chocolate peanut butter banana bread
i've been kicking this recipe around in my head for months at this point --- i used peanut butter instead of any type of dairy/oil, & it turned out so moist & flavourful
275g bananas ((about 2 large))
132g peanut butter ((½c))
150g white sugar ((¾c))
2 large eggs
1tb vanilla extract
1c oats
40g cocoa powder ((½c))
1tsp baking soda
¼tsp salt
½tsp cinnamon
100g chocolate
blitz the oats to flour & set aside
preheat over to 370F
mash bananas in an empty bowl
add in peanut butter, sugar, eggs, & vanilla, & combine fully
whisk together the drys, then add them + the chocolate & fold until just combine
grease loaf pans ((i used 3 mini ones)), & pour batter in ((1½c in each mini pan))
bake for ~40min, or until a toothpick comes out with a few crumbs / just some moisture
cool in the pans until they are cool enough to be handled with bare hands, then remove using a toothpick to until the edges, then cool fully on a baking rack

White Peach and Rose Sorbet
4 cups white peaches, sliced
2 Tbsp. lemon juice
2 Tbsp. rose water
1 cup sugar
½ cup water
2 Tbsp. lemon juice
rose petals for garnish
In a medium pot, combine the peaches, lemon juice, rose water, sugar and water to a simmer. Cook for about 5 minutes, stirring often, until the sugar has dissolved and the peaches are soft.
Let the mixture cool for about 15 minutes, then pour the contents into the jar of a blender. Puree on high until the mixture is very smooth. Add extra 2 tablespoons of lemon juice and quickly blend for a few more seconds.
Pour the sorbet mixture into an ice cream maker and churn according to directions or just pour it into a metal loaf pan and put in the freezer. Either way, the sorbet should be in the freezer at least 6 to 8 hours.

Made my favorite whipped cream yesterday!
Used this recipe.

For the heavy whipping cream I substituted it with Country Crock Plant Cream. This substitute has the whipped cream tasting even better than dairy whipped cream (which I was able to have at one point).
This recipe is also gluten free, and super versatile. I’ve made maple whipped cream, and chocolate (I used Sweet Freedom’s dairy free choc shots) whipped cream with this.

peanut butter brownies
112g (1/2c) applesauce
176g (2/3c) peanut butter
1/3c maple syrup
1tsp vanilla extract
36g (3tb) white sugar ((i've also used 2 packed tb of brown sugar))
26g (1/3c) cocoa powder
1/2tsp salt
1tsp baking soda
preheat the oven to 350F
mix together the applesauce, peanut butter, maple syrup, vanilla, and sugar until smooth
whisk together the dry ingredients in a separate bowl
fold the dry ingredients into the wet
pour the batter into a glass 8x8 pan and bake for 40-50 minutes
remove from the oven and cover with a towel for a half hour while they cool ((keeps the centre from sinking))
once fully cooled, cut into squares and remove using a spatula
i used crunchy jif peanut butter, especially since i didn't add any chocolate chips today (when i do i add a half-cup)
