Stovetop oats with blueberry compote 🫶🏻
Perfect comfort breakfast for those super cold mornings.
What you need (single serve)
•1/2 cup oats
•1 tsp chia seeds
•1 cup almond milk
•Vanilla extract
•1 cup blueberries (Fresh or frozen)
•2 tsp maple syrup
•Dash of salt
Toppings:
Banana
Pumpkin seeds
Almonds
Peanut butter
Add oats, chia seeds, vanilla, 1 tsp maple syrup, salt and almond milk to a pot. Cook until you achieve creamy consistency. Approximately 6-8 minutes.
Whilst oats are cooking add blueberries and 1 tsp of maple to a pan or small pot on medium heat. Stirring consistently, cook until berries become soft and let out juices.
Top oatmeal with sliced banana, berry compote, nuts, seeds and peanut butter 🤍

Yogi Breakfast Bowl! I saw the idea of frying an egg with sesame oil and sesame seeds here on IG. So I decided to try it. We did it the first time in toast cause I didn’t have any rice made and I didn’t feel like waiting-even for the Instant Pot. It was okay. Just okay. This time I sautéed spinach and eggplant first, cause I had some I needed to use up. After I cooked them I set them aside and toasted sesame seeds in the pan before I added the I fried them over medium, but next time I’m going to do them over easy. I made a little mound of rice, seasoned with a bit of soy sauce and added the veggies and topped it with the egg and drizzled the leftover oil from the pan over it all. Yumm-o! This is a keeper. You have to add some other oil to the sesame oil so it doesn’t smoke. I never use peanut oil, but for this dish, I would. I love a savory breakfast dish and this one is going into the rotation. I also like starting my day with protein and veggies, not so much with the carbs, So my bowl had less rice than @slimzadie “s.
