Baking is my stress relief. When I don’t want to deal with *gestures vaguely* things. It’s not even that I wanna eat the things, it’s that baking destresses me and calms my mind. Then my coworkers get to eat the spoils and they are so happy every time my containers show up at work. It’s funny because I’ll hear someone ask “Are these Lauren cookies/cupcakes/baked good?” And when someone says yes they instantly dive in.

follow me on this mental journey for a minute, im "allergic to corn" and try to avoid it, except so much shit in america is made of corn. now, i know cheetos are made of corn, and a tiny bag of cheetos is 1. 55¢ and 2. the perfect snack to keep me from withering away during my job, so i eat them somewhat often. no real issues. maybe minor stomach grumbling but i get that from 90% of food. im also allergic to wheat and soy and a number of other things. okay?
so i tried some doritos the other day, first time in a while, thinking its fine, theyre like cheetos. the next day i feel Bad, but again, i feel bad a lot! im not POSITIVE its connected.
so yesterday and today, for lunch, i made homemade cheesy gordita crunches. no you CANNOT tell me nothing. bitch. obviously the crunch taco shell is made of corn. i even actually got the doritos flavored one.
next day, again, feel bad!
so now im positive its the corn, but why the fuck can i eat cheetos? well it turns out when they make cheetos, they dont use the whole corn. they are not putting their whole cornussy into it. they take out the "germ" which is good, that sounds gross. so i think the germ contains the main allergens? im trying to research this on the notably worse than it used to be website known as google. ive made questionable progress, but mark my words, i am studying the corn. i am learning. i am understanding my enemy so i may conquer it. the corn will no longer be a mystery to me....

Coconut Mango Mousse (Vegan)

A simple yet exquisite little dessert, this beautiful Coconut Mango Mousse brightens the greyest of days with its sunshiny hue and tropical flavours! Happy Friday!
Ingredients (serves 3):
1 ripe mango
1 large, ripe lime
200 millilitres/7 fluid ounces coconut cream
1/2 plump vanilla bean
1/2 tablespoon caster sugar
Halve, pit and peel the mango. Then, cut it into small dices.
Spoon half of the mango dices in a tall container. Thoroughly squeeze the juice of the whole lime over the mango. Using a hand-held blender, process until you have a smooth mango coulis. Set aside.
Spoon the thick coconut cream (without stirring with its water) into a medium bowl.
Scrape the seeds off the vanilla bean halve, and add to the bowl. Sprinkle in caster sugar. Beat with an electric mixer, gradually increasing speed to high, until stiff peaks just form.
Gently fold in about two-thirds of the mango coulis until well-combined. Then, fold in reserved mango dices.
Spoon half of the mousse into three serving glasses, drizzle a little of the mango coulis. Repeat with remaining mango mousse and mango coulis.
Chill in the refrigerator, at least three hours.
Serve Coconut Mango Mousse chilled, with a glass of Champagne, if you fancy!

Thank you I will!! My favorite treat… hm… either raspberry chocolate truffles (really anything thats raspberry + dark chocolate tbh) or knafeh (Arabic dessert made from vvv thin crispy pastry, a sweet cheese, and rose water syrup)! I would live off knafeh if I could. That shit’s like ambrosia.

i need to draw this part of mochi more but she is honestly, from an onlookers perspective, very weird. and the reason for it is that she has a habit of collecting and hoarding old, gross, used, useless, or otherwise unwanted things.
as a witch, anything can be used all spell ingredients because objects in the world inherently have properties that can be used for spells (think botw where its like "old snail shell can boost speed" kind of thing), and often times the properties are stronger AFTER said object has been gently to moderately used. an eraser has good properties for glue spells BUT a used and chewed on eraser has STRONGER properties for glue spells
so when she was a little kid, in school you could catch her on the floor scraping up eraser shavings that a kid brushed off his desk. the teacher tries to empty out the pencil shavings bin and mochi ZOOMS in with a jar to catch all of it before it goes into the trash. a kid sticks their gum under the desk and 10 minutes later mochi is on the floor scraping it off and putting it in a little box. and when they were young it really FREAKED lime out, but over time hes like "Whatever, you do you i guess." (shes trying to be a good little witch-to-be and help her mom collect potion ingredients)
as she grows up she gets better at blending in and and uhh NOT doing that, but occasionally you'll still catch her picking up old chewed on pencils, rusty paper clips, soggy pieces of paper, whatever off the floor

