Fall Harvest Salad with Apple Cider Vinaigrette Ingredients: For the Salad: 1 small butternut squash, peeled, seeded, and diced 1/2 tbsp olive oil Salt and freshly ground pepper, to taste 2/3 cup (120 g) raw quinoa 1 cup (240 ml) water 2 cups (130 g) chopped kale leaves 2 small apples, cored and sliced or diced Toppings: 1/4 cup (30 g) dried cranberries 1/4 cup (30 g) pecans, roughly chopped 1/3 cup (50 g) crumbled feta cheese (reduced-fat if preferred) 1 1/2 tbsp roasted pumpkin seeds For the Apple Cider Vinaigrette: 3 tbsp extra virgin olive oil 2 1/2 tbsp apple cider vinegar 3/4 tbsp honey or maple syrup 1 1/2 tsp Dijon mustard 1 garlic clove, minced Salt and ground black pepper, to taste Directions: Roast the Butternut Squash: Preheat oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 16 minutes, flipping halfway through, until tender. Remove from oven and let cool. Cook the Quinoa: Rinse and drain quinoa. In a small saucepan, combine quinoa and water. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 20 minutes, or until fluffy and water is absorbed. Let cool. Make the Dressing: Whisk together olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, garlic, salt, and pepper in a bowl (or shake in a mason jar) until well combined. Adjust salt and pepper to taste. Massage the Kale: Place kale in a large bowl and pour half of the vinaigrette over it. Gently massage the dressing into the kale for 30 seconds until softened. Assemble the Salad: Add cooked quinoa, roasted butternut squash, and apples to the kale. Toss to combine. Divide salad among plates, then top with cranberries, pecans, pumpkin seeds, and feta cheese. Drizzle remaining vinaigrette over the top, and serve. A tasty and healthy kale, quinoa, and corn salad with a balsamic dressing. This salad is full of bright colors and different textures. It's great for a light lunch or as a side dish at dinner.
Ingredients: 1 cup quinoa, rinsed. 2 cups water. 2 cups kale, chopped. 1 cup corn kernels, fresh or frozen. 1/2 cup red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup feta cheese, crumbled. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Put the quinoa and water in a medium-sized saucepan. Bring to a boil, then turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is done and the water is dry. Cook the quinoa and put it in a large bowl. Add the kale, corn, red bell pepper, red onion, cilantro, and feta cheese. Put olive oil, balsamic vinegar, Dijon mustard, salt, and pepper in a small bowl and mix them together with a whisk. Add the dressing to the salad and toss it around to make sure everything is covered. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. Enjoy! Serve cold.

Kale ready and rinsed for youth volunteers in the morning to make the Sunrise signature Kale Salad. Today two groups of amazing and strong women (check out our volunteer hauling chopped potatoes into the fridge) laughed, prepped onions, celery, red peppers and potatoes and made a plan for a dance party. There have been weeks when just a few volunteers have cooked for hundreds of people. Sunrise Project is growing and expanding, feeding more people and attracting more volunteers, so today was the perfect amount for stress-free, fun cooking. However, we can use you! Autumn Caesar Salad with Roasted Delicata Squash Croutons Ingredients: Salad: 1 bunch kale, destemmed and finely chopped (about 3 cups) 1 large shallot, thinly sliced 1/2 lemon, juiced Delicata squash croutons (see below) 1/3 cup pine nuts or chopped walnuts, toasted 1/3 cup shaved parmesan 1/3 cup Caesar dressing of choice Squash Croutons: 1 medium delicata squash (about 1 lb), deseeded and cubed into 1/2-inch pieces 2 tablespoons olive oil, divided 1/4 cup panko breadcrumbs 1/4 cup grated parmesan 1 clove garlic, finely chopped or grated 3 tablespoons finely chopped fresh herbs (such as rosemary, sage, or thyme) Kosher salt and ground black pepper, to taste Instructions: Preheat Oven and Prepare Ingredients: Preheat the oven to 425°F (220°C), placing an oven rack in the top third of the oven. Line a baking sheet with parchment paper or foil and set aside. Prep all ingredients as directed above. Prepare the Squash Croutons: Arrange cubed delicata squash on the prepared baking sheet. Drizzle with 1 tablespoon olive oil and season with salt and pepper. Toss to coat and spread in an even layer. In a medium bowl, mix breadcrumbs, parmesan, garlic, and fresh herbs.
