#and it's also a little bit sweet somehow and quite honestly *chef's kiss*#for the first batch the other day I made it with the spices in the recipe (caraway and fennel seeds) plus the whole lemon juice + zest#and garlic that always goes in it feels like lol. which was also very good but I'm just not a fan of those spices especially whole#so today I made it with parsely thyme chili and cayenne instead and it fucking ROCKED!#please understand that I have eaten approximately the same meals for like five or more years now with very little change#I have no idea where this sudden urge to experiment with new foods came from but I'm having fun!#only had one 'meh no need to try that one again' experience so far which I think is impressive really#I am choosing things that are cheap and relatively easy to make so it's only so wrong it can go which probably helps a bit

Horse sewing progress is slowed because it's Baking Cookies Weekend, the weekend in December where I am struck by the urge to bake a whole bunch of cookies so I can share them with the neighbors So far, that means chocolate oatmeal no bake cookies and coffee-chocolate shortbread, and next up is gingersnaps! And citrus cookies* I'll be honest I'm probably keeping the gingersnaps for my family and not sharing them with the neighbors? They are one of those recipes I haven't been able to make in a long time because they are little labor-intensive and they are one of my absolute favorite cookies *any time I am giving a gift of cookies I try to include at least one non-chocolate cookie option, and my default is citrus cookies because they are pretty, the dough can be made ahead of time (they are slice and bake cookies), and most people I've made them for have never had a cookie like them before

2 oz. rye whiskey
0.75 oz. Lemon Juice
0.75 oz. Simple Syrup
1 tsp. (about 1/6 oz.) Absinthe
1 egg white
Add all ingredients to a cocktail shaker and shake briefly without ice to whip the egg. Add ice and shake good and hard for 10 to 12 seconds. Strain up into a sour glass or big coupe and garnish with drops of Angostura Bitters and/or a lemon peel.
