Chicken in a siphon?!?! Am I crazy?😜 No, it’s just Pressure Marinating!💥 This technique is used to speed up marinating, brining or infusion. Any gas works, including compressed air. Carbon dioxide adds acidity, don’t use it with an alkaline marinade. Carbon dioxide also makes the meat a little fizzy, but the it comes back to normal when the meat is cooked or heated. .
