I would be tickled to death when my grandbabies ask me to make my dipping sauce for chicken tenders, wings, their saucy fries, and fried anything really, even for fresh veggies ( my favorite is broccoli and carrots).
So I decided, now that I'm in my 90s, I better leave my children, children, children, and now the world a cookbook. This is a simple dipping sauce recipe that's been in my family year's.
Throughout the years I upgraded my recipe to here is the newest recipe:
1 cup mayonnaise
1/4 cup chili sauce ( Heinz)
1 tsp Dijon mustard
1/4 cup ketchup
1 tsp garlic powder
1 tsp onion powder
2 1/2 teaspoons Worcestershire sauce
1/2 teaspoon ground black pepper
1/2 teaspoon Tabasco sauce
1/4 cup olive oil
Juice of one lemon
Mix all ingredients well and store in refrigerator overnight.

hi!!! i was wondering if you had any tips for going into a cal deficit for someone that really enjoys food for its flavor? do you have any flavorful low cal meals/snacks? this is my biggest struggle because all the enjoyable food i eat is very high in calories :/
Heey! I totally get your struggle lol. Here are some things you can do:
Have alternatives that are lower in calories
(kinda obvious and boring, I know, but let's start here)
Try switching to zero calorie drinks, light versions of sauces, 0% or low fat milk, yoghurts, sweeteners, eggs to egg whites (or mix both), fried food to baked food, fatty meat to lean meat etc. Whatever that's going to be similar but lower in calories.
Examples:
Craving a Big Mac? You can make a Big Mac salad. You know there's lettuce, onions and pickles in your regular Big Mac, so make it the base of your salad. Make a low calorie version of Big Mac sauce (like you can get light mayonnaise instead of regular one and mix it with a 0% fat yoghurt). There are some really good recipes online.
Craving fries? Have them baked instead of deep fried, so they are lower in calories, but still taste nice with some ketchup.
Search for low calorie recipes like soups and salads that include herbs, spices and flavourful food that is low in calories like mushrooms, onions, pickles, garlic, ginger, kimchi etc.
Mix your favourite food that is high in calories with food that is really low in calories
Examples:
Craving fried chicken? Have 2 wings instead of 5, with a salad on the side or just cut the meat and mix it with a salad. Have a bite of the thing you like, have some salad, repeat. It's still enjoyable and you end up being full.
Craving a strawberry shake? Get a small one (or share it with someone) and have water on the side. Drink some of your shake, drink some water, repeat. It's going to make you full and water seems to taste better after having a taste of sugar too lol
...or just drink as much water/tea as you can before having a meal
It's easier to enjoy a small portion of your favourite food when feeling full. Also try to chew it slowly so you can really focus on the taste.
Now, these might not be the best advices, but really helped me when desperate:
Just chew your food and spit it out. Might take some practice to resist the urge to swallow (lol I can't) but this actually saved my ass from binges many times when I felt this urgent need to stuff my face with food asap, yk.
Eat some salt/hot spices/hot sauce. This one helped me to resist cravings for salty/fried food. I'd even carry around a small bottle of hot sauce or this soup sachet from instant noodles when I was going out and had a hard time resisting cravings lol.

Celebrating Fried Chicken

The first time that I tried it was in the early 70s at the McCrory's department store in old Downtown Miami when it was alive with people. I remember that the ladies that worked the cafeteria counter would display the pieces of fried chicken inside two large metal containers behind a glass. At lunch time, they would have to keep frying chicken so they wouldn't run out, and I couldn't get enough.
There's something special about the pleasantness felt when eating fried chicken, especially on a lazy Sunday afternoon in some small town USA while sipping some corn (Bourbon.) There's a gas station in Camden, Alabama where I hunt which makes one of the best I have ever tried, but here is my own recipe.
I quarter a whole chicken first and then cut the thighs and breasts in half. I place all the pieces including legs, wings, and the halfed breasts and thighs in a large bowl and sprinkle them with salt, ground black pepper, garlic powder, and some paprika. I then pour a beaten egg into the chicken and using my hands, rub everything together.
In a separate bowl, pour a package of seasoned flour, and in a deep steel pot heat some canola or vegetable oil. Once the oil begins to smoke, pass one piece of chicken at a time through the flour bowl, shaking off excess flour and carefully place them in the hot oil. Once the chicken begins to fry, control the temperature of the oil to a slow rolling fry in order to not burn the chicken on the outside, and so it will be cooked on the inside. Cook each batch for 20 minutes turning the chicken pieces over half way through. Once the chicken is cooked, place them in an aluminum tray that has been lined with paper towels and let the chicken rest at room temperature for at least 30 minutes before eating it, enjoy!

