Oh Tessa, thank you for this excellent question! Paul and Carlos’s first solo hang actually took place shortly after the night he and Carlos and TK went to the club! Paul was itching to make his grandma’s goat curry, however he was having trouble figuring out where to buy goat meat in ATX. In Chicago he always bought it at the Caribbean market in Humboldt Park (@freneticfloetry for the Chicago fact check) with the walk up counter for bomb oxtail stew and the spicy slaw that he still dreams about. But he’s still new to Austin and hasn’t been able to find any Caribbean or African markets yet.
After the club night Paul feels emboldened to approach Carlos on a scene, knowing he’s an Austin native and also a patrol officer, meaning he spends a lot of time in different parts of the city, he asks him if he knows of any West African or Caribbean markets where he might be able to buy the meats and spices he’s used to cooking his grandmother’s dishes with, the maggi and geera and culantro. And goat meat. And oxtail.
Carlos knows of a few places. He’s never been in them, never really had a reason to try West African food, but he’s always down for trying new foods. So over the next few months they explore the Caribbean and African markets and restaurants mostly in North Austin. They find a market that’s also a restaurant that serves all of Paul’s favorites: fufu, jollof rice with roasted lamb, Senegalese peanut stew, fried plantains and freshly fried meat pies. They fill up on food and rum punch before venturing into the market. Paul finally finds his goat meat and Carlos decides to buy some too. Lubricated by the rum punch he decides he’s definitely gonna cook a ton of goat recipes, so he buys nine pounds of it.
Paul and Carlos get home, still a little buzzed, and find a bemused TK waiting for them. When he sees the NINE POUNDS of goat meat he’s like, “…what on earth are you going to do with all of that goat meat, you don’t even have space in your fridge for that.” He’s right. He has to get TK to take some home and squirrel it away in the back of Owen’s freezer. He ends up making all sorts of goat dishes. He tries his hand at biryani and chanfana. But ultimately he uses it in soups, empanadas, chili… He even brings some over to Tía Lucy’s for a tamale party and finds it’s a hit with the family.
This is also how Carlos becomes Paul’s very eager taste tester in his lifelong efforts to perfect his grandma’s Trini goat curry.

SAUTE IT WELL WITH THE GRAVY FOR A FEW MINUTES UNTIL TOMATOES GET MIXED WITH THE GRAVY HERE IS THE STAGE IS GOOD TO ADD THE CURD(100 TO 200 ML ) SAUTE IT WELL WITH GRAVY.

Nope. I can't handle myself so handling pets might be a nightmare for me.
Comfort food?
I have so many. Hyderabadi Biryani, Maggi, Indomein, Kurkure, Red Lentils and rice, Makloubeh, Kabsa Rice, Kunafe, Shakshuka and so many more. Also Indo-chinese foods like dumplings, chow mien etc.
How many languages do you speak?
I speak English, Hindi and Urdu.
Random fact about yourself
When i was 3 my parents moved to Saudi Arabia due to my fathers job and i studied their till 8th class. I can read Arabic but i can understand it a little bit. I can also write it probably but i can't speak it. I became a writer because of that one chapter in my English course book about a girl with anxiety finding herself because of what her English teacher told her once and became a well know author and i also have memory problems which is why i forgot everything :).
Something you’re proud of?
Improving in my writing and speaking English. Finally studying in 11th and proving everyone wrong. Getting in college and proving everyone wrong again. Being good in Psychology....somehow. Standing up for myself in front of my family because I'm done. Rejecting my younger cousin's love confession because i stood up for myself.

Do you like a recipe book? Do you like an unbearably comprehensive and frequently incorrect recipe book? Well boy do I have an item for you:

It's Indian Delights, the de facto standard book of South African Indian cooking. Assembled in the 60's by the Durban Women's Cultural Group and in print ever since then.
The How
A birthday gift from my parents, who sent it from South Africa.
There are apparently places that carry this book outside of South Africa but I do not know what those are.
The Text

Dubious, but useful despite this. It was written in the 60's by a bunch of people who had never and would never again write a recipe book. You may note from the frontmatter that while it has had sixteen impressions since its first publication in 1961, there has only ever been a single revision of the book. There are numerous errors, omissions, and flaws. Recipes may list ingredients that are not used, call for ingredients in the method not given before, begin preparing components and never use them, or outright lie about the quantities of ingredients you need. A challenging exercise.
Any given individual's copy of this book is full of little pen notes, slips of paper, and scratched out experiments. I have a blank canvas.