Rum and Lime Pineapple

This simple Rum and Lime Pineapple recipe beautifully enhances the juicy, sweet flesh of the fruit, making it a lovely dessert to end a meal! It may tastes even better if you're having it with a side of telly series set in the Caribbeans!
Ingredients (1 pineapple):
1 medium, ripe pineapple
a small lime
4 tablespoons Ginger and Lime Rum 
Peel and cut pineapple into thick slices. Remove the hard core of the pineapple slices with an apple corer.
Arrange pineapple slices onto serving plate. Generously grate the zest of the whole lime all over. Drizzle pineapple slices with Ginger and Lime Rum.
Chill, at least a couple of hours, in the refrigerator.
Serve Rum and Lime Pineapple cold.

me: it would be hilarious if they got pineapple upside-down cake but nah I'm going to look up cakes that were popular in the 1980s, and perhaps some from the 1970s because Hawkins restaurant menus were probably a bit out of touch
me: omfg Watergate Cake
#pineapple upside-down cake is a classic ofc#but I couldn't resist the water gate reference#(for... a scene that I've set in 1985 well before the water gate in Lovers Lake was opened)#also there's something about a cake made with box cake mix pistachio pudding mix a can of 7-Up and Cool Whip w/more pistachio pudding#that just feels appropriate for Eddie#you cannot even make such a cake in New Zealand#it is impossibly exotic to me#yes we have 7-Up and yes we have boxed cake mixes#but COOL WHIP? no#and PISTACHIO PUDDING MIX? no#honestly baffled by what the Americans call 'white cake' and 'yellow cake'#like what FLAVOURS are those? are they vanilla? are they buttery or lemony? or are they just SWEET#so many 'easy' American cake recipes are inaccessible to me#because they call for pre-made ingredients like 'whipped topping' and various pudding/jelly/cake mixtures that just aren't sold here#I make 'key lime pie' with whatever limes are available and a digestive biscuit crust#I sincerely do not care that it is not quite like an authentic key lime pie because you know what#it's nice#and as long as it's nice that's what matters#I recently ordered a big fuck-off box of their 'kosher salt'#just to try to figure out by EXAMINATION what kind of salt that is naturally sold here it most closely corresponds to#American food recipes (not necessarily baking recipes) are just fucking obsessed with kosher salt#IT'S NOT A THING HERE#we have table salt and coarse salt that you put in a grinder and flaky sea salt#THOSE ARE THE SALTS#I'm not trying to be a jerk about this so I hope it doesn't sound that way#it's just one of those things you run up against again and again if you like ‚ you know ‚ American STUFF#that they use terms in their recipes and instructions for STUFF that is absolutely bog-standard in their supermarkets#and totally opaque if you live elsewhere#we only just got one Costco in this country okay people

These cool No Bake Lime Tarts are a great way to make a dessert quickly and easily. They will wow anyone with their tangy lime filling and buttery graham cracker crust.
Ingredients: 1 1/2 cups graham cracker crumbs. 1/4 cup granulated sugar. 1/2 cup unsalted butter, melted. 1 can 14 ounces sweetened condensed milk. 1/2 cup fresh lime juice. 2 teaspoons lime zest. 1 cup heavy cream. 2 tablespoons powdered sugar. Lime slices for garnish.
Instructions: Put graham cracker crumbs, sugar, and melted butter in a bowl and mix them together until they are well mixed. Put the dough into tart pans and press it down to make crusts. Put it in the fridge for 30 minutes. Mix sweetened condensed milk, lime juice, and lime zest in a different bowl using a whisk until the mixture is smooth. Evenly pour the lime mixture into the crusts that have been prepared. Put it in the fridge for at least two hours, or until it sets. Heavy cream and powdered sugar should be whipped together in a different bowl until stiff peaks form. Before you serve, put whipped cream on top of each tart and decorate with lime slices.

Cook Time: 0 minutes