Roast Chicken (1 spoon)
That thing I reblogged the other day about how a roast is basically perfect spoonie food is entirely right. It’s fairly simple - just involves a bit of seasoning and sticking something in the oven for awhile while you do something else. It makes a lot of food all at once, so you don’t have to cook again for awhile. Best of all, the leftovers can be used in all sorts of ways, not just as A Roast Dinner. Sandwich fillings is one of the most common ones, but the meat from a roast can also go into risotto, student alfredo (or whatever Hoover stew equivalent we’re going with), fried rice, paella, basically nearly anything you like. Plus, while the initial outlay is a bit of sticker shock, given how much you can get out of a roast means you’re probably spending less money for more food, especially since you can get away with using cheaper cuts of meat if you’re slow-roasting.
The first thing I learned to roast myself was whole chicken. As with everything else, there are as many ways to roast a chicken as there are people, so I’ll provide the basics for how I do it, and a lot of notes.
Here’s what you’ll need:
1 whole chicken
1 tbsp vegetable oil (or garlic puree)
1 tbsp salt (other spices optional)
Fruit / vegetables / herbs for stuffing (see notes)
While stuffing’s generally seen as a side dish, that can be baked in the oven separately, rather than necessarily in the bird. The main point of stuffing is to keep the meat moist and juicy, so whatever you’re putting into the cavity should have a fairly high water content. Onion and garlic are my go-to items, along with a few sprigs of fresh sage and thyme and rosemary from my balcony garden, but you can also add celery or carrots or whatever other vegetable you like. Or fruit, even - it’ll give the chicken some interesting flavour, depending on what you’re going for. I normally go with citrus - lemon or orange - but apple also works very well. So it all depends on what kind of flavour you’d like your chicken to pick up. My favourite is still one small onion (quartered), 3 cloves garlic, one small orange (quartered) and the sage / thyme / rosemary above.
Incidentally, the salt’s important because it and the oil will help get the skin nice and crispy. I use the garlic puree because it’s oil-base and gives the skin some extra flavour, though I also generally add a bit of pepper, some paprika, a little bit of celery salt ... whatever spices I’m feeling at the time.
Here’s what you do:
Pre-heat oven to 390 F (200 C; fan assist 180 C, gas mark 6)
Rub your chicken lightly with the oil or garlic puree and add spice to taste; let stand for at least 20 minutes. While you wait, stuff your chicken with the vegetables, fruits, and / or herbs.
Cook chicken for 20 minutes per pound, plus an extra 10-20 minutes; until the juices run clear (meat thermometer placed into the thickest part of the thigh should read about 82 C / 180 F)
For crispier skin, turn up the heat to 425 F (220 C, fan assist 200 C, gas mark 7) for the last 15 minutes or so.
Let rest 20 minutes or so before carving
Again, there’s very little about this recipe that needs changing to make it easier. My only recommendation is lining the bottom of your roasting tin with tin foil because it’s easier to throw away a piece of tin foil than it is to scrub out a roasting tin. I’m pretty sure that doing that wouldn’t interfere if you’re using the juices for gravy, but since that’s a little too much faffing and stirring for me, I couldn’t tell you. I just use the gluten-free granules from the supermarket if I want gravy.
So there you have it - meals for almost a week out of a couple of hours’ mostly non-effort. When I do chicken, I tend to have the leg quarters as meals, save the wings for snacks, carve the breasts for use in risotto or fried rice or sandwiches, and then boil the remains for stock, particularly now that I’m making risotto and soup more often. So you can get an awful lot of value out of a good-sized chicken, especially if you have a big enough pot to boil up a good amount of stock. It’s also fun to experiment with what you use to stuff the cavity and spice the skin, so there’s endless variety to be had.

Humans started using chili peppers and other such spices thousands of years ago, with many historians believing that chili peppers were one of the earliest plants harvested by humans. What are your favorite air fryer recipes, please?
Hello! Sorry it took a while to answer, today was very busy :)
I don't really have recipes specific for using an air fryer. I cook a lot of things in it that I would normally use the oven for, and I've learned to tweak the time and temperature to not burn things or dry them out. I love using it in the summer when it's too hot to cook with the oven, but I'd still like some baked chicken or roasted carrots. It takes a lot of trial and error to figure out the right settings lol
Sunday I made garlic pasta with chicken and broccoli, and I cooked the chicken thighs and broccoli together in the air fryer while I boiled the noodles. I chopped them both up into bite sized pieces and gave them a light toss in olive oil, then I cooked the chicken for 4 minutes on fry at 350F, and then added the broccoli for another 6 minutes. The chicken was cooked through and a little crispy in spots, and the broccoli was the perfect level of still a little bit crunchy with the added flavor of being fried in a wok. Then I tossed it all into some whole wheat spaghetti noodles with some garlic, some salt, some oregano, and a whole bunch of parmesan cheese. Altogether it took me less than half an hour.
That was as fancy as I get tho.... lots of times it's fries, corn dogs, biscuits, hot wings... lol

Fried Turkey Wings Cooking Time:

Step By Step Instructions:
Step 1:

One of our favorite parts about the Super Bowl (Feb. 12, 2023) is how it can bring people together, united over one common goal—watching Rihanna in the halftime show. 😉 We jest, obviously we’re talking about the food! Whether you’re in it for the sports, the wild commercials, the Puppy Bowl, or the halftime show, everyone can unite over some winning apps for Super Bowl LVII. We have all the classics, like next-level wings, dips, and sliders, plus some show-stoppers like pull-apart breads and football-themed desserts.