It is absolutely stuffed to the brim with recipes from the then-almost-century of South African development on South Asian cuisine. It is intended as a one-stop-shop for cooking from a diaspora of extremely wide origins.
South African Indians arrived in South Africa as indentured labour for British sugar farms and could just as easily be from the relatively cold and mountainous North Indian regions or the low, rainy, hot coastal areas of South India. As a result you've had almost a hundred years of adapting to the locally available ingredients, intermarriages across wide geographic origins, and failing memories. There are frequently many duplicates of any given recipe, each with some unique variation of note.

It is also extremely dated. It still lives in an era where "adding an elachi (cardamom) pod to your rice" is a luxurious choice that requires financial considerations, and where meat was still expensive. It also has a delightful section on mass cooking, such as the above "Biryani for 100 people" which has an additional note on the ingredients for a "Biryani for 800 people" on the opposite leaf. These things come up sometimes, although the largest biryani I've ever been involved in was for about 60 people.
It is not really for beginners but it does have a lot of introductory matter, in part because it has to contend with the mishmash of languages and loanwords that exist. You don't know if the reader uses the hindi word for cumin, or the tamil word for cumin, or makes a formal distinction between roti and chapati. As a result, there are extensive opening tables of translations.

Big, blocky hardcover recipe book. Cheap but hardwearing coated pages. I have seen these in every imaginable state of disrepair, unfortunately I do not have a photo on hand of my mother's which is completely beat to hell.

Also: the digital version of the D&D themed agent placement game Lord of Waterdeep with my family, which works quite well. It's weird to have the game handling the admin of moving points around and automatically deducting resources, but it does make the game go very quickly, even if your parents are still figuring out the interface.
Making: Big cooking experiment with a slow roast lamb shank. Came out very well. Lamb shank definitely one of the more animal parts of an animal you can cook. Smells intensely of lanolin and other hair smells. Real greasy. Big honkin' bone. Smooth and fine but sturdy musculature. This thing used to be a very specific part of something alive and that thing lived the kind of life that develops the very particular smells of the insides of a sheep that are very close to the outside of a sheep. Bruce Can Definitely Cook
Okay, this is a part 2 to this post about how Bruce can cook, just not typical American/British food. So, here are some more of my thoughts on it:
Bruce has an extremely high spice tolerance thanks to eating anything out of South India. He definitely learned to cook some Biryani while there.
He is the only one of the original JL members that can eat Ollie's Stupendous Chili without suffering from the spice (as seen here):

(Honestly, I wouldn't be surprised if Bruce pitches in to the recipe to make it even more spicy).
Alfred has the least tolerance, mostly because of British taste buds the foods he grew up around didn't even come close to what Bruce had in other places.
He definitely trades food and cooks with the neighborhood aunties and uncles all over Gotham (it's where he gets to learn more recipes and improve his skills) (Also, most of the kids start to really like the food he makes) (the aunties absolutely love it).
He has strong opinions when it comes to rice, pasta, and bread, specially if it's Jaime Oliver that's doing it. In fact, he can't even watch him for a second and he'll start giving the TV the Bat-Glare.
The only cooking programs he can watch calmly are the Great British Bake-Off with Alfred (except for Mexican Week, then he almost tears the TV off its hinges) (also, Alfred gets very judgemental watching it), anything with Gordon Ramsay traveling the world, and Roadtrip with G. Garvin. Anything else and he gets way too invested in it:
Judge, on TV: Oh, very interesting flavors, but it's too spicy-
Bruce, yelling across the room: It's fucking sour cream, you uncultured swine!! You want spicy?! I'll give you some of Auntie Prisha's laal maas, see how you like them apples!!
His kids start getting in on it, too. They can't hear anyone in school/work/in the streets talking about how to properly cook pasta without going on a rant about specifics.
Bruce keeps a sourdough starter and a kimchi jar on the fridge and compartment respectively. The kids named it "Karlo". Clayface wasn't too thrilled when he found out. It's since been changed to "Composite".
All of the kids like whenever Bruce cooks, but surprisingly, Jason and Steph are the ones that do the most 1-on-1 stuff. Steph because she's a foodie (I think), and Jason because it's one of the things that they both can agree on (to an exent, because there's always light arguing in the kitchen), so it becomes a bonding thing between them. They'll spend hours alone just to prepare Tennessee Barbecue.

