Mini Pineapple and Condensed Coconut Milk Cheesecakes Ingredients: 180g plain sweet biscuits (such as Nice, Granita, or Milk Arrowroot) 1/2 tsp ground cinnamon 90g packet pineapple-flavored jelly 125ml (1/2 cup) boiling water 160ml (2/3 cup) cold water 90g unsalted butter, melted 250g cream cheese, at room temperature 125ml (1/2 cup) sweetened condensed coconut milk 150g (1/2 cup) well-drained crushed pineapple 250ml (1 cup) thickened cream Directions: Lightly spray twelve 80ml (1/3 cup) silicone muffin pans with oil spray. Line each pan with a small strip of baking paper, extending paper 2cm over the sides of each hole. Place biscuits and cinnamon in a food processor and process until fine crumbs form. Add the melted butter and process to combine. Divide the biscuit mixture among the prepared pans. Use a flat-bottomed glass to press the mixture down firmly over the base of each hole. Place in the fridge. In a heatproof bowl, dissolve the jelly crystals by pouring in boiling water. Stir until dissolved and then add the cold water. Set aside to cool but not set. Beat the cream cheese and sweetened condensed coconut milk in a bowl with an electric mixer until smooth. Stir in the jelly and crushed pineapple until combined. Whip 125ml (1/2 cup) of thickened cream until soft peaks form. Fold the whipped cream into the pineapple mixture. Spoon the mixture evenly over the biscuit bases in the pans. Tap the pans gently on the bench to remove any air bubbles. Smooth the surface. Refrigerate for at least 6 hours or overnight until set. To serve, run a knife around the edges of each cheesecake to loosen them. Use the baking paper strips to lift the cheesecakes from the pans. Whip the remaining 125ml (1/2 cup) thickened cream to firm peaks and pipe a decorative swirl on top of each cheesecake. Enjoy the delicate tastes of saffron and pear in this beautiful tart. When ripe pears and the exotic smell of saffron come together, they make a delicious dessert that's great for any event.
Ingredients: 1 sheet frozen puff pastry, thawed. 2 ripe pears, thinly sliced. 1/4 cup granulated sugar. 1/4 teaspoon saffron threads. 1 tablespoon hot water. 1 tablespoon unsalted butter, melted. 1 tablespoon apricot preserves or honey.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put some flour on a surface and roll out the puff pastry until it fits a tart pan or baking sheet. Use a fork to make holes in the dough, leaving a little space around the edges. Place the pear slices on top of the pastry, making sure they overlap a bit. Put the saffron threads in a small bowl and add hot water. Apply the saffron mix to the pears with a brush. Spread the granulated sugar out over the pears in a thin layer. Pour melted butter over the sugar and pears. Put it in an oven that has already been heated up and bake for 25 to 30 minutes, or until the pastry is golden brown and the pears are soft. Melt the honey or apricot preserves in a small saucepan. Then, brush the glaze over the tart to make it look shiny. Let the tart cool down a bit before you serve it. Have fun!

These mini tartlets are bursting with the flavors of sweet strawberries and tart rhubarb, topped with a fluffy meringue. Perfect for a springtime dessert!
Ingredients: 1 1/2 cups diced rhubarb. 1 1/2 cups diced strawberries. 1/2 cup granulated sugar. 1 tablespoon cornstarch. 1/2 teaspoon vanilla extract. 1 package 14 ounces refrigerated pie crusts. 2 egg whites. 1/4 teaspoon cream of tartar. 1/2 cup granulated sugar. 1/2 teaspoon vanilla extract.
Instructions: Preheat oven to 375F 190C. In a medium saucepan, combine rhubarb, strawberries, sugar, and cornstarch. Cook over medium heat until mixture thickens, stirring constantly, about 5 minutes. Remove from heat and stir in vanilla extract. Let cool. Unroll pie crusts and cut out small circles. Press each circle into the cups of a mini muffin tin, forming tartlet shells. Prick the bottoms with a fork. Bake tartlet shells for 8-10 minutes or until lightly golden. Remove from oven and let cool completely. In a clean, dry mixing bowl, beat egg whites and cream of tartar with an electric mixer on high speed until soft peaks form. Gradually add sugar and vanilla extract, beating until stiff peaks form. Fill each tartlet shell with the strawberry rhubarb filling, then top with meringue, swirling with a spoon to create peaks. Bake tartlets for an additional 8-10 minutes or until meringue is lightly golden. Remove from oven and let cool before serving. Enjoy!

Ingredients: 1 cup all-purpose flour. 3/4 cup granulated sugar. 2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup milk. 1/3 cup unsalted butter, melted. 2 tablespoons fresh lemon juice. 1 tablespoon lemon zest. 1 cup mixed berries such as blueberries, raspberries, and strawberries. 1/2 cup boiling water.
Instructions: Put flour, sugar, baking powder, and salt in a bowl and mix them together. Add the melted butter, milk, lemon juice, and lemon zest and mix well. Add the mixed berries slowly. Put batter into a slow cooker that has been greased. To dissolve the sugar, add the last 1/4 cup of sugar to a different bowl and boil the water. Pour the sugar-water mix carefully over the batter in the slow cooker. Put the lid on top and cook on high for two to three hours, or until the cake is set and the edges are golden brown. If you want, you can serve it warm with whipped cream or vanilla ice cream.
