Hello! This is a happy story of delicious French pastry from dear @verzenaypatisserie, at wonderful @greencitymarket, in sweet Chicago's beautiful Lincoln Park (swipe)! 🌞 Related note: am I the only Chicago farmers market goer who didn't know #greencitymarket was a no-chocolate market? (Did you just gasp at the idea of a no-chocolate market? Me too! The Geneva Illinois market tried that years ago, market goers revolted, and chocolate returned! :) I went to visit vendor #verzenaypatisserie, whose creations are more exquisite every time I taste them, asked for chocolate items, and learned that the market bans anything with chocolate because cacao is not grown locally. I'd better get on that project to turn my balcony garden into a mini South American rainforest, to grow Chicago cacao! :) 🌱 Of course buying local is exciting and I love doing it, and the amazing Verzenay team was totally cool even as I was still gasping. They said the parameters of this excellent market mean they get to increase their creativity; hence this scrumptious raspberry rose croissant, inspired by pastry legend Pierre Hermé! And: the canelé had the perfect crispy outside, and soft inside! 😊 You know I'm a rebel :), so I pulled @rangerchocolate 2-ingredient (cacao and sugar, all you need!) Chulucanas Peru chocolate, made in Portland Oregon, out of my bag, and found that the controlled intensity of the chocolate paired nicely with the delicate fruitiness of the raspberry rose croissant. What if I'd had @amanochocolate's Raspberry Rose bar in my bag too! 🌹 The market has some rebel vendors: I had a treat from one that contained cinnamon, which is not grown near Chicago but in Sri Lanka and other Asian countries; I heard someone was using Plugra butter of France; another vendor used canola oil of Canada. Maybe the non-local ban doesn't apply to ingredients, just produce and finished products? 🤔 If market organizers want to allow chocolate (America's favorite flavor) and cacao (a superfood), I'll gladly recommend sustainable direct-trade craft versions that chefs love! 💚 In any case, it was a great morning at the market! #sweethomechicago (at Green City Market)
