Mr. Curry’s India Restaurant is what was next on our Cuisine adventure. It was buffet style and included rice, chicken and lamb curry, chicken, potatoes, beef, bread, and this dish called “The Express”. He also provided us with rice pudding, mango smoothies, and chai tea. 

Something that I thought was really unique and cool is the fact that the owner is a consultant during the day and then he has two restaurants (in Edwardsville and St Louis) as a “hobby”. He only opens the restaurant if there is a reservation or appointment. I think that's really cool. You don't hear that often. 

I had never had Indian food before last night and it definitely didn't disappoint! It’s been really nice to try out some different cuisines and learn a little more about there cultures. Usually, Indians eat with there hands because way back when they didn't have forks. Last night we used forks, but usually, you wouldn't, you would eat with your hands. 

India is very interesting and they have some really interesting and cool traditions. During my research, I found out a lot about India Culture. One thing that I found is about how they greet each other. “Namaste” is a form of greeting and there are five different ones. It means “I bow to you” and when you greet people with that it is a way of saying “May our minds meet” which is followed with putting your hands together against your chest and bowing. This greeting is starting to become more popular as well. Many people such as Barack Obama has done this greeting. Of course, we can not forget about Jake Amundson, he does this every class he has. It’s a highlight for sure. 

The holy animal for the Indian Culture is the Cow. The cow is worshipped and is a depiction of Mother Earth. Feeding a cow or making some sort of donation for cow shelters is very important for Indians. The Vedic Scriptures have emphasized how cows need to be cared for and protected and how important it is. If the cow is killed or consumed in India that is a sin in their eyes. Many places in India have banned killing cows. 

There is also this concept of a “Joint Family” which means the entire family all live together. It helps with stress and takes off a lot of pressure. That means parents, husbands, wives, children and any other relatives. 

Arranged marriage is also a big tradition in India. If you’re apart of a royal family then the ceremony is called “Swayambar” and is arranged for the bride. Many potential males come from all over the kingdom by invitation to compete to win the bride. It’s a favorite tradition among many Indians and is a great tradition for them. 

There are many more things that I could mention in this blog about Indian culture and their traditions, but there is just way too much. At the end of the day, I’m glad this class has opened me up to try a lot of new things even if that means stepping out of my own comfort zone and culture and learning about a new one.

Today's recipe is a very special dessert of our Bengali cuisine. For those who dont know, Gobindobhog is a short grain, white and aromatic rice. It is sticky in texture which turns out really well when added in Payesh. It makes the pudding creamier. Patali Gur is a form of Jaggery prepared from Date Palm. It can be rightly called a delicacy which is found only during winter months. Together, they create a heavenly combination!! If you want to try this pudding you will have to prepare this at home yourself because this is not a common Indian store readymade item. But I promise you, the effort will be worth it. I LOVED these desserts from @nusakitchen. Indian rice pudding with pistachio and seasonal compote. Balinese black rice pudding with coconut milk and fresh mango. (Dairy free!). The creaminess was unreal, and the flavours were beautiful. For someone who doesn’t usually like mango and coconut, that one was my favourite. The coconut wasn’t too overpowering, and under the top layer of it you have the creamiest and a perfectly sweet black rice pudding.