The Process
Does anybody else enjoy doing things from scratch, even if you have absolutely no logical reason to?
Like, I enjoy making curries. Vindaloo, Biryani, Karahi, I've gone out of my way to make them as close to from scratch as I could. This is pretty straightforward, as you generally want to make your own masala to match your preferences and adapt to the different dishes.
Then came Japanese Curry.
Japanese Curry is based off of British Curry, which came in the form of Curry Powder, a pre-made spice blend. The Japanese company S&B made their own variation, which they made into a curry roux to melt into stews, leading to what we know as Japanese Curry, or Kari Raisu (literally just Curry Rice).
Now I've had Golden Curry before. It's pretty good, especially when spiced up. But, for some ungodly reason, I decided I wanted to make my own Japanese Curry Masala.
Now I dunno about y'all, but I typically get my recipes from one of three locations: Youtube, DuckDuckGo (formerly google), and cookbooks. And I need to tell you, there are barely any recipes for making Japanese-style curry powder. And for good reason; the standard stuff is cheaper in the short-term than buying the spices, and way easier than making the roux.
But I wanted to do it anyway.
The first place I found was JustOneCookbook's S&B imitation. It was quite detailed, but was a fair bit complex. I wanted to compare. Fortunately, now I knew S&B sold their curry powder in individual tins, so I googled the ingredients list. This gave me a decent start, but I still wasn't satisfied, so I browsed a few more links before heading to Youtube. Eventually I came across Dia's Culinaria's video on it, which was noticeably different from the other recipes, but it did account for common additives, and it served as a nice baseline for what I would need. A few ingredients stood out to me. First, was fenugreek. This one was a bit of a wild goose chase. First off, when looking up Fenugreek, if you're in the states, you're likely to find a bunch of ads for overprice medicinal fenugreek supplement, which as far as I know, does nothing. Trying to narrow it down doesn't help much, as both the seeds and leaves are used in curries. Eventually, I figured out thanks to Wandercooks' recipe (one I had skipped over earlier) that it was the seeds generally ground and used. This didn't help obtaining it, however. As mentioned before, most fenugreek is sold medicinally for upwards of 40x the cost. I had to find it elsewhere. Eventually, my family made just enough money to head out of town to Winco for groceries. And lo and behold, there they were in the pour section: fenugreek seeds, for more than I'd normally want to spend, but in adjustable quantities, and far cheaper than the med stuff. We picked some up and now all I had to do was measure them out, toast them, and grind what I needed.
The next notable ingredient was Orange Peel. This wasn't on many, but the S&B/imitation style used it. I don't want to deal with dehydrating an orange peel, so I figured I'd zest an orange add that zest to the roux. Simple as.
That was when I remembered that I didn't know how to make the curry in the first place.
That led me to Youtube. Obviously, I could have turned the masala into a roux, and added it like I would a boxed style, but I had just made Gumbo, and was quite confident in my Roux-dimental skills (sorry). I wanted to do this properly (by my own, self-afflicted measure of proper which in no way applies to anybody else). So I looked for recipes. Most were as I remembered from my initial search: using the box and fancying it up. Eventually though, I found this adorable video. It didn't help too much, but y'all should watch it anyway. It's a great idea and the curry looks great.
Anyway, I eventually stumbled upon J.Kenji Lopez-Alt's video on the subject, which really helped. He decided to use H&B's curry powder, which was convenient since I had just made my spice blend all ready to-
I forgot to actually measure and make the masala.
Okay, so back to the spice recipes. Aside from Dia's, most recipes used the standard ratio of 1:1 turmeric:coriander, with fenugreek and cumin close behind. Using that, I loosely measured out the fenugreek and fennel seed, using a bit more than was listed since it would grind down to less, toasted them with a large-ish bay leaf and star anise. Mash them up in a mortar and pestle (please just use a spice grinder. My obstinance is not a roll model), add the other spices, and I'm good to go. That blend is in the pantry now, waiting.
So now I'm nearly there. I've got a carrot, two potatoes, two chicken breasts, an apple, an onion, a large quantity of garlic, the rest of my whole ginger, and some extra-spicy chili powder ready to go. Just need my mom to pick up an orange, and I'm good to make curry.
Well, I also need either my dad or brother to run the dishwasher so I can make rice in the pressure cooker, but that's pretty straightforward.
Anyway, I'll come back tomorrow evening with my results. May my semi-pointless labor bare fruit.

ive mentioned before that neither cy or zarah know how to cook. now despite this and regardless of american background i will say this. They can manage Some things. zarahs better at baking things ans cy can manage to cook a little if someone helps her.
all this being said i dont care what i have to do to make it make sense but given the opportunity to have pakistani food they both WILL make it if they have to. zarah is Capable of making decent ras malai. cypress has made biryani before but burnt it. things like nihari, pulao etc are a bit on the harder side but she can make a decent singaporean rice.
also she eats mayo with a spoon but thats only tangentially related
