#Repost @forvegans_byvegans • • • • • • Adzuker burger on homemade bun 💚😋 by:@globalrecharge . 1 cup dried Adzuki beans 1 large sweet potato, cleaned, peeled, steamed and mashed (Approx. 2 cups) ½ cup oat flour (rolled oats, lightly ground - see Instructions for method) 1 teaspoon Berbere Spice Blend or to taste 2 tablespoons onion powder 2 tablespoons nutritional yeast 1 teaspoon chili flakes or to taste 1 teaspoon Himalayan pink salt Wholemeal Bread Burger Buns Baby Spinach Tomatoes sliced Cucumbers sliced Grated carrot Dijon, Lemon & Tahini Dressing ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Prepare the Adzuki beans ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Soak the Adzuki beans for several hours or overnight prior to cooking. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a large saucepan, add 8 cups water to cover the beans and bring to a boil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Once the water boils, cover with a lid, lower the heat to a simmer, and cook 45 minutes to an hour or until the beans are tender ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Wash, peel, 1 large sweet potato, then steam the sweet potato for 10-15 minutes or until soft. Mash.Set aside to cool. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a blender, add ½ cup of rolled oats and lightly blend to make the flour. I like to to leave enough texture in this, so try not to over do it. You will use this to add to the recipe and also to coat the patties. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ In a large mixing bowl, add the cooked adzuki beans and lightly mash. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add the sweet potato mash, Berbere Spice Blend, chili flakes, onion powder, nutritional yeast, Himalayan pink salt, 4 tablespoons oat flour. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Mix the ingredients well together and mash until you get your desired consistency. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To make the patties try several different sized spoons at first until you get the size you like. As I like sliders, I do not tend to make the patties too large. Once you have got the right size figured out, simply spoon out the pattie mix, roll in your hands then add to a bowl with the remaining oat flour and coat and shape into thick patties. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Baking 360°F (180°C) 25-30 minutes. At the end of our photo shoot Sean decided to be playful I wasn’t expecting him to pick up the Christmas Melons and this was when the self time clicked. Red lentil and Sweet Potato Baked Patties * 1 cup cooked red lentils * 1/2 cup cooked sweet potato mash * 1 teaspoon turmeric * 1 onion, finely diced * 1 teaspoon paprika * 1 teaspoon cilantro powder * 1 clove of garlic, pressed * 1/2 teaspoon cumin * 1 flax egg (1 tablespoon ground flax seed, plus 3 tablespoons water) * 1/2 cup organic rolled oats * 2 tablespoons of flat leafed parsley * Pinch Sea Salt * Preheat oven to 390°F. 200°C * Line a baking sheet with baking paper In a bowl, combine lentils ingredients into a bowl and shape into patties, and place on baking paper. Moroccan Stuffed Peppers #veganrecipe * 2 cups cooked brown rice * 2 finely chopped onions * 4-6 red bell peppers * 1.5 cup diced pumpkin * 4 cloves garlic, * ½ cup chopped dates * 1 teaspoon coriander * 2 teaspoons ground cumin * 1 teaspoon ground cinnamon * 2-2.5 cups vegetable stock * ¼ cup chopped fresh flat leaf parsley, plus more for garnish * 2 teaspoons freshly grated orange zest * 1 teaspoon sea salt * Pre-heat oven to 350F/180C. Prepare Bell peppers by removing the seeds and white insides. Leave the tops of the peppers intact. Fill the peppers by adding the rice mixture, by adding all the ingredients together to the peppers . Arrange the stuffed peppers side by side in the pan. Pour the stock over all the peppers. Cover and bake in the oven for 44 minutes.
