Blackened Fish Tacos
There’s nothing like a good taco but there’s something about a good fish taco that is just so refreshing!! These remind me of these tacos I had in Jamaica by the ocean that I still can’t completely replicate 😂 Enjoy!
Full Ingredient list:
1-2 lb cod (or preferred white fish) Seasoning blend: 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika 1 tsp ground cumin 1 tsp salt 1 tsp black pepper
For sauce:
1/2 cup sour cream 1/2 avocado 1/2 jalapeño 1-2 garlic cloves 1/4 cup cilantro chopped 1/2-1 lime juiced Salt to taste Pepper to taste Water to dilute (optional)
For coleslaw:
1-1 1/2 cup red cabbage 1- 1 1/2 cup green cabbage 1 mango diced 1 jalapeño diced 1/4 cup cilantro chopped 1/2 cup mayonnaise 1 whole lime juiced Salt to taste Pepper to tasts Flour/corn tortillas Fresh limes to garnish

Birria Tacos
Ingredients:
2 pounds beef chuck roast (or goat meat)
3-4 dried guajillo chilies
2-3 dried ancho chilies
2-3 cloves garlic
1 onion, chopped
2-3 bay leaves
1 teaspoon cumin powder
1 teaspoon oregano
Salt and pepper, to taste
4 cups beef broth (or water)
Corn tortillas
Chopped onions, cilantro, and lime wedges for garnish
Instructions:
Prepare the Chilies:
Toast the guajillo and ancho chilies in a pan until fragrant, then soak them in water for 15-20 minutes until softened.
Make the Sauce:
In a blender, combine the soaked chilies, garlic, chopped onion, cumin powder, oregano, salt, and pepper. Blend until smooth, adding a little water if necessary.
