Aja Ekadashi is a significant Hindu festival observed on the eleventh day of the Shukla Paksha (bright fortnight) of the lunar month of Kartik. It is a day dedicated to Lord Vishnu, the preserver of the universe. on this day all wants to do some good deed like donation. North Indian Diabetes-Friendly Sweets Recipes

A variety of sweet dishes from this region are famous all over the world. Here is the North Indian sweets recipes that are diabetes-friendly. Lets start with the Bakheer recipe.
1. Bakheer recipe:
This delicious recipe especially made during festivals like Dussehra, Ramnavami. This recipe made by rice, dark brown jaggery, and milk, along with the Dal Poori. We can say Gud Chawal ki Kheer also. But FFD has customized this recipe for diabetics people. FFD suggest avoid Animal milk, and use vegan milk. And Instead of Jaggery, we can use dates paste and stevia's drops.
Delicious and Diabetes-Friendly Bakheer by FFD
Wash and soak the rice in water, drain the water from it.
Then In a pressure cooker, add the rice, date paste, and water and cook through to 4 to 5 whistles. After sometime gently mash the rice.
Meanwhile, bring the milk plus water to a boil and then switch off the flame.
In a kadhai, dry roast the cashews and raisins until they have turned golden brown.
Then, add the vegan milk plus water, fried dry fruits, stevia, and cardamom powder to the cooked Bakheer. Mix well and Serve hot.
2. Date & Coconut Kulfi recipe:
Everyone loves the Kulfi. All's favouits sweet. Its main ingredient is khoya or milk solids and sugar and flavoring materials.
This is the FFD style Delicious kulfi, which avoid dairy. We are using coconut milk instead. The added coconut flour gives a nice grainy texture and date syrup makes it fuller in taste and more satisfying.
Ingredients: 1 Cup Coconut Cream 1 Cup Coconut Milk 1 Tbsp Coconut Powder/ Flour 1 Tbsp Date Syrup Few Drops Stevia ¼ Cup Sliced Almonds + Cashews
In a large mixing bowl, pour coconut milk and coconut cream. Use an electric hand mixer to beat the mixture.
Once it is fluffy and creamy start adding coconut flour, stevia, and date syrup a little at a time while continuously mixing with a hand mixer.
Beat until all of the ingredients are thoroughly intertwined and lastly taste whether or not it is sweet to you and if not and necessary to add a couple more drops more of stevia.
Mix in the sliced nuts.
Pour the mixture into a container and place it in the freezer.
Let it set for 3 hours. Now its a kulfi time.

Devbhoomi Uttarakhand: The Land of Gods
According to the Puranas, When Brahma Ji created the universe, Earth was created for the sake of people. Then all the Gods and Goddesses said to Brahma ji " Lord, you have made the earth- a world for all humans. Give some place for us also on this Earth." Then Brahma ji said "There will be a country named India in the whole earth, In which you will sit in the place named Uttarakhand. And even today the land of Uttarakhand is known as Devbhoomi.

Delicacies of Uttarakhand
Food is based on the plantation their natives do in the Mountains. A few delicacies:

Aloo ka Jhol- Jhol means ‘thin gravy’ in Hindi. Aloo ka jhol is a potato recipe that is served with pooris or chapatis.
Signori- It is a well-known sweet dish in Uttarakhand which is made of Khoa, a dairy product of thickened milk that is wrapped in a Maalu leaf.
Arsa- It is the most famous dessert of Uttarakhand, and has come to occupy space in each house of Uttarakhand. No festival is complete without this dish.
Traditional clothing
Men - They wear kurta pajamas with a koti over their kurta and a pahadi cap is a must for them.
Women - Garhwali women wear a necklace like a modern-day choker, called a ‘gul band’.
In kumaoni culture at weddings, the bride wears a red and golden head covering a heavy piece known as the pichora.
Festivals
Harela parv- Celebrated in Kumaon for the seeds sown by Kumaoni women and the harvest time on the first day of the monsoon.
Phool Dei- All the children collect flowers and go to the houses of their villagers to ask for rice and give them flowers instead. After the collection of rice from the whole village, they collect it at a place and rice kheer (porridge) is prepared and served among the villagers.
Music instruments
Dhol, Damoun, Dholki, Daur, Thali, Turri, Bhankora, Ransinghla and Masakbeen are some musical instruments used for all functions in Uttarakhand.

10 pieces of white bread
2 liters milk
4 ordinary barfis
Badam and pistachio for garnishing
A pinch of saffron
Chandi ka vark
Rose petals
1 cup sugar
4 Tbsp desi ghee
How to Make Bread Rasmalai Super Suvai Tamil
1.With a small katori or with a tart mould cut out small rounds from the bread pieces, keep it aside.
2.Take half cup sugar and boil till a thin syrup is formed.
3.Boil milk and while thickening add the powdered barfi and the rest of the sugar.
4.The base dip of rasmalai is done. Try these recipes super suvai tamil
5.Take a tava and heat it, on this heated tava saute the round bread pieces slightly brown on both sides.
6.Dip this sauteed bread pieces into the sugar syrup and simultaneously into the rasmalai dip; pour the remaining sugar syrup into the rasmalai mix now add the saffron strings and nuts (badam and pista cut into small pieces)
7.Transfer this into a serving dish and decorate with silver vark and with a few rose petals chill the rasmalai in a refrigerator before serving.

1.Mix maida and salt, and knead into a soft, sticky, dough (quite wet), with the yogurt.
2.Cover and keep aside for 2-3 hours.
3.Mix the onions, green chillies, salt and lemon juice and keep aside.
4.Place a tawa over the burner, and heat it over high heat.
5.While it is heating, roll a piece of dough into a 1/8" thick round, using dry flour if it sticks.
6.Keeping the heat high, place the dough round over the tawa.
7.When bubbles start appearing, flip it over and pour a generous helping of egg over it. Dribble some ghee around the edge and lower the heat.
